200 g dark chocolate (55% cocoa)
200 ml whipped cream
White ganache:
200 gr white chocolate
200 ml whipped cream
Ganache for covering the cake;
125 g milk chocolate (or dark)
50 g white chocolate (optional)
175 ml whipped cream
Glaze:
100g dark chocolate
100 ml whipped cream
1 tablespoon honey
Butter, for greasing the pans
1¾ cups all-purpose flour, plus more for pans
2 cups sugar
¾ cups good cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon kosher salt
1 cup buttermilk, shaken
½ cup vegetable oil
2 extra-large eggs, at room temperature
1 teaspoon pure vanilla extract
1 cup freshly brewed hot coffee

Steps:

  • Preheat the oven to 350 degrees F. Butter two 8-inch x 2-inch round cake pans. Line with parchment paper, then butter and flour the pans. Sift the flour, sugar, cocoa, baking soda, baking powder, and salt into the bowl of an electric mixer fitted with a paddle attachment and mix on low speed until combined. In another bowl, combine the buttermilk, oil, eggs, and vanilla. With the mixer on low speed, slowly add the wet ingredients to the dry. With mixer still on low, add the coffee and stir just to combine, scraping the bottom of the bowl with a rubber spatula. Pour the batter into the prepared pans and bake for 35 to 40 minutes, until a cake tester comes out clean. Cool in the pans for 30 minutes, then turn them out onto a cooling rack and cool completely. Black ganache: Put whipped cream into a stainless steel saucepan and put it on low heat. When its hot, add the chocolate pieces and let it rest for 1 minute, then stir with a whisk until chocolate has melted and becomes shiny and creamy. Allow the ganache to cool in the freezer for approx. 15 minutes. When cool, beat the ganache cream with an electric mixer until it becomes fluffy and pale. White and cream ganache cream ganache for cake dressed: Follow the same procedure as for the black ganache cream! If you want, you can make one single black ganache cream, but keep about a quarter for covering the cake. Assembling the cake: Place the 1st cake layer (the sponge) on a plate, add the black ganache and level it well. If it seems soft,refrigerate the cake for aprox. 30 min. 1 cup unsalted butter (2 sticks)
2 cups water
1 cup canola oil
4 cups sugar
1 cup high-quality unsweetened cocoa powder
4 cups all-purpose flour
4 large eggs
1 cup buttermilk
1 tablespoon baking soda
1/2 teaspoon salt
1 tablespoon vanilla extract
4 cups chilled heavy whipping cream
1 1/4 cups powdered sugar
4 ounces high-quality bittersweet chocolate, chopped into small pieces
1/2 cup heavy whipping cream
1/4 cup lyle's golden syrup (*this is imported from britain if you can't find it you can substitute light corn syrup)
2 teaspoons vanilla extract

Steps:

