Uncle Louie's Chicken Wings Marinara(Jay Leno's Favorite) image

This is reported to be Jay Leno's favorite recipe! The recipe multiplies easily for a party, just be sure to use extra pans as needed so as not to crowd the wings while roasting. Adapted from RecipeFinders.

Number Of Ingredients 9

12 chicken wings or 24 chicken drummettes
2 tablespoons olive oil
1 tablespoon garlic powder or 1 tablespoon granulated garlic
1 teaspoon salt
1/2 teaspoon black pepper
1 cup marinara sauce
2 tablespoons hot sauce, to taste
4 garlic cloves, chopped
chopped fresh parsley, for garnish

Steps:

  • Preheat oven to 400 degrees F.
  • If using whole wings, disjoint wings and remove tips; you should have 24 drumettes.
  • In a large bowl, toss the chicken with the olive oil, garlic powder, salt and pepper. Place on a rack in a baking pan.
  • Roast the chicken wings or drumettes in preheated oven until done, about 30 minutes.
  • Meanwhile, to make sauce, place the marinara sauce, hot sauce and garlic in a blender or food processor and blend to puree garlic.
  • When the wings are done, remove from the oven, and toss with half the sauce. Leave the oven on. Return wings to oven for 10 more minutes .
  • Sprinkle the wings with parsley.
  • Serve with the remaining sauce on the side to dip the wings into. Enjoy!
  • This is good served with a good blue cheese or gorgonzola dip too!

Peanut oil, for frying
24 whole chicken wings
All-purpose flour, for dredging
Coarse salt and freshly ground pepper
1/4 cup olive oil
2 crushed cloves garlic, plus more, if desired
1 can (28 ounces) peeled, whole tomatoes
2 tablespoons chopped fresh parsley
1/4 cup hot sauce, plus more to taste
1/2 tablespoon garlic powder

Steps:

  • Line a baking sheet with paper towels. Heat 4 inches peanut oil in a medium stockpot over high heat until a deep-fry thermometer registers 400 degrees. Dredge wings in flour, shaking to remove excess flour. Add wings to hot oil, and fry until dark golden brown, 14 to 18 minutes. Transfer to prepared baking sheet; season with salt and pepper.
  • Meanwhile, heat olive oil in a small saucepan over medium heat. Add crushed garlic; cook until fragrant, about 4 minutes. Remove garlic from oil and discard. In a medium bowl, crush tomatoes with your hands. Add to olive oil; cook, stirring occasionally, until heated through. Add parsley, salt, and pepper; reduce heat to low and simmer for 20 minutes. Add hot sauce and garlic powder; cook for 3 to 4 minutes. Keep warm until ready to use.
  • In a large bowl, toss wings with 1/2 cup of sauce. Serve immediately with remaining sauce on the side.

BALSAMIC STUFFED ROUND ZUCCHINI

I have based this recipe on one round zucchini only (as I only have to feed two people), but the recipe multiplies easily. You can also use the mixture to stuff marrow or thin zucchini.

8 cherry tomatoes, quartered
1 large mushroom, chopped into small chunks
1 small garlic clove, crushed
1 tablespoon white onion, finely diced
1 tablespoon dried oregano
4 teaspoons balsamic vinegar
1 tablespoon olive oil
2 tablespoons parmesan cheese, finely grated
salt & pepper
1 zucchini, round (about the size of a softball)

Steps:

  • Heat the oven to 180°C.
  • Put the tomatoes, chopped mushroom, garlic, onion and oregano into a bowl. Mix to combine and add the balsamic vinegar, mixing until well combined. Leave to stand for 30 minutes.
  • Cut the zucchini in half lengthways, and using a teaspoon scoop out and discard the pulp.
  • Heap the tomato mixture into the scooped out shells.
  • Grind over salt and pepper to taste, drizzle over the olive oil, and top with the parmesan cheese.
  • Bake for 45 minutes or until the shell just starts to go soft.

I am posting this because an Italian patient of mine didn't have any family recipes passed on to him (due to adoption). Now I can just print it out if need ever arises again! lol This is the recipe my Sicilian mother and grandmother taught me. It is simple, delicious and one of my favorite comfort foods. It is much quicker than marinara with beef or pork (i.e. sausage or meatballs)--ENJOY! And please don't tell my grandmother I posted this family recipe online.

2 (28 ounce) cans crushed tomatoes
14 ounces water
5 garlic cloves
3 tablespoons tomato paste
1 tablespoon dried basil
1 lb boneless skinless chicken breast
2 tablespoons olive oil
salt and pepper
1 large yellow onion, sliced (optional)
1 cup sliced mushrooms (optional)
parmesan cheese (optional)
1/4 cup red wine (optional)
16 ounces pasta (spaghetti, angel hair, penne, etc)

Steps:

  • Sauté garlic in 1 Tbsp olive oil until lightly brown and set aside. Cut chicken into bite-size pieces.
  • Cook chicken, mushrooms and onion in same skillet with remaining olive oil until chicken is white throughout, seasoning with salt and pepper as preferred.
  • Add tomato paste, cooked garlic and mix well.
  • Add crushed tomatoes, basil, and water and mix well. Bring to boil, then lower to a simmer and covering sauce with a lid for an hour. Stir occasionally and season with salt and pepper as desired.
  • Midway, add wine and stir well and resume covered simmering.
  • During last fifteen minutes or so, cook pasta according to directions on package.
  • In large bowl, pour sauce over cooked pasta and mix well.
  • Sprinkle cheese on top and serve!

vegetable oil, for deep-frying
3 lbs chicken, whole, cut into 8 pieces
3 cups seasoning, Uncle Lou's Fried Chicken Seasoning (available online)
6 cups dipping sauce, Uncle Lou's Spicy Love dipping sauce

Steps:

  • Heat oil in a deep-fryer or heat 3 inches of oil in a heavy pot until a deep-fryer thermometer reads 375 degrees F. Line a baking sheet with paper towels.
  • Rinse chicken thoroughly pat dry with more paper towels. Put the seasoning mix in a plastic bag. Add the chicken 2 to 3 pieces at a time, close the bag, and shake until all of the chicken is well coated.
  • Remove the chicken from the bag and shake off excess seasoning mix. Slip the chicken into the hot oil and fry until the juices run clear, about 12 to 15 minutes. Remove from the oil and drain on the lines baking sheet to remove excess oil. Serve as is, or dipped in the Sweet Spicy Love sauce.
