1/2 cup parmesan cheese, grated
1/4 cup all-purpose flour
1/2 teaspoon salt
1/8 teaspoon pepper
1 1/2 lbs veal cutlets (1/4 inch thick)

1/2 cup chablis wine

1 tablespoon fresh parsley, chopped

Time 30m

Yield 4 servings

Number Of Ingredients 10

8 veal cutlets (about 3 ounces each)
Salt and freshly ground black pepper
2 to 3 tablespoons unsalted butter
2 to 4 tablespoons olive oil
1 large shallot, finely chopped
2 to 4 garlic cloves, smashed
2 ounces assorted mushrooms, sliced
1/2 cup sweet Marsala
3/4 cup low-salt chicken broth
Leaves from 1 fresh rosemary sprig

Steps:

  • Sprinkle the veal with salt and pepper. Melt 1 tablespoon of butter and 1 tablespoon of oil in a heavy large skillet over medium-high heat. Add 4 veal cutlets and cook until golden brown, about 1 1/2 minutes per side. Transfer the veal to a plate. Add another tablespoon of butter and oil, if necessary. Repeat with the remaining 4 cutlets. Set the cutlets aside.
  • Add 1 tablespoon of oil to the skillet. Add the shallot and garlic. Saute until fragrant, about 30 seconds. Add a tablespoon of the olive oil, if necessary. Add the mushrooms and saute until tender and the juices evaporate, about 3 minutes. Season with salt. Add the Marsala. Simmer until the Marsala reduces by half, about 2 minutes. Add the broth and the rosemary leaves. Simmer until reduced by half, about 4 minutes. Return the veal to the skillet. Pour in all of the pan juices. Cook just until heated through, turning to coat, about 1 minute. Stir the remaining 1 tablespoon of butter into the sauce. Season the sauce with salt and pepper, to taste.
  • Using tongs, transfer the veal to plates. Spoon the sauce over the veal and serve.

VEAL MOZZARELLA

Wafer thin melt-in-your-mouth veal cutlets smothered in a decadent buttery sherry sauce. Excellent for dinner parties. I serve this with a salad tossed with raspberry vinaigrette and goat cheese crumbles, greens sauteed in garlic and olive oil, Italian bread, and plenty of white wine! Go all out - you can also serve this over angel hair pasta.

Time 1h

Yield 6

Number Of Ingredients 11

2 pounds boneless veal medallions, pounded to 1/4 inch thickness
1 cup all-purpose flour
1 teaspoon salt
½ teaspoon ground white pepper
¼ cup olive oil
1 pound mozzarella cheese, shredded
½ cup sherry wine
½ cup butter
3 tablespoons all-purpose flour
3 tablespoons sherry wine
salt and pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix together the 1 cup flour, salt and white pepper in a shallow dish. Set aside. Heat olive oil in a large skillet over medium-high heat. Coat veal medallions with the flour mixture and shake off the excess. Fry for about 1 minute on each side, just to brown but not cook through.
  • Arrange the veal in a 9x13 inch baking dish. Sprinkle the mozzarella cheese over the top. Clean out the pan from the veal, and melt butter with 1/2 cup of sherry over low heat. In a small bowl, mix the 3 tablespoons flour with 3 tablespoons sherry, and whisk into the pan. Continue whisking over low heat until the mixture is thickened. Season with salt and pepper to taste. Pour the sherry sauce over the veal and cheese.
  • Bake for 20 to 30 minutes in the preheated oven, until cheese is melted and gooey. Sauce will be runny. Soak it up with Italian bread!

Time 15m

Yield 4 servings

Number Of Ingredients 9

1 pound thin veal slices, preferably from leg
Salt to taste if desired
Freshly ground pepper to taste
2 tablespoons butter
1/4 cup finely chopped onions
2 teaspoons imported paprika
1/4 cup dry white wine
1/2 cup heavy cream
1/2 cup sour cream

Steps:

  • Cut veal into thinnest possible (julienne) strips. Sprinkle with salt and pepper.
  • Heat butter in skillet and when it bubbles and starts to turn brown, add veal. Cook, stirring, over high heat about 30 seconds.
  • Add onions and cook, stirring, about a minute. Do not overcook. Sprinkle with paprika and stir.
  • Using slotted spoon, transfer veal to saucepan. Add wine to liquid left in skillet. Cook down over high heat about 3 minutes and add heavy cream. Cook down about a minute.
  • Add sour cream and cook about a minute. There should be about 1 1/4 cups of sauce. It is not essential to strain this sauce, but it is preferable to put it through a fine sieve. Reheat sauce and pour over veal. Heat briefly until veal is piping hot. Serve with rice.

Tips:

  • Use high-quality veal for the best flavor. Look for veal that is pink and firm, with no signs of bruising or discoloration.
  • Sear the veal in a hot pan to create a flavorful crust. This will help to lock in the juices and prevent the meat from drying out.
  • Cook the veal over medium-low heat until it is cooked through. Do not overcook the veal, or it will become tough and chewy.
  • Use a meat thermometer to ensure that the veal is cooked to the desired doneness. The internal temperature of the veal should be 145 degrees Fahrenheit for medium-rare, 160 degrees Fahrenheit for medium, and 170 degrees Fahrenheit for well-done.
  • Let the veal rest for a few minutes before slicing and serving. This will allow the juices to redistribute throughout the meat, resulting in a more tender and flavorful dish.

Conclusion:

Veal sabrosa is a delicious and versatile dish that can be enjoyed by people of all ages. It is a great way to use up leftover veal, and it can also be made with other types of meat, such as chicken or pork. With its simple ingredients and easy-to-follow instructions, veal sabrosa is a great dish for beginner cooks. So next time you're looking for a quick and easy meal, give veal sabrosa a try.
