6 thick-sliced bacon strips, chopped
3 cups water
3 cups chicken stock
1 teaspoon garlic powder
1/2 teaspoon pepper
2 cups quick-cooking grits
12 ounces Velveeta, cubed (about 2-1/3 cups)
1/2 cup butter, cubed
1/2 cup 2% milk
4 large eggs, room temperature, lightly beaten
2 cups shredded white cheddar cheese

Steps:

  • Preheat oven to 350°. In a large saucepan, cook bacon over medium heat until crisp, stirring occasionally. Remove pan from heat. Remove bacon with a slotted spoon; drain on paper towels., Add water, stock, garlic powder and pepper to bacon drippings; bring to a boil. Slowly stir in grits. 2 1/2 teaspoons salt
1 1/2 cups grits (not instant)
1/2 cup butter
3 eggs, beaten
1 lb medium cheddar or 1 lb sharp cheddar cheese, shredded and divided

  • Preheat oven to 350°F.
  • Bring water to a boil in a saucepan; add salt and grits.
  • Cook according to the package directions, for the minimum time recommended.
  • Remove from heat.
