1 cup chopped red onion
1 to 2 garlic cloves, minced
2 cups julienned zucchini
1 cup salsa
1 cup frozen corn
1 cup julienned sweet red pepper
1 can (4 ounces) chopped green chilies
2 tablespoons minced fresh cilantro
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
8 flour tortillas (8 inches)
2 cups shredded reduced-fat Mexican cheese blend

Steps:

  • In a large nonstick skillet, cook the turkey, onion and garlic over medium heat until meat is no longer pink; drain. Add zucchini, salsa, corn, red pepper and chilies. 4 teaspoons prepared honey mustard
1/2 cup shredded Monterey Jack
4 ounces smoked turkey breast deli meat
1 Mcintosh apple, thinly sliced
1 cup shredded reduced-fat cheddar

  • 1.Lay out tortillas and spread each with 1 teaspoon honey mustard. Place 1 tortilla, mustard side up, in a large nonstick skillet over medium heat. Top one half with 1/8 cup Monterey Jack cheese, 1 ounce turkey breast, 1/4 of the apple slices and 1/4 cup cheddar. Fold tortilla in half over ingredients and gently press. Cook 3 minutes. 1/2 cup julienne-cut oil-packed sun-dried tomatoes, drained
1 can (4.5 oz) Old El Paso™ chopped green chiles, drained
1 cup shredded Monterey Jack cheese with jalapeño peppers or regular Monterey Jack cheese (4 oz)
1 package (11 oz) Old El Paso™ flour tortillas for burritos (8 tortillas; 8 inch)
8 slices (1 1/2 oz each) smoked turkey breast
1 cup shredded Cheddar cheese (4 oz)
2 tablespoons butter or margarine
4 ripe olive slices, if desired

1 cup black beans, drained and rinsed
8 whole wheat tortillas, shells 7 inch

  • Brown turkey and onion in skillet over medium heat 3 to 5 minutes.
  • Drain off fat.
  • Stir in black beans.

1/2 lb turkey breast, cut into thin strips
1 large green pepper, thinly sliced
1/2 red onion, thinly sliced
1 teaspoon chili powder
hot pepper sauce
oil
8 large flour tortillas
3 cups cheese, shredded
salsa
sour cream

Steps:

  • In a large non stick skillet, heat oil over medium high heat and add turkey and cook, stirring until no longer pink.
  • Stir in green pepper, onion and chili powder.
  • Cook until onion begins to soften. Season with hot pepper sauce to taste, salt and pepper.
  • Remove turkey mixture to a bowl.
  • Wipe out skillet with paper towel.
  • Brush one side of each tortilla with oil and place oiled side down in skillet.
  • Spoon 1/4 of turkey mixture over tortilla and sprinkle with 3/4 cup of cheese.
  • Place another tortilla over top, oiled side up.
  • Cook both sides until lightly browned and cheese is melted.
  • Repeat with remaining tortillas.
  • Cut each into six wedges.