  • To make the cake: For a three-layer cake, place one baking rack one-third from the bottom of the oven and the second two-thirds from the bottom.
  • Preheat the oven to 350°.
  • Line the bottom of three 9-inch or two 10-inch pans with parchment paper rounds, grease with butter, and dust with flour (Or spray with Baker's Joy).
  • Combine the butter, water and canola oil in a medium saucepan set over medium heat.
  • In a large bowl, stir together the sugar, cocoa and flour.
  • Pour the butter mixture into the sugar mixture and whisk until smooth.
  • Whisk in the eggs, one at a time, then whisk in the buttermilk.
  • Whisk in the baking soda, salt and vanilla all at once.
  • Transfer the batter to the prepared pans.
  • For a three-layer cake, stagger the cake layers on the oven racks so that no layer is directly over another.
  • Set two layers on one rack and the third on the other.
  • For a 2-layer cake, stagger the layers on the middle rack with one placed more toward the front of the oven and one toward the back.
  • Bake for 35-40 minutes, or until a toothpick inserted in the middle comes out clean.
  • Monitor the layers carefully for doneness; each one may be done at different times.
  • Remove the cakes from the oven and cool on racks for about 15 minutes before inverting onto baking racks.
  • Cool the cakes completely, at least two hours, before frosting.
  • To Make Frosting: Using a mixer fitted with a whisk attachment, whip the cream in a large bowl on high speed until soft peaks form.
  • Add the powdered sugar and whip until thoroughly combined.
  • Place one cake layer on a plate and spread some of the frosting over the top.
  • Top with the remaining layers, thickly coating the top and sides of each with frosting.
  • Refrigerate the cake until the whipped cream frosting has stabilized, at least one hour.
  • To Make The Glaze: Place the chocolate in a medium bowl.
  • Heat the cream in a small saucepan over medium heat until it is very hot and just beginning to steam.
  • Pour the hot cream over the chocolate and stir until it has melted completely.
  • Stir in the syrup and the vanilla.
  • Pour the glaze into a medium pitcher or measuring cup and let cool for ten minutes.
  • Do not let the glaze sit longer because it will stiffen and become difficult to pour over the cake.
  • Slowly pour the glaze over the cake, ensuring that it covers the top of the cake entirely, but make sure some of the cream frosting shows through the drizzles on the sides. (If the glaze doesn't flow easily over the edge of the cake,don't be afraid to add an extra tablespoon or two of the syrup).
  • Refrigerate the cake until the glaze is set and the whipped cream frosting is firm, at least one hour.
  • Slice the cake with a long serrated knife, dipping it in a tall glass of hot water between each slice.
  • The refrigerated cake will keep for about 2 days. **Please note that the cook time only reflects the time needed to bake the batter. Other time is spent on the frostings etc and there are lots of periods where the cake is resting or cooling.

1 (15.25 ounce) package chocolate fudge cake mix (such as Duncan Hines®)
1 ⅓ cups water
3 eggs
½ cup vegetable oil
1 (16 ounce) package confectioners' sugar
½ cup sour cream
1 (4 ounce) container whipped topping (such as Cool Whip®)
1 tub ready-to-eat cheesecake filling
1 cup semisweet chocolate chips
⅓ cup heavy whipping cream
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease two 8-inch round pans.
  • Mix cake mix, water, eggs, and oil together in a bowl until well blended. Pour batter into the prepared pans.
  • Bake in the preheated oven until a toothpick inserted into the center of a cake comes out clean, 26 to 31 minutes. Cool in pans for 10 minutes. Turn cakes out onto clean dishcloths. Let cool for 30 minutes.
  • Mix confectioners' sugar and sour cream together in a bowl until well blended. Add whipped topping; mix well. Cover with plastic wrap and refrigerate icing for at least 30 minutes.
  • Place 1 cake layer on a serving plate. Trim top until flat. Spread a thin layer of icing on top. Spread the cheesecake filling on the cake to about 1/2-inch from the edge of the cake. Cover with second cake layer; frost entire cake with the remaining icing.
  • Place chocolate chips in a small bowl.
  • Bring heavy cream to a boil in a small saucepan. Remove from heat; let cool for 1 minute. Pour over the chocolate chips. Add vanilla extract; stir until smooth. Pour immediately on top of the cake, letting some of the mixture slide down the sides of the cake. Refrigerate until ready to serve.

  • Heat oven to 350 degrees F (175 degrees C).
  • Mix baking crumbs and butter; press onto bottom of 9-inch springform pan.
  • Beat chocolate cream cheese and 1/2 cup sugar in large bowl with mixer until blended. Add 2 eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust. Freeze 15 minutes or until slightly thickened.

