VAL'S CRANBERRY SALSA
My friend Val shared this recipe with me last year. It is a new favorite, and one that I plan on taking many places over the holiday season, as it is different. Best served with Wheat Thins, this salsa is yummy and a must try! The original recipe called for a 1 pound package of cranberries; I've found that fresh cranberries are now packaged in 12 oz. portions, and this size works. Don't forget to allow time for chilling, to allow flavors to develop...This will make enough for 2 blocks of cream cheese, so you have 1 to serve, and 1 to share!

CRANBERRY SALSA (CANNED)
I love salsa and am always experimenting with combinations of veggies and fruits. Fresh salsa is great but it is also nice to be able to can all that fresh goodness from the garden to eat in the dead of winter. Being from Wisconsin, I just had to come up with a recipe using cranberries and this is what I came up with. I use a mixture of hot peppers and seed some but not all of them since I like things hot. I also measure the cranberries, then give them a rough chop in my food processor before adding them. I think I will add some fresh lime juice to my next batch for a little flavor boost.

Tips:
- Use fresh cranberries: Fresh cranberries have a tart and tangy flavor that is perfect for salsa. Avoid using frozen or canned cranberries, as they will not have the same flavor or texture.
- Choose ripe cranberries: Look for cranberries that are plump and deep red in color. Avoid cranberries that are soft or have any blemishes.
- Chop the cranberries finely: This will help the salsa to have a smooth consistency. You can use a food processor or a sharp knife to chop the cranberries.
- Use a variety of ingredients: This will give the salsa a complex and flavorful taste. Some good options include onions, celery, jalapeños, cilantro, and lime juice.
- Experiment with different spices: This is a great way to customize the salsa to your own taste. Some good options include chili powder, cumin, and paprika.
- Chill the salsa before serving: This will help the flavors to meld together and will make the salsa more refreshing.
Conclusion:
Uncle Bill's Cranberry Salsa is a delicious and versatile dish that can be enjoyed in many different ways. It is perfect for parties, potlucks, and picnics. It can also be used as a condiment for tacos, burritos, and other Mexican dishes.
