VEAL PARMESAN
A classic Italian-American Parmesan - a casserole of fried, breaded meat or eggplant covered with tomato sauce and molten cheese - is all about balance. You need a bracing a tomato sauce to cut out the fried richness, while a milky, mild mozzarella rounds out the Parmesan's tang. Baked until brown-edged and bubbling, it's classic comfort food - hearty, gooey and satisfying. Veal cutlets are the standard.

This will help to enhance the flavor of the meat. - Use a combination of olive oil and butter to cook the veal cutlets. This will help to prevent the meat from sticking to the pan and will also add flavor. - Cook the veal cutlets over medium heat until they are golden brown on both sides and cooked through. - Make sure the tomato sauce is simmering gently before adding the veal cutlets. This will help to prevent the sauce from splattering. - Add the basil leaves to the sauce at the end of cooking.