2 cups confectioners' sugar (powdered sugar)
1/2 cup sour cream

1/4 cup cold water
1 1/2 cups semi-sweet chocolate chips
1/2 cup butter, softened
1/2 cup granulated sugar
2 large eggs

1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup sour cream
1 1/3 cups semi-sweet chocolate chips
6 tablespoons butter
2/3 cup sour cream
1 teaspoon vanilla extract
3 cups confectioners' sugar

Steps:

  • White Cheesecake Layer:
  • Beat cream cheese with confectioners sugar until smooth. Blend in sour cream, vanilla extract and white chocolate.
  • Stir the gelatin into the cold water in a small saucepan and allow mixture to stand several minutes to soften. Then heat mixture gently over a low setting until thoroughly dissolved. Cool briefly, then blend into the cream cheese mixture.
  • Line bottom of a 9-inch springform pan with foil, then coat pan and foil well with a nonstick spray. Pour mixture into prepared pan, cover top of pan and chill until firm.
  • This cheesecake layer can be prepared up to two days in advance, and held in the refrigerator.
  • Chocolate Layers:.
  • Melt chocolate chips in a small heavy gauge saucepan over low heat. Remove from heat and cool slightly.
  • Preheat oven to 350F and arrange rack to the center position. Grease and flour two 9-inch round cake pans.
  • Cream the butter with the sugar until very light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract and the cooled, melted chocolate. Whisk the flour with the baking soda and salt and gradually stir into the batter. Blend in the sour cream and divide batter evenly between the two prepared pans.
  • Bake at 350F about 25 minutes or until layers spring back when lightly pressed in their centers. Cool layers in pans 10 minutes, then loosen and turn out onto a rack to complete cooling. Makes Two 9-inch layers
  • Chocolate Sour Cream Frosting:
  • Melt chocolate chips and butter in a small, heavy gauge saucepan over low heat, stirring until smooth. Transfer mixture to a large mixing bowl and cool 10 minutes.
  • Stir in sour cream and vanilla extract. Gradually add confectioners sugar, beating until frosting is smooth.
  • Assemble the Cake:
  • Arrange one of the cooled chocolate cake layers in center of a cake plate, top side down. Placing top side (because of its moist surface) down will help to secure cake to plate, preventing layers from slipping after cake is assembled.
  • Release rim of the springform pan. Holding cheesecake in one hand and chocolate cake layer (on plate) in other hand, quickly invert chocolate layer (plate and all) on top of the cheesecake. Quickly flip the two, now attached layers back over, so chocolate layer is again on bottom. Now, you can easily remove springform pan bottom from (now top) of cheesecake layer.
  • Arrange the remaining chocolate cake layer (top side down) on top of cheesecake layer. Using a long sharp knife and a slight sawing motion, carefully cut around rim of cheesecake layer to make it even with chocolate layers.
  • Frost sides and top of cake and serve. The cheesecake layer will hold at room temperature several hours.
  • For best results, serve cake within 3 hours of assembling.
  • Refrigeration will cause the frosting to loose its beautiful sheen.
  • Makes one, three layer, 9-inch round cake.

1/4 cup butter, melted
FILLING:
4 packages (8 ounces each) cream cheese, softened
1-1/4 cups sugar
1-1/2 teaspoons vanilla extract
4 large eggs, lightly beaten
TOPPING:
1 package (10 to 12 ounces) vanilla or white chips
3 tablespoons shortening, divided
2 cups semisweet chocolate chips
1 purchased frosted brownie with walnuts
Rosebud and sprig of flowering thyme

Steps:

  • In a large bowl, combine cookie crumbs and butter; press onto the bottom of an ungreased 9-in. springform pan. Cover and refrigerate for 30 minutes., In another large bowl, beat the cream cheese, sugar and vanilla until smooth. Add eggs; beat on low speed just until combined. Pour into crust. Place pan on a baking sheet. , Bake at 350° for 50-60 minutes or until center is almost set. Cool on a wire rack for 10 minutes. 3 large eggs, beaten
1 teaspoon cuttlefish ink (sometimes labeled "squid ink")
Semolina flour, for dusting
1 pound large shrimp, peeled, deveined, and halved lengthwise, shells reserved
2 tablespoons extra-virgin olive oil, plus more for serving
2 cloves garlic, minced (2 teaspoons)
1/4 teaspoon red pepper flakes
2 tablespoons tomato paste
2 tablespoons fresh lemon juice
1/4 cup fresh orange juice
Kosher salt

Steps:

