TYROKAFTERI (SPICY FETA SPREAD)

Tyrokafteri (Spicy Feta Spread) image

Tyri = cheese, Kafteri = hot, as in spicy. So there you have it, a spicy feta cheese dip or spread. Goes great on an appetizer tray and makes anything dipped in it taste fantastic. A word of caution though - don't use the dried-up feta from the grocery store. Please use a good quality feta from an ethnic deli, or at least a mass produced feta that comes packaged in brine (TJ's or WF are good options). I found this recipe on Elly Says Opa - and believe me, you'll be saying "opa", too!

Time 15m

Yield 1 cup

Number Of Ingredients 5

1 -2 banana pepper, depending on how spicy you want it (see note)
1/3 lb good quality feta cheese
1/3 cup Greek yogurt
1 teaspoon cider vinegar
2 tablespoons good quality olive oil

Steps:

  • Place the banana peppers directly over a gas flame (or under a broiler), turning often, until blackened spots appear on all sides. Place in a bowl and cover with a clean towel until cook enough to handle. Peel, seed, and remove the stems from the peppers; then, chop them.
  • Add the peppers, feta, Greek yogurt, and cider vinegar to the bowl of a food processor and processes until fairly smooth.
  • Slowly stream in the oil, while continuing to pulse. You may need more or less, depending on your desired consistency.
  • Season with salt and pepper to taste and refrigerate for at least an hour.
  • NOTE: You can use different types of peppers, just adjust for the degree of spiciness you want.

Tips:

  • Choose the right feta cheese. A good quality feta cheese will make all the difference in the flavor of your Tyrokafteri. Look for a feta that is creamy, crumbly, and has a slightly salty flavor.
  • Roast the peppers before using them. Roasting the peppers will bring out their natural sweetness and smoky flavor.
  • Use fresh herbs. Fresh herbs will add a bright and lively flavor to your Tyrokafteri. Use a variety of herbs, such as parsley, cilantro, and oregano.
  • Don't over-process the ingredients. Tyrokafteri is meant to be a chunky spread, so don't over-process the ingredients. You want to maintain some texture.
  • Serve Tyrokafteri with your favorite accompaniments. Tyrokafteri is typically served with pita bread, crackers, or vegetables. You can also use it as a dip for grilled meats or fish.

Conclusion:

Tyrokafteri is a delicious and versatile Greek spread that can be enjoyed in many different ways. It is a great appetizer, snack, or side dish. With its creamy, spicy, and smoky flavor, Tyrokafteri is sure to please everyone at your table. So next time you're looking for a new and exciting recipe to try, give Tyrokafteri a try. You won't be disappointed!
