WHITE BEAN BURGERS

White Bean Burgers image

These have a delicate texture and a wonderful savory taste. They're a little tricky to turn, as they can fall apart. Don't make them too thick and use an offset spatula, and it will be easier for you. They should be cooked on a flat griddle or pan; don't try to grill them on a barbecue.

Time 2h30m

Yield 6 patties

Number Of Ingredients 13

2 cans white beans, drained and rinsed

TURKEY AND VEGETABLE BURGERS

Turkey and Vegetable Burgers image

The vegetables in this turkey burger mixture not only contribute lots of vitamins A and C and micronutrients like the carotenoids lutein and zeaxanthin, which have been linked to eye health, but they also help to moisten burgers that can otherwise be quite dry. Make sure to buy lean ground turkey breast.

Time 30m

Yield 6 burgers

Number Of Ingredients 13

1 tablespoon extra virgin olive oil
1/2 cup finely diced onion
1/2 cup finely diced red bell pepper
Salt to taste
1 large garlic clove, green shoot removed, minced
2/3 cup finely grated carrot (1 large carrot)
1 1/4 pounds lean ground turkey breast, preferably organic, from humanely raised turkeys
1 tablespoon prepared barbecue sauce
1 tablespoon ketchup
Freshly ground pepper to taste
Canola oil for the skillet
Whole grain hamburger buns
condiments of your choice

Steps:

  • Heat the olive oil over medium heat in a medium skillet and add the onion. Cook, stirring, until it begins to soften, about 3 minutes, and add the diced red pepper and a generous pinch of salt. Cook, stirring often, until the vegetables are tender, about 5 minutes. Stir in the garlic and the grated carrot and cook, stirring, for another minute or two, until the carrots have softened slightly and the mixture is fragrant. Remove from the heat.
  • In a large bowl, mash the ground turkey with a fork. Add about ¾ teaspoon kosher salt if desired, and mix in the barbecue sauce, ketchup, and freshly ground pepper to taste. Add the sautéed vegetables and mix together well. Shape into 6 patties, about ¾-inch thick. Chill for 1 hour if possible to facilitate handling.
  • Heat a nonstick griddle or a large nonstick frying pan over medium-high heat and brush with a small amount of canola oil, or prepare a medium-hot grill. When you can feel the heat when you hold your hand above it, cook the patties for 4 minutes on each side. Serve on whole grain buns, with the condiments of your choice.

TURKEY & WHITE BEAN BURGERS RECIPE

Turkey & White Bean Burgers Recipe image

Provided by Margannl

Number Of Ingredients 11

1/2 cup canned small white beans, rinsed and drained
3 tablespoons olive oil
1/2 clove garlic, minced
2 tablespoons finely diced red bell pepper
3 tablespoons plain dried breadcrumbs
1 1/2 teaspoon Worcestershire sauce
1 large egg
1 tablespoon thinly sliced chives
1/2 pound ground turkey
Kosher salt and freshly ground black pepper, to taste
8 slices (1/2 inch thick) good country bread (like ciabatta), toasted

Steps:

  • Combine the white beans, 1 tablespoon of the olive oil, and the garlic in a large bowl. Using a fork, lightly smash the beans and mix with the oil and garlic until blended. Add the red pepper, breadcrumbs, Worcestershire sauce, egg, and chives. Mix until blended. Crumble the ground turkey and add it to the bowl, along with 1/2 tsp. salt and a generous sprinkling of pepper. Gently mix with a fork or your hands until just blended; don't overmix or the burgers will be tough. Fill a medium bowl with water, moisten your hands, and shape the meat into four patties about 3 inches in diameter and 3/4 inch thick. Heat the remaining 2 tablespoons olive oil in a large nonstick skillet over medium heat. Cook the burgers until the bottoms are browned, 4 to 5 minutes. Flip the burgers and continue cooking until they're firm to the touch and register 165°F on an instant-read thermometer, another 5 to 8 minutes. Serve immediately on the toasted bread.

Tips:

  • Choose the right beans: For a creamy and flavorful burger, use cannellini or great northern beans. If you prefer a firmer texture, chickpeas are a good option.
  • Season the beans well: Don't be afraid to add plenty of herbs and spices to the bean mixture. This will give the burgers more flavor.
  • Don't overmix the bean mixture: Overmixing will make the burgers tough. Mix just until the ingredients are combined.
  • Form the burgers gently: Use your hands to gently form the bean mixture into patties. Don't press them too hard, or they will become dense.
  • Cook the burgers over medium heat: This will help prevent them from burning.
  • Serve the burgers on your favorite bun: Whole wheat, brioche, or even lettuce wraps are all good options.

Conclusion:

Turkey and white bean burgers are a delicious and healthy alternative to traditional beef burgers. They are packed with protein, fiber, and vitamins, and they are also relatively low in calories and fat. These burgers are perfect for a quick and easy meal, and they can be enjoyed by people of all ages. So next time you're looking for a healthy and flavorful burger, give this recipe a try!
