- Drain pineapple, reserve the juice.
- Preheat oven to 375*.
- In a small bowl, mix together butter, brown sugar, and drained pineapple.
- Coat a 10x10" baking pan with vegetable spray, pour in the pineapple and pat it out smoothly on the bottom of the pan.
- In a large mixing bowl, beat the eggs with a fork.
- Stir in the ham, pineapple juice, bread crumbs, parsley, onions, mustard, ginger, curry powder and pepper.mix well.
- Spread the ham mixture over the pineapple, patting it firmly over the pineapple.
- Bake for 45 minutes.
- Remove from the oven and allow to stand for 10 minutes.
- To serve, invert onto a serving platter.
- If any of the pineapple mixture remains in the bottom of pan, pat it on the loaf and serve immediately.

- 1. Heat oven to 350^. Grind the cooked ham to make 4 cups unpacked. In a glass loaf dish melt the margarine in microwave; and then sprinkle the brown sugar evenly over the margarine..
- 2. Evenly spread or spoon the pineapple over the sugar or use 3 pineapple rings in a row.
- 3. In a medium bowl combine the ground ham,eggs, onion, crumbs, seasonings, and reserved juice. Put the well mixed ham into the loaf dish and pat down evenly.
- 4. Bake for 30 minutes covered with foil. Then remove foil and bake for 25 more minutes. Remove from oven and let set 10 minutes..Run a knife around the sides of the ham; place a platter over the loaf and turn upside down . Serve with oven fries and sweet potatoes .
