1/2 cup granulated sugar
1/2 teaspoon salt
2/3 cup cold butter, cut into squares
2 cups cranberries, fresh or frozen
2 cups shredded sweetened coconut
4 large eggs
2 cups granulated sugar
1/2 cup lemon juice, freshly squeezed
1/4 cup all-purpose flour
1 teaspoon baking powder

Steps:

  • BASE Preheat oven to 325 F.
  • Butter a 13" x 9" oven-proof baking dish.
  • In a food processor or blender, pulse flour, sugar, salt and butter and whirl until crumbly.
  • Spread into prepared baking dish and pat down lightly.
  • Bake uncovered in preheated 325 F oven for 20 minutes.
  • Scatter cranberries over warm baked base.
  • Sprinkle over with shredded coconut.
  • In a medium-size mixing bowl, whisk together eggs, sugar and lemon juice until well blended.
  • Gradually whisk in flour and baking powder.
  • Pour lemon mixture over top (it will spread to fill dish during baking).
  • Bake uncovered in preheated 325 F oven for about 55 to 60 minutes or until middle is set and edges are golden.

1 (12 ounce) package fresh cranberries
1 large granny smith apple, peeled, cored and cut into chunks
1/2 large sweet red pepper, seeded and cut into chunks
1/2 medium red onion, cut into chunks
3/4 cup granulated sugar
1/3 cup apple juice
3 tablespoons chopped fresh cilantro
2 tablespoons chopped pickled jalapeno peppers or 2 tablespoons use 1 medium fresh jalapenos
1 teaspoon grated lime zest
1 (14 ounce) package spinach tortillas

Steps:

  • Rinse cranberries in cold water.
  • In a food processor, add cranberries, apple, red pepper and onion and pulse until coarsely chopped.
  • Transfer to a mixing bowl and set aside.
  • In a separate mixing bowl, stir together sugar, apple juice, cilantro, Jalapeno pepper and lime zest; mix well to blend.

4 cups peeled pitted and finely chopped ripe mangoes
1/2 cup finely chopped onion
1/2 cup chopped sweet red pepper, seeded
4 medium jalapeno peppers, seeded and finely chopped
1/4 cup finely chopped fresh coriander
3 cloves garlic, finely chopped
1/4 cup white vinegar
2 large limes
7 cups granulated sugar
2 envelopes liquid fruit pectin

Steps:

  • In a large saucepan, combine prepared mango, onions, sweet red pepper, Jalapeno peppers, coriander, garlic and vinegar.
  • Grate lime rinds and squeeze juice from both limes and add to saucepan.
  • Add sugr and mix well.
  • Place saucepan over high heat and bring to a full rolling boil and boil for 1 minute, stirring constantly.
  • Remove from heat.
  • Immediately stir in liquid pectin.
  • Stir for 5 minutes.
  • Remove any foam to prevent fruit from floating.
  • Prepare canning jars by sterilizing with soap and hot water, rinsing with clean hot water.

12 ounces fresh cranberries or 12 ounces frozen cranberries
1/2 cup frozen concentrated orange juice
1/2 cup cold water
1/2 cup granulated sugar
3/4 cup pineapple-orange marmalade
3 inches cinnamon sticks
1/4 teaspoon freshly grated nutmeg
1 tablespoon lemon zest
2 teaspoons orange zest

Steps:

  • Wash the cranberries thoroughly in cold water. If using frozen cranberries, thaw first.
  • In a medium size saucepan, add cranberries, orange juice, water, sugar, orange-pineapple marmalade, cinnamon stick, nutmeg, lemon zest and orange zest.
  • Bring mixture to boil.
  • Reduce heat and simmer for about 10 minutes or until most of the cranberries pop, stirring occasionally.
  • When cooked, discard cinnamon stick.
  • Let cool and then store in a glass container with lid or a dish covered with plastic wrap.