  • Dough: Stir together 1 cup "00" flour, 2 teaspoons warm water, and half of eggs (about 1/4 cup) in a medium bowl until a ragged dough forms (if too dry, add more water 1 teaspoon at a time). Knead dough on a lightly floured surface until smooth and elastic, about 5 minutes.
  • In another medium bowl, vigorously whisk remaining half of eggs with cuttlefish ink and 1 teaspoon warm water to thoroughly combine. Stir in remaining 1 cup flour to bowl with cuttlefish mixture and mix until a ragged dough forms (if too dry, add more water 1 teaspoon at a time). Knead dough on a lightly floured surface until smooth and elastic, about 5 minutes.
  • Form each dough into a square disk, tightly wrap in plastic, and let stand 1 hour.
  • Unwrap both doughs; place cuttlefish-ink dough on top of plain dough. On a floured surface, roll the stack of dough out to an 18-by-20-inch rectangle. Cut into 1-inch-wide strips, then crosswise into 2-inch-long rectangles. Keep cut pasta covered with plastic wrap while you work.
  • Working one at a time, pinch middle of each pasta rectangle with 2 fingers to create a bow-tie shape; transfer to a rimmed baking sheet generously dusted with semolina.
  • Shrimp Sauce: In a small saucepan, bring shrimp shells and 2 cups water to a boil. Reduce heat to medium and simmer 5 minutes; strain and discard shells. Heat oil in a large straight-sided skillet over medium. Add garlic and red-pepper flakes; cook until sizzling and fragrant, 30 seconds.
  • Stir in tomato paste; cook until caramelized, about 1 minute. Add shrimp broth and both citrus juices. Simmer until sauce is thickened and reduced to approximately 3/4 cup, 6 to 7 minutes.
  • Meanwhile, cook pasta in a large pot of generously salted boiling water until al dente, 7 to 9 minutes. Reserve 1/2 cup pasta water; drain. Add pasta and 1/4 cup pasta water to sauce and cook, stirring frequently, until sauce clings evenly to pasta, 2 to 3 minutes.
  • Add shrimp, stirring just until cooked through, about 1 minute. Remove skillet from heat. If pasta appears dry, right before serving stir in more pasta water a little at a time, just until sauce clings evenly to pasta again. Transfer to bowls, drizzle with oil, and serve.

18 medium fresh strawberries with stems
1 cup vanilla or white chips
3-1/2 teaspoons shortening, divided
1-1/3 cups semisweet chocolate chips

Steps:

  • Line a tray or baking sheet with waxed paper; set aside. Wash strawberries and pat until completely dry. , In a microwave-safe bowl, melt vanilla chips and 1-1/2 teaspoons shortening at 70% power; stir until smooth. Dip each strawberry until two-thirds is coated, forming the tuxedo shirt, allowing excess to drip off. Place on prepared tray; chill for 30 minutes or until set. , Melt chocolate chips and remaining shortening. 1 (13 ounce) bag Hershey's Hugs chocolates
1 (22 1/2 ounce) package Original Supreme brownie mix (with syrup pouch)
1/4 cup cocoa
1/4 cup water
1/4 cup vegetable oil
2 eggs

Steps:

  • Remove wrappers from Hugs and heat oven to 350F degrees.
  • Grease and flour cookie sheet or line eith parchment paper.
  • Stir brownie mix, pouch of syrup, cocoa, water, oil, and eggs in bowl until well blended.
  • Drop by teaspoons on cookie sheet.
  • Bake 8 minutes or until set.
  • Cool 1 minute.
  • Press Hug into center of each cookie.
  • Remove from cookie sheet to wire rack.

