1 pound Italian sausage
1 small onion (diced)
2 cloves garlic
14 ounces crushed tomatoes (canned)
14 ounces diced tomatoes (with juices)
½ cup long-grain white rice (uncooked)
1 ⅔ cup water (or as needed)
1 tablespoon Worcestershire sauce
½ teaspoon Italian seasoning
salt & pepper to taste
4 bell peppers (any color, diced)
½ cup mozzarella cheese (shredded)

Steps:

  • In a large pan, brown sausage, onion & garlic over medium heat until no pink remains. Drain fat.
  • Add tomatoes, rice, water, Worcestershire sauce, Italian seasoning, and salt & pepper to taste. Bring to a boil, reduce heat to simmer and cook covered 10 minutes.
  • Stir in diced peppers and cook an additional 15-20 minutes or until rice is tender.
  • Stir and add cheese on top. Remove from heat, cover with a lid and rest 10 minutes before serving.

2 c prepared rice
1 lb ground beef, lean
2 green bell peppers; sliced
1 small sweet onion; sliced
2 clove garlic; minced
1/2 tsp salt
1/4 tsp pepper, black
1 tsp Italian seasoning
2 1/4 c marinara
1 c shredded mozzarella cheese
1/2 c breadcrumbs
1 Tbsp olive oil

Steps:

  • 1. Preheat oven to 350.
  • 2. Place ground beef in a large, oven-safe skillet, over medium-high heat. Cook until browned. Drain excess grease if needed (if beef is lean you can probably skip that step).
  • 3. Add onion, peppers and garlic to ground beef and cook until onion is just beginning to soften. Season with salt, pepper, and Italian seasoning.
  • 4. Stir in rice, marinara and half the cheese. Remove from heat. Sprinkle remaining cheese over the top.
  • 5. In a small bowl, toss the breadcrumbs with the olive oil and then sprinkle the mixture over the top of the beef mixture.
  • 6. Bake in oven for 10 minutes.

3 cups cooked rice
1 red bell pepper, chopped
1 orange bell pepper, chopped

  • Preheat oven to 400 degrees F (200 degrees C).
  • Heat a large skillet over medium-high heat. Break ground beef into pieces and add to skillet; cook and stir until about half of the beef is browned, 3 to 5 minutes. 4 medium bell peppers, preferably red, halved, seeds and ribs removed (see Cook's Note)
Kosher salt and freshly ground black pepper
3 tablespoons canola oil
1 pound ground beef
4 medium yellow onions, finely chopped
6 large cloves garlic, minced
2 tablespoons chili powder
1/2 teaspoon ground cumin
One 28-ounce can whole peeled tomatoes, lightly crushed
One 15.5-ounce can black beans, drained
2 tablespoons apple cider vinegar
1 1/4 cups cooked couscous (see Cook's Note)
3/4 cup shredded sharp yellow Cheddar

  • Preheat the oven to 400 degrees F.
  • Arrange the pepper halves cut-side up on a nonstick baking sheet or regular baking sheet lined with parchment paper.
