Coarse salt and freshly ground pepper
4 tablespoons extra-virgin olive oil
2 cups onion, chopped into 1/2-inch pieces
1 1/2 cups carrots, chopped into 1/2-inch pieces
1 cup celery, chopped into 1/2-inch pieces
4 cloves garlic, chopped
1 teaspoon ground cumin

Add white wine; increase heat to medium-high. Cook until almost all of liquid is evaporated, 3 to 4 minutes. Stir in tomatoes; reduce heat to medium. Season with salt and pepper; cook for 2 minutes. Stir in turkey and rice.
  • Add heated stock to pot; bring to a boil. Season with salt and pepper. Stir in peas; simmer until rice is just covered with liquid. Cover, and transfer to oven. Bake for 20 to 25 minutes. Let stand, covered, for 5 minutes. Fluff rice with a fork. Stir in parsley. Serve immediately.

BARLEY PILAF

Barley Pilaf image

Barley can be found in two forms-hulled and pearled. Pearling removes almost a third of the grain, making it quicker cooking and reducing some nutrients. Hulled barley takes longer to cook but has a higher nutrient content and a pleasant, toothsome chewiness. This pilaf recipe is a simple way to enjoy hulled barley.

Provided by Food Network Kitchen

Time 1h

Yield 4 servings

Number Of Ingredients 8

1 tablespoon unsalted butter
1 small onion, chopped
1 cup hulled barley
2 1/2 cups low-sodium chicken broth
Kosher salt
1/2 cup small pieces of broken spaghetti (about 2 ounces)
Freshly ground black pepper
2 tablespoons chopped fresh chives

Steps:

  • Melt the butter in a medium saucepan over medium heat. Add the onion and cook, stirring occasionally, until soft and lightly golden brown, about 6 minutes. Add the barley and stir until the grains are just coated in butter. Add the broth and 1/2 teaspoon of salt and bring to a boil. Reduce the heat to medium low, cover and simmer 20 minutes. Uncover and quickly stir in the spaghetti; cover and continue to simmer until most of the liquid is absorbed and the barley and spaghetti are tender, stirring once more, about 15 minutes more. Remove from heat and let sit, covered, for 10 minutes.
  • Season to taste with salt and pepper and sprinkle with chopped chives.

Time 1h10m

Yield 6 servings

Number Of Ingredients 12

3 tablespoons olive oil
1 large onion, finely chopped
1 cup rice
1/2 teaspoon turmeric
1 teaspoon ground cumin
2 cups chicken or turkey stock or broth
1/2 cup raisins
1 1/2 cups frozen peas
1/3 cup toasted slivered almonds
1 1/2 cups cooked turkey, cut in small cubes
8 sheets phyllo
Freshly ground black pepper and salt (optional)

Steps:

  • Heat the oven to 400 degrees.
  • Saute the onion in 1 tablespoon of hot oil until it begins to soften. Stir in the rice, turmeric and cumin and cook, stirring until rice is coated.
  • Add the chicken or turkey stock and raisins; bring to boil; reduce heat and cover. Cook rice for 17 minutes, until liquid has been absorbed and rice is tender. Stir in peas and almonds. Season with pepper and, if desired, salt. Set aside.
  • Lightly grease a three-quart casserole with olive oil. Lay one sheet of phyllo in casserole so that the dough overhangs edge of casserole. Lightly brush with some of remaining oil. Top with second sheet, at right angle of first sheet, and oil. Continue until five sheets have been layered.
  • Place half the rice mixture on the phyllo; top with turkey and then top with remaining rice.
  • Arrange one sheet of phyllo over rice and brush lightly with oil; repeat with remaining two sheets. Trim edges so that only enough dough hangs over to tuck into sides of casserole. Tips:

  • Use high-quality rice for the best results. Basmati or jasmine rice are good choices.
  • Rinse the rice thoroughly before cooking to remove any starch and impurities.
  • Use a large pot or Dutch oven to cook the rice. This will give the rice plenty of room to expand and prevent it from sticking to the bottom of the pot.
  • Be careful not to overcook the rice. It should be tender but still have a slight bite to it.
  • Add the cooked rice to the turkey mixture while it is still hot. This will help the rice absorb the flavors of the turkey.
  • Use a variety of vegetables in the filling. This will add flavor and color to the dish.
  • Be sure to season the filling well. This will help to bring out the flavors of the turkey and vegetables.
  • Use a pastry brush to brush the filo dough with melted butter before assembling the turban. This will help to keep the dough from drying out.
  • Bake the turban in a preheated oven until the filo dough is golden brown and crispy.

Conclusion:

Turkey pilaf in a turban is a delicious and impressive dish that is perfect for special occasions. It is also a great way to use up leftover turkey. With a little planning and preparation, you can easily make this dish at home. So next time you are looking for a unique and flavorful dish to serve, give turkey pilaf in a turban a try.