8 ounces bow tie farafelle pasta, cooked according to package directions (measured dry, I use De Cecco)
1/2 cup mayonnaise
2 tablespoons finely chopped Spanish olives
2 (6 1/2 ounce) jars marinated quartered artichoke hearts (reserve several tablespoons of the marinade)
1/4 cup italian deli-sliced mild pepper rings, chopped (or green bell peppers)
1 cup broccoli floret, cut into one-inch pieces cooked al dente
2 stalks celery, thinly sliced
1 medium cucumber, peeled and diced
2 medium fresh tomatoes, diced
fresh ground black pepper, to taste
salt, to taste
1/4 cup pepperoni, diced (optional, or salami)
1/4 cup parmesan cheese, diced (optional, or provolone)
1 tablespoon snipped fresh parsley, to garnish
1 tablespoon snipped fresh chives, to garnish

Steps:

  • In a large bowl stir together the mayonnaise, olives, artichoke hearts, peppers, broccoli florets, celery, cucumber, and tomatoes. Now is the time to add the pepperoni or salami and cheese, if using.
  • Add the cooked and drained pasta; mix thoroughly.
  • Stir in the reserved artichoke marinade, a spoonful at a time, to the desired consistency.
  • Add salt and pepper to taste.
  • Garnish with snipped fresh herbs (parsley and chives).
  • Cover and thoroughly chill (several hours or overnight) before serving.

One of the most prominent old cocktail books to feature this recipe was issued by the Waldorf-Astoria hotel bar in 1934. Jarred Roth, beverage director of the Bar Room at the Beekman in New York, gives the drink an added herbal touch by applying a light rinse of absinthe to the glass. To achieve a more traditional Tuxedo flavor profile, simply omit the absinthe.

CAKE:
1 pkg angel food cake mix
1 tsp vanilla extract
2/3 c coarsely grated semi sweet chocolate
GLAZE
1 c semi-sweet chocolate chips
3/4 c plus 1 tablespoon heavy cream

  • 1. Preheat oven according to package directions. Cake: Make cake according to box direction; adding the vanilla with the water. Beat until thick and shiny. Fold in the chocolate.
  • 2. Pour or spoon evenly into ungreased 10 inch tube pan(angel food cake pan). Smooth top and bake 35-46 minutes until cake springs back when gently touched.
  • 3. Remove cake-invert pan over cooling rack. When cool, run a thin blade knife around cake to remove it from the pan.(center tube too). Place on cake stand or serving plate.
  • 4. glaze: Melt chips in microwave safe dish at 30 second intervals until melted and stir in the cream and stir until smooth. Drizzle warm mixture on cake.

1 cup granulated sugar
1/2 cup cocoa powder
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup whole milk
6 tablespoons vegetable oil
1 teaspoon pure vanilla extract
1 egg
3/4 cup granulated sugar
1/2 teaspoon salt
3 egg whites
18 tablespoons (2 1/4 sticks) salted butter, softened and cut into pieces
1 tablespoon vanilla bean paste
2/3 cup confectioners' sugar
1/2 cup strongly brewed espresso coffee, cooled
12 ounces semisweet chocolate, broken into pieces
2 tablespoons vegetable oil

Steps:

  • For the cake batter: Preheat the oven to 350 degrees F. Line a standard cupcake or muffin pan with 12 cupcake liners.
  • Pour 1/2 cup water into a microwave-safe glass bowl and bring to a boil. In a large bowl, combine the flour, granulated sugar, cocoa powder, baking powder, baking soda and salt and whisk until combined. Add the milk, vegetable oil, vanilla, egg and boiling water and whisk to combine. Scrape down the sides of the bowl and continue to whisk until all the ingredients are fully incorporated.
  • Fill the liners three-quarters full with the batter and bake until cooked through, about 20 minutes. Cool the cupcakes completely before frosting.
  • For the vanilla bean cream filling: Combine the granulated sugar, salt and egg whites in the bowl of a heavy-duty stand mixer and set the bowl over a medium saucepan of gently simmering water. Whisk until the sugar is dissolved and the mixture is frothy and smooth and registers 160 degrees F on a candy thermometer, about 5 minutes.
  • Transfer the bowl to the mixer and beat on high speed with a whisk attachment until the mixture has cooled completely and formed stiff and glossy peaks, about 7 minutes. With the mixer running, add the butter one piece at a time. Continue beating until all of the butter is incorporated and the mixture looks smooth. Separate out 1 cup of the buttercream and add the vanilla bean paste. Set aside for filling the cupcakes.
  • For the espresso buttercream: Add the confectioners' sugar and espresso to the remaining buttercream and beat on low speed with a paddle attachment until smooth.
  • For the chocolate shell: In small microwave-safe bowl, combine the chocolate and oil. Microwave on medium heat for 1 1/2 minutes, stirring halfway through. Cool completely before using.
  • To assemble: Cut out a hole in each cupcake and fill with some vanilla bean cream filling. Frost each cupcake with some espresso buttercream. Refrigerate for about 15 minutes, and then dip half of each cupcake in the chocolate shell. Refrigerate again for about 10 minutes.

