Yield Makes about 1 1/2 quarts

Number Of Ingredients 8

14 ripe firm apples (about five pounds), such as Gala, peeled, cored, and quartered
1 cup apple cider, plus more as needed
1/4 cup sugar, plus more as needed
1 large cinnamon stick
1 teaspoon ground ginger, plus more as needed
1/2 teaspoon ground nutmeg, plus more as needed
2 tablespoons freshly squeezed lemon juice
1 vanilla bean, split lengthwise and scraped

Steps:

  • Combine all ingredients in a wide, heavy saucepan over medium heat. Cook, covered, stirring occasionally with a wooden spoon and adding more cider as needed to prevent scorching, until apples have broken down, 50 to 60 minutes. Mash any large pieces with the spoon. Add more sugar and spices, as desired.
  • Remove from heat; discard cinnamon and vanilla pod. Serve warm or at room temperature with rosti potatoes.

Tips:

  • Choose the right apples: For the best flavor, use a variety of apples that are sweet and tart, such as Granny Smith, Honeycrisp, or Braeburn.
  • Peel and core the apples: This will help the applesauce to cook evenly and will also remove any unwanted bitterness from the skin.
  • Use a food processor or blender: This will help to quickly and easily puree the applesauce until it is smooth and creamy.
  • Add sugar or honey to taste: The amount of sugar or honey you add will depend on the sweetness of your apples. Start with a small amount and add more to taste.
  • Add spices for extra flavor: Common spices that are used in applesauce include cinnamon, nutmeg, and cloves. You can also add a pinch of salt to help balance the sweetness.
  • Cook the applesauce over low heat: This will help to prevent the applesauce from burning or sticking to the bottom of the pot.

Conclusion:

Homemade vanilla applesauce is a delicious and versatile condiment that can be used in a variety of dishes. It can be enjoyed on its own, as a side dish, or as an ingredient in baked goods, smoothies, and more. With its sweet and tangy flavor, vanilla applesauce is a great way to add a touch of homemade goodness to your next meal.
