VEGAN TOURTIERE

Vegan Tourtiere image

I made this delicious pie today. It is so tasty with some vegan gravy on top. I did change some of the ingredients to suit my tastes. I made my Easy Spelt Pie Crust for this and the two complimented each other perfectly. I got the recipe from this site: http://www.nikibone.com/recipe/vegan/vegantourtiere.htm

CANADIAN TOURTIèRE(VEGAN)

Canadian Tourtière(Vegan) image

A tourtière is a traditional French Canadian double crusted meat pie, that's seasoned with Fall inspired spices such as cinnamon and nutmeg. It's typically made with pork, but this recipe uses puy lentils. Ground walnuts are added in to make it more ground meat like. I haven't tried this yet, but it looks so good! It holds together just like a meat pie should. It's flavourful enough on it's own but a little gravy never hurts either.

Time 1h35m

Yield 1 9" pie

Number Of Ingredients 20

1 tablespoon olive oil
1 large onion, diced
3 garlic cloves, minced
10 medium cremini mushrooms, stemmed and finely chopped
walnuts, halves ground
1 1/4 cups vegetable broth
1/2 cup dry white wine
1 tablespoon vegatarian broth seasoning (beef style-"no beef" recommended)
1 teaspoon liquid smoke
1 teaspoon dried thyme
1/2 teaspoon dried savory
1/2 teaspoon ground sage
2 bay leaves
salt and pepper, to taste
1/4 teaspoon cinnamon
1/8 teaspoon ground cloves
1/8 teaspoon nutmeg
1/2 teaspoon vegan worcestershire sauce (optional)
3/4 cup russet potato, grated, peeled
pastry dough (for 1 double 9-inch pie crust)

Steps:

  • In a large skillet over medium-high heat, add oil, and onion, sauté until onion begins to soften, than add mushrooms. Sauté mushrooms until most of their juices have been released, then add garlic and sauté for 2 minutes more.
  • Mix in the lentils, walnuts, broth, wine, no-beef powder, liquid smoke, thyme, savory, sage and bay leaves. Season with salt and pepper and bring to a simmer over medium heat. Simmer until almost all the liquid has been evaporated, then remove the bay leaves and stir in the cinnamon, cloves, nutmeg and potato. Cook until potato is soft, about 10 minutes. Remove from heat. Season to taste with salt and pepper; let cool slightly. Chill until cold, about 1 hour.
  • Roll out 1 dough disk on a lightly floured surface into a 12″ round. Transfer to pie dish, leaving overhang. Fill with cooled lentil mixture. Roll out remaining dough disk into a 10″ round. Place dough over filling. Fold overhang over top crust and crimp edges. Brush crust with non-dairy milk. Cut three 2″ slits in top crust. Chill for 1 hour.
  • Preheat oven to 400°F.
  • Bake tourtière for 30 minutes.
  • Reduce heat to 350°F; bake until crust is golden brown and filling is bubbling, 40-50 minutes.
  • Let cool for 20 minutes before serving.

Tips:

  • Prep the lentils: Before you start cooking, rinse the lentils thoroughly and sort through them to remove any debris or stones. This will ensure that your tourtière has a smooth texture and no unwanted surprises.
  • Use a variety of vegetables: The more vegetables you use in your tourtière, the more flavorful and nutritious it will be. Some good options include carrots, celery, onions, potatoes, and parsnips.
  • Don't overcook the lentils: Lentils should be cooked until they are tender but still hold their shape. Overcooked lentils will become mushy and ruin the texture of your tourtière.
  • Season the tourtière well: Don't be afraid to use plenty of herbs and spices to flavor your tourtière. Some good options include thyme, sage, rosemary, garlic, and onion powder.
  • Chill the tourtière before serving: This will help it to set and make it easier to slice.

Conclusion:

Whether you're a vegan or simply looking for a delicious and hearty meatless main course, this vegan tourtière is sure to please. With its flaky crust, flavorful filling, and beautiful presentation, it's a dish that's perfect for any special occasion. So next time you're in the mood for a comforting and satisfying meal, give this vegan tourtière a try. You won't be disappointed!
