½ cup butter, room temperature
1 ½ cups brown sugar, packed
1 large egg
¼ cup buttermilk
2 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons apple pie spice
1 teaspoon salt
2 cups peeled and chopped tart apple (like Granny Smith)
1 cup chopped toasted pecans
2 Tablespoons melted butter
1 Tablespoon milk (more if desired for a thinner glaze)
1 teaspoon vanilla
1 cup powdered sugar

Steps:

  • Using a stand mixer or handheld mixer, beat butter and sugar together in a large bowl until light and fluffy. Add in egg and buttermilk and mix until well combined, scraping down the side of the bowl as needed.
  • In a medium bowl, sift together the flour, baking soda, spice, and salt. Add to the wet ingredients (butter mixture) and stir together until just combined. Do not overmix.
  • Fold in the chopped apples and pecans.
  • Cover the dough with plastic wrap and refrigerate overnight. Or chill in the freezer for 15-20 minutes if you are in a hurry.

1 1/2 c hot water
1 c raisins
shortening, for greasing pans
1/2 c real butter or vegetable shortening
1 1/3 c light brown sugar, packed
1 egg
2 c all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1 c tart apple, unpared, finely chopped
1 c chopped pecans or walnuts
1/4 c apple juice or milk
GLAZE
1 1/2 c powdered sugar, sifted
1 Tbsp real butter, softened
1/4 tsp vanilla extract
1/8 tsp salt (omit, if butter is salted)
2 1/2 Tbsp light cream or milk
colored sugar crystals or decorations, if desired for holidays

Steps:

  • 1. Preheat oven to 350°F. Grease cookie sheets.
  • 2. Soak raisins in hot water, until ready to use; then drain.
  • 3. Cream butter (or shortening) and sugar, with electric mixer, until sugar is dissolved.
  • 4. Add egg, and mix well.
  • 5. Sift together the flour, baking soda, salt, cinnamon, and nutmeg.
  • 6. Add to creamed mixture, a half of a cup, at a time, while stirring with a wooden spoon.
  • 7. Drain raisins. Then, fold in apples, nuts, and raisins. Add apple juice (or milk), and mix well.
  • 8. Drop by teaspoonfuls onto greased cookie sheets.
  • 9. Bake for 10 to 15 minutes or until done. Makes 5-6 dozen.
  • 10. GLAZE: Mix together sifted powdered sugar and all other ingredients.
  • 11. Spread on cookies, while still hot. Sprinkle with colored sugar crystals or other decorations, if desired for the holidays.

1 ⅓ cups packed brown sugar
1 egg
2 cups sifted all-purpose flour
1 teaspoon baking soda

1 cup chopped walnuts
1 cup apples - peeled, cored and finely diced
1 cup raisins
¼ cup milk
1 ½ cups sifted confectioners' sugar
1 tablespoon butter
½ teaspoon vanilla extract
2 ½ tablespoons half-and-half cream

Steps:

  • Beat shortening and brown sugar together until light and fluffy. Beat in egg and blend thoroughly.
  • Stir together flour, baking soda, salt, cinnamon, cloves and nutmeg.
  • Stir half the dry ingredients into creamed mixture. Stir in nuts, apple and raisins, then stir in remaining half of dry ingredients and milk. Mix well.
  • Drop from tablespoon 1 1/2 inches apart onto lightly greased baking sheet. Bake in a preheated 400 degree oven for 10-12 minutes. Remove cookies to racks and while still warm, spread with glaze.
  • To make Glaze: Combine powdered sugar, butter, vanilla and enough cream to make glaze of spreading consistency. Beat until smooth. Spread on warm cookies.

1 c butter
1 1/2 c brown sugar, lightly packed
1 egg
3 c flour
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/4 c milk
1 c chopped walnuts

1 1/2 c finely chopped apples
VANILLA GLAZE
2 1/2 c powdered sugar
1/2 tsp salt
2 Tbsp vanilla
3 Tbsp butter, softened
add just enough milk to make the glaze spreadable.

Steps:
