Time 30m

Yield 3 servings

Number Of Ingredients 10

1 cup grated white Cheddar cheese
1 cup grated Monterey Jack cheese
1 cup grated pepper jack cheese
6 tablespoons salted butter
Six 8-inch flour tortillas
Pinch of kosher salt
Pinch of freshly ground black pepper
2 Roma tomatoes, diced
One 4-ounce can diced green chiles, drained
9 fresh cilantro sprigs, for garnish

Steps:

  • Toss together the Cheddar, Monterey Jack and pepper jack in a bowl; set aside.
  • Heat 2 tablespoons of the butter in large skillet over medium heat. Place a single tortilla in the skillet. Sprinkle a little less than a third of the cheese blend over the tortilla. Sprinkle with salt and pepper. Add about a third of the diced tomato and a third of the chiles. Sprinkle a touch more cheese over the whole thing and gently top and press with a second tortilla. Cook until golden on the bottom, about 3 minutes.
  • Carefully flip the quesadilla to the other side. Continue cooking until the second side is golden, 3 to 4 minutes more. Repeat with the remaining ingredients. Slice each quesadilla into wedges and garnish with cilantro sprigs.

ULTIMATE CHICKEN QUESADILLA

Cheesy quesadillas filled with a mixture of tender chicken and spicy tomatoes

Provided by Food Network

Time 30m

Yield 4 servings (1 quesadilla each)

Number Of Ingredients 5

PAMĀ® Original No-Stick Cooking Spray
1/2 pound boneless skinless chicken breasts, cut into 1/2-inch pieces
1 can (10 oz each) Ro*TelĀ® Mexican Diced Tomatoes with Lime Juice & Cilantro, undrained
4 flour tortillas (10 inch)
2 cups shredded Cheddar and Monterey Jack cheese blend (2 cups = 8 oz)

Steps:

  • 1. Spray large skillet with cooking spray; heat over medium heat. Add chicken and undrained tomatoes; cook 10 minutes or until chicken pieces are no longer pink in centers and liquid has evaporated, stirring frequently.
  • 2. Spread chicken mixture evenly onto bottom half of each tortilla to within 1 inch of edge. Sprinkle 1/2 cup cheese over chicken mixture on each tortilla. Fold each tortilla in half to cover filling.
  • 3. Clean skillet. Spray with additional cooking spray; heat over medium-high heat. Cook quesadillas 3 minutes on each side or until golden brown on both sides. Cut into wedges to serve.

Tips:

  • Use fresh ingredients: The fresher the ingredients, the tastier the quesadilla will be. Opt for ripe, flavorful veggies and juicy chicken or steak.
  • Season your ingredients: Don't forget to season your ingredients before adding them to the quesadilla. This will help enhance their flavor and make the quesadilla more delicious.
  • Don't overload the quesadilla: When assembling the quesadilla, don't overload it with fillings. Too many ingredients will make it difficult to fold and cook evenly.
  • Use a good quality cheese: The cheese is one of the most important ingredients in a quesadilla. Opt for a good quality cheese that melts well, such as cheddar, Monterey Jack, or mozzarella.
  • Cook the quesadilla over medium heat: When cooking the quesadilla, cook it over medium heat. This will help prevent the tortilla from burning and allow the cheese to melt evenly.

Conclusion:

With its endless variations and customizable fillings, the quesadilla is a versatile dish that can be enjoyed for breakfast, lunch, or dinner. Whether you prefer a classic cheese quesadilla or a more adventurous combination of flavors, the possibilities are endless. So next time you're looking for a quick and easy meal, give this ultimate easy quesadilla recipe a try and experience the deliciousness for yourself!
