¼ cup whole milk yogurt
1 cup shredded mozzarella cheese (divided)
¼ cup red onions (chopped)
1 cup mushrooms (chopped)
8-10 stalks asparagus (ends trimmed and chopped)
¼ cup cilantro (chopped)
½ cup cherry tomatoes (sliced)

Steps:

  • Preheat the oven to 425° degrees.
  • Whisk together the egg, yogurt, half the shredded mozzarella cheese and salt & pepper; set mixture aside.
  • Heat olive oil in an oven safe pan or cast iron pan. Add onions, mushrooms and asparagus and cook for 3-5 minutes until the vegetables soften.
  • Pour the egg mixture on top of the cooked vegetables. Place sliced cherry tomatoes on top and add the remaining cheese.
  • Bake uncovered in the preheated oven until the center is set, and not jiggly, about 10-15 minutes

1 small red bell pepper (cored and chopped)
1 small zucchini (small diced)
2 green onions (white and light green parts only, roughly chopped)
4 ounces broccoli (cut into small florets)
Kosher salt and black pepper
3 tbsp Extra virgin olive oil
7 large eggs
¼ teaspoon baking powder (optional)
¼ cup whole milk
1/3 cup feta cheese (crumbled, more to serve)
1/3 cup finely chopped fresh parsley (more to serve)
1 teaspoon fresh thyme

Steps:

  • Preheat the oven to 450°F and position a rack in the middle. Put a rimmed sheet in the oven and allow it to heat.
  • In a mixing bowl, toss the bell peppers, zucchini, green onion and broccoli with a good pinch of kosher salt and black pepper. Add a drizzle of extra virgin olive oil (about 2 to 3 tablespoons) and toss to make sure all the veggies are well-coated in the oil.
  • Carefully remove the hot pan from the oven using oven mitts. Spread the veggies on the heated pan. Return the pan to the oven and cook for 15 minutes or until the veggies are soft and somewhat charred.
  • Turn the oven heat down to 400°F.
  • In your mixing bowl, whisk together the eggs, baking powder, milk, feta, parsley, thyme, and a good pinch of kosher salt and black pepper. Fold in the roasted vegetables.

1 1/2 tablespoons olive oil or 1 1/2 tablespoons canola oil
1 clove garlic, minced
1/2 cup chopped red onion
2 cups thinly sliced fresh mushrooms
1 1/2 cups finely chopped fresh broccoli
8 eggs
1/4 cup milk
3/4 cup grated mozzarella cheese or 1 Italian cheese blend
1/2 teaspoon salt (I use seasond salt)
1/8 teaspoon pepper

Steps:

  • Heat oven to 350 degrees F In a 9 inch oven proof skillet, warm oil on med.
  • heat.
  • Add garlic and onion; saute' for 1 minute.
  • Add vegetables; saute' for 5 minutes.
  • Beat eggs with milk, add 1/2 cup cheese, salt, and pepper.
  • Add egg mixture to skillet with vegetable mixture.
  • ***Place in oven on upper rack.
  • Bake until golden brown, approximately 30 minutes.

2 large eggs
2 Tbsp cream
a pinch of salt and pepper if desired
1/2 to 1 c cut up fresh or frozen vegetables, thawed. (i used a mix of snow peas, carrots, water chestnuts, and broccoli)
1 Tbsp butter
2-3 Tbsp grated cheese (i used gouda)
1 7 to 8-inch oven proof skillet

Steps:

  • 1. Whirl eggs and cream in blender until well-beaten. Add salt and pepper if desired. Set aside.
  • 2. Melt butter in skillet over medium-low heat. Saute vegetables 2-4 minutes. Pour beaten eggs over vegetables and cover skillet. Cook until eggs are almost set.
  • 3. Preheat broiler. Top frittata with grated cheese. Place under broiler for 2-3 minutes, until cheese is melted and frittata is puffy. Serve immediately.