2 (15 1/2 ounce) cans great dry northern white beans
1 (15 1/2 ounce) can black beans, drained and rinsed
1 (13 ounce) canned chicken, in water-drained
1 green pepper, diced
1 small red onion, diced
2 tablespoons hot sauce (change to your desired tastes)
1 tablespoon sugar
2 teaspoons salt
2 tablespoons minced garlic
3 tablespoons butter

Steps:

  • Add white beans and drained black beans into a large soup pot and turn heat to medium-high.
  • Add canned drained chicken breast and flake in pot. Can substitute leftover chicken or cook fresh.
  • Dice your onion and green pepper and add to pot.
  • Add all remaining ingredients excluding butter.
  • Stir well and bring mixture to a boil. Let boil for 15 minutes and then cover and let simmer for 30 minutes. Remove from heat and add 3 tablespoons butter and cream into soup while stirring. Serve.

Steps:

  • Cook pasta according to package directions.

32 Ritz crackers (about 2 sleeves) or 32 butter flavored crackers (about 2 sleeves)
7 ounces marshmallow cream
1 1/2 cups creamy peanut butter
16 ounces white chocolate (Almond Bark melting chocolate)
16 ounces milk chocolate (Almond Bark melting chocolate)

Steps:

  • Using a butter knife, spread marshmallow cream on one side of a Ritz.
  • cracker and the other side with creamy peanut butter. Put them together.
  • And dip into melted chocolate. (Directions below).
  • Directions For Dipping:.
  • In a small size, deep bowl, add 4-5 blocks of Almond Bark white melting chocolate. Start with the white chocolate first.
  • Microwave on high for 1 minute, stir chocolate and return it back to microwave a few more seconds, stirring each time, until smooth. Do not overcook. (Add a couple of drops of oil in the melted chocolate to thin if needed).
  • Dip half the cookie into the white chocolate; scrape the back of the cookie against the edge of the bowl, to remove the excess chocolate. Place cookie on waxed paper to cool and set. Repeat until all of the cookies are dipped in white chocolate.
  • Next, in a small size, deep bowl, add 4-5 blocks of Almond Bark melting milk chocolate, (more, if needed).
  • Microwave on high for 1 minute, stir chocolate and return it back to microwave a few more seconds, stirring each time, until smooth. Do not overcook. (Add a couple of drops of oil to the melted chocolate to thin if needed).
  • Turn the cookie to the side and dip cookie at an angle (to create half of the jacket lapel. Set this cookie back on the waxed paper to cool and set, dip the next one and repeat until they are all dipped on one side.
  • Now starting with the first one, gently dip the other side in milk chocolate (at an angle) to create the other side of the jackets' lapel. (See picture).
  • To create the bow tie: With a toothpick, dip the tip of the toothpick into the milk chocolate and carefully lay it flat and only slide one side to create a "V" that is filled in with chocolate, now do the other side the same way.
  • Now dip the toothpick tip into the milk chocolate and place a small dot in the middle of your two "V" s. Then 3 dots of chocolate for the buttons. Repeat until all cookies are decorated.

It didn't turn out 100% like Cheese Cake Factory, but pretty close...and still yummy! The cake went to fast, wasn't able to take a picture of an individual slice. :( Enjoy! Go Cheesecake!

