¾ pound ground turkey
¾ pound lean ground beef
1 small onion, chopped
1 cup milk
1 cup seasoned bread crumbs
1 large egg
1 teaspoon dried rosemary
½ teaspoon salt
¼ teaspoon ground black pepper
⅓ cup ketchup
2 tablespoons brown sugar
2 tablespoons prepared yellow mustard

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch loaf pan with cooking spray.
  • Combine ground turkey, ground beef, onion, milk, bread crumbs, egg, rosemary, salt, and pepper in a mixing bowl. Press into the prepared pan.
  • Combine ketchup, brown sugar, and mustard in a separate bowl and whisk together. Pour mixture over meatloaf.

1/4 cup olive oil
1 large onion, chopped
2 teaspoons fresh thyme leaves
1 teaspoon minced fresh sage
Kosher salt and freshly ground black pepper
2 cloves garlic, grated
1 tablespoon tomato paste
3 tablespoons Worcestershire sauce
3/4 cup panko breadcrumbs
1/2 cup chicken broth
3 pounds ground turkey
2 large eggs
1/2 cup ketchup

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with foil.
  • Heat the olive oil in a large skillet over medium heat. Add the onions, thyme, sage, 1 teaspoon salt and 1/2 teaspoon pepper. Cook, stirring often, until the onions are softened, about 10 minutes. Add the garlic and cook 1 minute more. Add the tomato paste and cook for 1 minute, stirring to incorporate. Stir in the Worcestershire. Remove from the heat and allow to cool.
  • Add the panko to a large mixing bowl and pour over the chicken broth so the breadcrumbs soak up the liquid. 1 medium potato, peeled and finely shredded
1 medium green pepper, finely chopped

3/4 pound lean ground beef (90% lean)
3/4 pound lean ground turkey

Steps:

1 tbsp olive oil
1 large onion , finely chopped
1 garlic clove , crushed
2 tbsp Worcestershire sauce
2 tsp tomato purée , plus 1 tbsp for the beans
500g turkey mince (thigh is best)
1 large egg , beaten
85g fresh white breadcrumbs
2 tbsp barbecue sauce , plus 4 tbsp for the beans
2 x 400g cans cannellini beans
1-2 tbsp roughly chopped parsley

Steps:

  • Heat oven to 180C/160C fan/gas 4. Heat the oil in a large frying pan and cook the onion for 8-10 mins until softened. Add the garlic, Worcestershire sauce and 2 tsp tomato purée, and stir until combined. Set aside to cool.
  • Put the turkey mince, egg, breadcrumbs and cooled onion mix in a large bowl and season well. Mix everything to combine, then shape into a rectangular loaf and place in a large roasting tin. Spread 2 tbsp barbecue sauce over the meatloaf and bake for 30 mins.
  • Meanwhile, drain 1 can of beans only, then pour both cans into a large bowl. Add the remaining barbecue sauce and tomato purée. Season and set aside.
  • When the meatloaf has had its initial cooking time, scatter the beans around the outside and bake for 15 mins more until the meatloaf is cooked through and the beans are piping hot. Scatter over the parsley and serve the meatloaf in slices.

My intent was to make Cranberry Bog Turkey Burgers, ala Rachael Ray. Upon discovering that I had defrosted both beef and turkey rather than 2 pounds of turkey, I took her recipe and added my own twists to make a tender and moist meatloaf. The listed amounts of spices and herbs yield a mild flavor so if you like more punch, you'll want to increase them. For better slicing, let the loaves rest after baking or they will crumble under your knife. Mashed potatoes and cranberry sauce make great side dishes with this recipe.

1 lb lean ground beef (I use 90/10%)
1 lb ground turkey (93/7%)
1 1/2 teaspoons poultry seasoning
2 tablespoons Italian parsley, chopped
2 slices bread, cubed
3/4 cup milk
2 eggs
2 tablespoons butter
1 small apple, peeled, cored & diced
1 small onion, diced
2 celery ribs, diced
1/2 teaspoon salt
1/4 teaspoon thyme, ground
water

Steps:

  • In a large bowl, mix the beef, turkey, poultry seasoning & parsley. Set aside.
  • In a small bowl, slightly beat the eggs then stir in the milk. Submerge the bread cubes, mixing gently to break them up.
  • In a medium fry pan, melt the butter then add the apple, onion & celery. Sprinkle with salt & saute until the onions are translucent.
  • Stir apple, onion, celery mixture into the meats then add the bread, milk & eggs.
  • Work the mixture gently (I use my hands) until well combined.
  • Divide in half & shape 2 loaves in a 9X13" baking dish.
  • Tent with foil and bake in a 350º oven for 45 minutes.
  • Remove from oven, pour off juices and reserve.
  • Return loaves to oven (minus their tent) for another 15 minutes or until juices run clear. Let rest for 5-10 minutes while you make the gravy.
  • Gravy:.
  • Strain reserved pan juices and if needed, add water to equal 1 cup.
  • Pour drippings & water into the pan you used to saute the apples/onions/celery. Whisk in the flour.
  • Cook and stir over medium low heat until gravy thickens. Stir in the ground thyme & cook for 2-3 minutes more. Salt and pepper to taste.
  • Slice the loaves into portions, top with the gravy and serve.
