I usually buy the large block of Velveeta cheese and store any unused cheese in ziploc bags, so I'm forever searching for the recipe. It's easy and fast. My family swears it tastes just like KFC! You can also put the Macaroni and Cheese in a greased casserole dish and make a topping out of 1 sleeve of crushed Ritz Crackers and 1 stick of melted butter. ½ cup margarine
4 cups milk

1 pinch white pepper or 1 pinch black pepper

Steps:

  • Melt cheese and butter over low heat, stirring occasionally.Remove from heat and add vanilla. (You may also add the chopped nuts here, or save them for a garnish, later.).

  • Once fudge is completely mixed (add more powdered sugar, a little at a time, if needed), pinch small sections off and roll into balls. Set on wax paper-lined cookie sheet. Refrigerate for 20-30 minutes.
  • While chilling fudge balls, melt almond bark in double-boiler, over a low heat. If you have chosen to melt caramels, do so, as well, in a separate double-boiler.
  • Place a skewer in each fudge ball. Then, dip into caramel, then almond bark, finally rolling in nuts. Or, use whatever combination you would like.
  • These can be made a day or two before dipping--store in refrigerator. Enjoy!

1 8oz. pkg of elbow pasta
1 stick butter ( not margarine )
1 (14 oz.) can of evaporated milk
1 lb block of velveeta cheese, cut into 1 in-2 in cubes
salt and pepper to taste

  • 1. Boil the pasta as directed on the package. Drain the water but keep ¼ cup or so in the bottom of the pot. Add 1 stick of butter, the can of evaporated milk and the Velveeta cheese. Sprinkle in some salt and pepper. Heat the pot on medium until the cheese is completely melted and blended in. Remove from heat and allow to sit for about 5 minutes. Stir and serve. It will get thicker the longer it sits, enjoy!!
