TURKISH COFFEE MOCHA

Turkish Coffee Mocha image

This is a super-special coffee that owes its lingering flavor to an unexpected source, says creator Fred Thompson. "Cardamom is a spice that creeps into taste memory without being immediately recognized," says Thompson, author of the cookbook, Hot Chocolate. I use almond milk for it's flavor and because I try not to use dairy.

MOCHA

Categories     Breakfast, Brunch

Time 3m

Number Of Ingredients 4

18g ground espresso, or 1 espresso pod
250ml milk
1 tsp drinking chocolate
large cup, 300-350ml capacity

Steps:

  • Make around 35ml espresso using a coffee machine and pour into the base of your cup. Add the drinking chocolate and mix well until smooth.
  • Steam the milk with the steamer attachment so that it has around 4-6cm of foam on top. Hold the jug so that the spout is about 3-4cm above the cup and pour the milk in steadily. As the volume within the cup increases, bring the jug as close to the surface of the drink as possible whilst aiming into the centre. Once the milk jug is almost touching the surface of the coffee, tilt to speed up the rate of pour. As you accelerate, the milk will hit the back of the cup and start naturally folding in on itself to create a pattern on the top.

This warming drink, a treat for coffee and chocolate lovers alike, combines the two under a layer of creamy foamed milk. Skim milk foams easily and makes a deceptively lean, yet rich topping. Enjoy it in the morning, as an afternoon break, and as a lean, luscious, liquid dessert.

Tips:

  • To make the perfect Turkish-style mocha, use freshly ground coffee beans. This will give your coffee a richer flavor.
  • Use a cezve (Turkish coffee pot) for brewing your coffee. This type of pot is specifically designed to brew Turkish coffee and will help you achieve the desired consistency.
  • When adding sugar to your coffee, do so before brewing. This will help the sugar dissolve completely and prevent it from settling at the bottom of the cup.
  • If you are using a cezve with a long handle, hold the handle with a cloth or oven mitt to avoid burning yourself.
  • Be patient when brewing Turkish coffee. It takes a few minutes for the coffee to reach the desired consistency.
