ALL-PURPOSE BISCUITS

All-Purpose Biscuits image

Biscuits are what take us into the kitchen today to cook: fat, flaky mounds of quick bread, golden brown, with a significant crumb. Composed of flour, baking powder, fat and a liquid, then baked in a hot oven, they are an excellent sop for sorghum syrup, molasses or honey. They are marvelous layered with country ham or smothered in white sausage gravy, with eggs, with grits. Biscuits are easy to make. (A food processor makes easy work of this recipe. Yield 6 to 8 servings

Number Of Ingredients 6

2 cups all-purpose flour, plus more for dusting
2 tablespoons baking powder
1 scant tablespoon sugar
1 teaspoon salt
5 tablespoons cold, unsalted butter, preferably European style
1 cup whole milk

Steps:

  • Preheat oven to 425. Sift flour, baking powder, sugar and salt into a large mixing bowl. Transfer to a food processor. Cut butter into pats and add to flour, then pulse 5 or 6 times until the mixture resembles rough crumbs. (Alternatively, cut butter into flour in the mixing bowl using a fork or a pastry cutter.) Return dough to bowl, add milk and stir with a fork until it forms a rough ball.
  • Turn the dough out onto a well-floured surface and pat it down into a rough rectangle, about an inch thick. Fold it over and gently pat it down again. Repeat. Cover the dough loosely with a kitchen towel and allow it to rest for 30 minutes.
  • Gently pat out the dough some more, so that the rectangle is roughly 10 inches by 6 inches. Cut dough into biscuits using a floured glass or biscuit cutter. Do not twist cutter when cutting; this crimps the edges of the biscuit and impedes its rise.
  • Place biscuits on a cookie sheet and bake until golden brown, approximately 10 to 15 minutes.

CLOUD BISCUITS

This is an old family recipe from my grandmother. These are VERY easy and was the 1st recipe I ever made (at 5 years old). These turn out so light and fluffy, you won't believe it.

Categories     Biscuits

Time 25m

Number Of Ingredients 6

2 c white flour
4 tsp baking powder (yes--that amount is correct)
1/2 tsp salt
1/2 c shortening
1 egg
2/3 c milk

Steps:

  • 1. Pre-heat oven to 400 degrees
  • 2. Beat the egg and milk in a small bowl and set aside
  • 3. Put the flour, baking powser, salt and shortening into a mixng bowl. With a pastry blender (or 2 forks) work the flour mixture into the shortening until mealy. Add the egg/milk mixture and mix until combined (this will be sticky)
  • 4. Pour out onto floured countertop or board. Sprinkle about 1/2 cup flour over the top and knead for 3 to 5 minutes. Flatten with your hand or a rolling opin until about 1/2 inch thick, and cut out your biscuits.
  • 5. Place into an ungreased pan and bake for 10-15 minutes until browned on top. (Check a middle one to be sure they are completely done)
  • 6. You now have a wonderful base for Sausage Gravy and Biscuits, GREAT for strawberry shortcake, biscuits with butter and honey....use your imagination!

Tips:

  • For the best results, use cold butter and buttermilk. This will help the biscuits to be light and flaky.
  • Don't overwork the dough. Overworking the dough will make the biscuits tough.
  • Chill the dough for at least 30 minutes before rolling it out. This will help the biscuits to keep their shape when baking.
  • Bake the biscuits in a hot oven. This will help them to rise quickly and evenly.
  • Serve the biscuits warm with butter, honey, or jam.

Conclusion:

Cloud biscuits are a delicious and easy-to-make treat. They are perfect for breakfast, lunch, or dinner. With a few simple ingredients and a little bit of time, you can enjoy these fluffy, buttery biscuits anytime you want.
