SWEET POTATOES WITH RUM
This side dish is decadent with the addition of the rum, but not as sweet as those that use marshmallows. If you substitute the orange juice, add some freshly grated orange zest too, for a real flavour punch.

Tips:
- Choose the right sweet potatoes: Use firm and smooth sweet potatoes for the best results. Avoid any that are bruised or have soft spots.
- Pierce the potatoes before baking: This helps the steam escape and prevents the potatoes from bursting.
- Bake the potatoes until they are tender: Insert a fork or knife into the center of a potato to check for doneness. It should slide in easily when the potato is cooked.
- Let the potatoes cool slightly before handling: This will help prevent them from breaking apart.
- Use a sharp knife to cut the potatoes: This will help you get clean, even slices.
- Serve the potatoes immediately: They are best when served warm and fluffy.
