TUSCAN SAUSAGE SOUP
When you don't know what's for dinner but it needs to be comforting, we suggest this soup. It has a brothy tomato base that's loaded with rich Italian sausage, sweet carrots, caramely onions, tender cannellini beans, silky spinach and just the right amount of pasta. Top it off with a handful of garlicky butter-toasted Progresso™ bread crumbs and a handful of Parmesan, and you've got dinner. Extra credit if you serve it alongside a green salad and loaf of crusty bread.

TUSCAN POTATO SOUP (ZUPPA TOSCANA)
There are a number of recipes out there that try to duplicate Olive Garden's "Zuppa Toscana" appetizer soup but they usually call for artificial ingredients or seriously lack in flavor. With or without the addition of chopped kale leaves this all-natural and economical family dish is chock full of traditional flavors and is nearly identical to Olive Garden's signature dish. Hint: To reduce the fat content of this soup make sure to remove the kale leaves before serving; they absorb grease.

Tips:
- Use high-quality ingredients. The better the ingredients, the better the soup will be. Choose fresh vegetables, flavorful sausage, and a robust broth.
- Don't overcrowd the pot. If you add too many ingredients to the pot, the soup will be watery and bland. Add the ingredients in batches, and cook them until they are tender before adding the next batch.
- Season the soup to taste. Add salt, pepper, and other spices to taste. You can also add a splash of lemon juice or vinegar to brighten the flavors.
- Let the soup simmer. Simmering allows the flavors to meld together and develop. Simmer the soup for at least 30 minutes, or longer if you have time.
- Serve the soup with crusty bread or crackers. This will help to soak up the delicious broth.
Conclusion:
Tuscan sausage and potato soup is a hearty, flavorful soup that is perfect for a cold winter day. It is easy to make and can be tailored to your own preferences. With a few simple tips, you can make a delicious Tuscan sausage and potato soup that your family and friends will love.
