- In a medium bowl, sift together the flour, baking soda, spice, and salt. Add to the wet ingredients (butter mixture) and stir together until just combined. Do not overmix.
- Fold in the chopped apples and pecans.
- Cover the dough with plastic wrap and refrigerate overnight. Or chill in the freezer for 15-20 minutes if you are in a hurry.
- Preheat the oven to 375°F. Line cookie sheets with parchment paper or silicone baking mats.
- Using a cookie scoop or rounded tablespoon, drop dough at least 1 inch apart on prepared baking sheets.

- 1. Preheat oven to 350°F. Grease cookie sheets.
- 2. Soak raisins in hot water, until ready to use; then drain.
- 3. Cream butter (or shortening) and sugar, with electric mixer, until sugar is dissolved.
- 4. Add egg, and mix well.
- 5. Sift together the flour, baking soda, salt, cinnamon, and nutmeg.
- 6. Add to creamed mixture, a half of a cup, at a time, while stirring with a wooden spoon.
- 7. Drain raisins. Then, fold in apples, nuts, and raisins. Add apple juice (or milk), and mix well.
- 8. Drop by teaspoonfuls onto greased cookie sheets.
- 9. Bake for 10 to 15 minutes or until done. Makes 5-6 dozen.
- 10. GLAZE: Mix together sifted powdered sugar and all other ingredients.
- 11. Spread on cookies, while still hot. Sprinkle with colored sugar crystals or other decorations, if desired for the holidays.

- Beat shortening and brown sugar together until light and fluffy. Beat in egg and blend thoroughly.
