Meatballs with Mushroom Sauce image

Meatballs with Mushroom Sauce - pork meatballs in a delicious creamy mushroom sauce served over mashed potatoes. Comforting and incredibly delicious!

Provided by Joanna Cismaru

Categories     Dinner     Main Course

Time 1h10m

Number Of Ingredients 16

2 pound ground pork
1 large onion (chopped)
3 tablespoon fresh dill (chopped)
2 eggs
¾ cup bread crumbs
¼ cup buttermilk
1 tablespoon hot sauce (I used Sriracha sauce)
salt and pepper to taste
vegetable oil ( for frying)
½ pound cremini mushrooms (sliced)
4 tablespoon unsalted butter
¼ cup all-purpose flour
¼ cup white wine
½ cup heavy cream
1 cups chicken broth
salt and pepper to taste

Steps:

  • Combine the meatballs: Add all the meatball ingredients (excluding the vegetable oil) to a large bowl and mix well using your hands. Shape into 1 inch meatballs. You should get about 40 to 50 meatballs.
  • Prep for cooking: Line a baking sheet with paper towels. Add some vegetable oil to a large skillet, about 1/4 cup and heat it over medium-high heat.
  • Cook the meatballs: Add meatballs to the skillet and cook. If not all meatballs fit in the skillet you will have to do this in a couple batches. Cook the meatballs on all sides, adding more oil if needed in between batches. Remove meatballs from skillet to prepared baking sheet, to soak up the oil.
  • Saute the mushrooms: Discard any leftover oil from the skillet and add the butter and melt. Add the mushrooms to the skillet and saute for about 5 minutes until they start to brown.
  • Create the sauce: Sprinkle the flour over the mushrooms and stir, cook for about 1 minute to remove the raw taste of flour. Add the white wine, heavy cream and chicken broth. Cook for 10 minutes, stirring occasionally. The sauce should thicken and reduce a bit. If the sauce is too thick add a bit more heavy cream or chicken broth.
  • Finish the dish: Add the meatballs to the mushroom sauce and toss them around making sure they're covered in the sauce. Cook for 2 more minutes until they heat through, then garnish with fresh parsley or dill. Serve over mashed potatoes, noodles or rice.

BEST SWEDISH MEATBALLS

Best Swedish Meatballs image

Our family has been using this recipe for more than 40 years. The tender meatballs are made with a combination of beef, veal and pork, then spiced with nutmeg and ginger. If your family likes their meatballs a little milder, reduce the nutmeg to 1/2 teaspoon. Coffee adds nice color to the gravy, which is delicious over noodles.-Rev. Mushroom-Pork Lion's Head Meatballs image

This recipe is sponsored by Mushroom Council. A perfect meatball has great flavor and balanced texture. Shiitakes add depth and complexity - plus they make the meatballs more tender.

Provided by Food Network Kitchen

Categories     main-dish

Time 1h10m

Yield 4 servings

Number Of Ingredients 18

12 ounces ground pork, preferably 70% lean
12 ounces shiitake mushrooms, stemmed (2/3 finely chopped, 1/3 left whole)
1 cup water chestnuts, finely chopped
1/4 cup Shaoxing wine or sake
6 tablespoons light soy sauce
1 tablespoon dark soy sauce
1 tablespoon sugar
1 1-inch piece fresh ginger (1/2 teaspoon grated, the rest cut into coins)
1/2 teaspoon Sichuan peppercorns, toasted and ground
1/4 cup minced scallions, plus 3 scallions cut into 2-inch pieces
1 tablespoon cornstarch
3 large eggs, beaten
2 tablespoons toasted sesame oil
1 cup panko
Vegetable oil, for frying
2 to 3 heads baby bok choy (8 ounces), trimmed and separated
6 cups low-sodium chicken broth
1/2 teaspoon ground white pepper

Steps:

  • Mix the ground pork with 5 tablespoons water in a large bowl. Mix in the chopped shiitakes, water chestnuts, Shaoxing wine, 3 tablespoons light soy sauce, the dark soy sauce, sugar, grated ginger, peppercorns, minced scallions, cornstarch, eggs and sesame oil. Stir in the panko.
  • Heat 2 inches vegetable oil in a large pot until a deep-fry thermometer registers 375˚F. Using wet hands, divide the pork mixture evenly into 8 large balls (the balls will not be firm). Using a slotted spoon, carefully add the balls to the hot oil in batches of 2 or 3. Cook, turning until browned, about 2 minutes. Remove and drain on paper towels.
  • Line the bottom of a Dutch oven with the bok choy. Arrange the meatballs on the bok choy, then top with the ginger coins, whole mushroom caps, scallion pieces, chicken broth, remaining 3 tablespoons light soy sauce and the white pepper. Bring to a boil, then reduce the heat to low, cover and simmer until the bok choy is tender and a thermometer inserted into the meatballs registers 165˚F, about 15 minutes. Discard the ginger coins.
  • Serve the meatballs and vegetables in bowls. Pour in the broth.

Tips:

  • For the best flavor, use a combination of ground veal and pork. Ground beef can also be used, but it will not be as flavorful.
  • Soak the bread crumbs in milk before adding them to the meatball mixture. This will help to keep the meatballs moist and tender.
  • Season the meatballs generously with salt and pepper. This will help to enhance the flavor of the meat.
  • Brown the meatballs in a pan before adding them to the sauce. This will help to develop their flavor and prevent them from falling apart.
  • Simmer the meatballs in the sauce for at least 30 minutes. This will help to tenderize the meatballs and allow the flavors to meld.
  • Serve the meatballs over egg noodles or mashed potatoes. The gravy can also be served over rice.

Conclusion:

Veal and pork meatballs with mushroom gravy and egg noodles is a classic comfort food dish that is sure to please everyone at the table.