FOR DEVIL FOOD LAYER:
feel free to use your favorite boxed devil's food cake recipe, or your own favorite recipe.
i used my own recipe as seen in my " mousse stuffed espresso cupcakes with cappuccino butter cream frosting"

FOR CHOCOLATE CHEESE CAKE LAYER:
8 oz cream cheese, softened
1/2 c salted butter, softened
3 Tbsp heavy cream
1 c sugar
1 1/2 tsp vanilla extract
1 1/2 c dark chocolate chips 60% cocao or higher (or chopped chocolate)
2 Tbsp coco powder
FOR MASCARPONE CHEESE LAYER:
16 oz mascarpone cheese, softened
3 Tbsp unsalted butter, softened
2 tsp vanilla extract
6 Tbsp heavy cream
1 c powdered sugar
FOR GANACHE LAYER
2 c dark chocolate chips (or chopped chocolate)
2 c heavy cream
1 1/2 tsp vanilla extract
2 Tbsp butter, unsalted
FOR MOUSSE TOPPING:
2 c dark chocolate chips, (or chopped chocolate)
2 c heavy cream, chilled
4 egg yolks
1 tsp vanilla extract
2 Tbsp salted butter
3 Tbsp espresso powder, instant
2 Tbsp sugar

Steps:

  • 1. For Devil's Food cake: 1- Bake as directed on box for 9 inch spring form pan, or as your own recipe requires. 2- Cool cake completely and set aside. Side note: Again you need to yield one 9 inch round cake layer. Please use spring form pan!
  • 2. For Chocolate Cheesecake layer: 1- In a double boiler, melt chocolate chips. 2- Cream remaining chocolate cheesecake layer ingredients together. 3- Once chocolate is completely melted, stir into cheesecake batter. Mix vigorously until completely incorporated. If using a hand or stand mixer, mix on high for 1 minute. 3- Set aside.
  • 3. For Mascarpone Cheese Layer: 1- Cream Mascarpone cheese and butter together. 2- Add heavy cream, sugar and vanilla to mascarpone batter. 3- Beat on high until you get soft peeks, like whipped cream. 4- Set aside.
  • 4. For Mousse Topping: 1- Beat cream, vanilla and sugar into peaks. Put in fridge to chill. 2- In a double boiler, add chocolate, espresso powder, and butter. Melt completely, stirring occasionally. 3- Once melted chocolate mixture is hot, stir in egg yolks one at a time. Stir vigorously until completely incorporated. 4- Mix whipped cream into chocolate mixture slowly. 5- Once completely incorporated, pour mixture into a glass bowl and refrigerate for 6 hours. Side note: This recipe can be made up to 2 days ahead of time.
  • 5. For Ganache layer: 1- Scald heavy cream with vanilla extract in a heavy bottomed sauce pan. 2- Pour over chocolate and stir until smooth. Side note: Use ganache immediately after making it. Plan your time out accordingly so ganache is made right before you need to use it.
  • 6. ASSEMBLY: 1- Level your devil's food cake layer out to about 1/2 - 3/4 inch thick. Place cake layer on a cake dish, or cake round. 2- Take ring from the spring form pan you used to bake the devil's food cake and secure it back around your cake layer. 3- Pour your chocolate cheesecake mixture on top of devil's food cake layer, even out. Let set in refrigerator for 1 hour. 4- With spring form pan ring still in place, On top of chocolate cheesecake layer pour mascarpone cheese mixture and even out. I chose to pour a little chocolate sauce in the mascarpone layer, but this is optional. Chill for another hour. 5- With spring form pan ring still in place, pour fresh ganache over your mascarpone layer. Lat cool for 20-30 minutes until it stiffens up. 6- Slice a sharp knife around the edges of the spring form pan ring and release the spring form pan ring from the cake. Remove carefully. 7- Frost the outsides of your cake with the chocolate mousse. 8- I chose to garnish the cake with a little melted white chocolate, semi-sweet chocolate chips and I chose to garnish the top of my cake with my excess mousse. All garnish is optional of course. Make your cake pretty anyway you like. :) 9- Chill cake completely before serving.
