Yield 4 main dish servings

Number Of Ingredients 11

1 can (15 to 15.5 oz) white cannellini beans, rinsed, drained
1/2 c. thinly sliced red onion, halved
1 can tuna (6 oz) in olive oil, drain and reserve oil
1 cup diced plum tomatoes
1/2 c. pitted kalamata olives
2 tbsp. chopped italian parsley
1 tbsp. lemon juice
1/2 tsp. grated lemon zest
1/4 tsp each salt and freshly ground black pepper
2 cups torn arugula leaves
4 thick flatbreads

Steps:

  • 1. In a bowl, combine beans, red onion, tuna, tomatoes, olives, parsley, olive oil, lemon juice, lemon zest, salt and pepper. Toss gently to combine and add arugula 2. Preheat grill or grill pan. Brush flatbreads lightly with the remaining reserved olive oil. Grill until lightly browned about 2 mins per side. Cut flatbreads in halves or quarters. Serve with salad.

Tips:

  • Use high-quality canned tuna: Opt for tuna that is packed in olive oil or water, and avoid tuna packed in brine, as it can be too salty.
  • Choose ripe and flavorful tomatoes: Look for tomatoes that are deep red in color and have a firm texture. Avoid tomatoes that are bruised or have blemishes.
  • Use fresh herbs: Fresh herbs like basil, oregano, and thyme add a burst of flavor to the salad. If you don't have fresh herbs on hand, you can use dried herbs, but be sure to use half the amount.
  • Don't overcook the beans: White beans should be cooked until they are tender but still hold their shape. Overcooked beans will become mushy and lose their flavor.
  • Use a good quality olive oil: Extra virgin olive oil is the best choice for this salad. It has a fruity flavor that will complement the other ingredients.

Conclusion:

Tuscan Tuna White Bean Salad is a delicious and healthy dish that is perfect for a summer lunch or dinner.
