1 lb ground beef
1 lb ground pork
4 or 5 large Russet potatoes
1 cup water (add up to 1/4 more if needed)
Sices to taste (see note below:
1-1 1/2 tsp. salt
1-1 1/2 tsp. poultry seasoning
1-1 1/2 tsp ground cloves

Steps:

  • Cook the above ingredients (start with 1 tsp of each spice) in a pot until meat is tender and thoroughly cooked and juices are reduced so there is some liquid, but not too much. Boil an amount of potatoes equal to the meat mixture and mash them plain - that is, do not use milk or butter or seasoning. Mix the potatoes and the meat mixture using a large measuring cup to assure equal amounts. Note: Either after the meat is cooked or the stuffing is made you might want to adjust the seasoning - better to start easy. I usually add another 1/4-1/2 tsp of all three seasonings. Refrigerate the stuffing - it must be cooled well before putting it in the turkey or a pie shell. For the pie, you can use a regular top crust or a lattice top crust This recipe makes quite a lot a stuffing/filling, so there should be plenty left over to make a toutiere (traditional French meat pie). It freezes well too.

1 tablespoon vegetable oil
3 tablespoons red onions or 3 tablespoons shallots, minced
2 tablespoons garlic, minced
2 tablespoons ginger, minced
1 1/2 lbs ground turkey
4 tablespoons soy sauce
1 tablespoon chile garlic sauce (I used more)
1 teaspoon fish sauce (optional)
1 cup cilantro, chopped
1/3 cup peanuts, chopped (optional)
1 head romaine lettuce

Steps:

  • Heat the oil in a large non-stick frying pan and add the onion and saute for about 2 minutes. Add garlic and ginger root and saute about 1 minute more.
  • Add ground turkey and break apart, then add soy sauce, chili garlic and fish sauce if using. Cook until the turkey is brown and crumbling apart and the sauce is slightly reduce, about 5 minutes.
  • When turkey is done, add chopped cilantro and cook 1-2 minutes more. Serve filling and lettuce leaves in separate bowl, with chopped peanuts in another. Fill lettuce leaves with filling and add chopped nuts if desired.

1 teaspoon paprika
1 teaspoon table salt

12 ounces uncooked ground turkey breast, skinless
1/2 cup water
1 1/2 teaspoons brown sugar
1 tablespoon apple cider vinegar

Steps:

  • In a small bowl, mix together chili powder, cumin, paprika, salt, garlic powder, onion powder, oregano and cayenne; set aside.

1 1/4 lbs lean ground turkey
2 medium zucchini, diced (2 cups)
1 large bell pepper, chopped (1 cup)
1 medium onion, chopped (1 cup)
1 cup chopped tomato
3/4 cup frozen corn, thawed
1 teaspoon olive oil, divided
3 -4 tablespoons taco seasoning
1/3 cup water
4 garlic cloves, minced
salt and pepper

Steps:

  • In a large non-stick skillet heat 1/2 tsp of oil over medium heat. Add ground turkey, salt and pepper to taste, and cook through until no longer pink. Remove to a bowl.
  • Heat remaining oil over medium-high heat. Add garlic, onions, peppers, and zucchini. Cook until vegetables begin to soften, about 10 minutes.
  • Mix in corn and cook another 5 minutes.
  • Add 2 tablespoons of seasoning and mix. Add ground turkey, water, and remaining seasoning. Mix well.
  • Add tomatoes, mix well, and cook until heated through.

1 T peanut oil or vegetable oil (or slightly more, depending on the pan you have)
3 T minced red onion or shallots
2 T minced garlic (I used minced garlic from a jar but fresh garlic would be even better)
2 T grated ginger root
1 1/2 lbs. ground turkey
4 T soy sauce (I used Tamari)
1 T Chile Garlic Sauce (or slightly more if you like spicy foods)
1 tsp. fish sauce (probably optional, although I like fish sauce!)
1 cup chopped fresh cilantro (about 1/2 large bunch)
1/3 cup chopped peanuts (optional, especially for braces wearers!)
1 large head or 2 small heads Boston Lettuce or butter lettuce, or substitute 1 head iceberg lettuce

Steps:

  • Instructions: Chop onion and set aside. Peel ginger root, then grate with the large side of a cheese grater, and chop garlic if using fresh garlic. Heat the oil in a large non-stick frying pan, add onion and saute about 2 minutes, then add garlic and ginger root and saute about one minute more. Add ground turkey to frying pan (with a bit more oil if needed) and break apart and spread out with turner, then add soy sauce, chili garlic sauce, and fish sauce. Cook until the turkey is brown and crumbling apart, and the sauce is slightly reduced, about 5 minutes. While turkey cooks, wash and chop fresh cilantro to make 1 cup. Remove the core end from lettuce, separate leaves, and wash in salad spinner and spin dry (or wash under running water and dry with paper towels.) Chop peanuts and put in small bowl to serve at the table. When turkey is done, add chopped cilantro and cook 1-2 minutes more. Serve filling and lettuce leaves in separate bowls, with chopped peanuts in another small bowl. Each person takes a lettuce leaf, fills with desired amount of turkey mixture, adds chopped peanuts, and then eats the mixture.

1/2 cup butter
2 onions
1 1/2 cups chopped celery
8 cups dry bread cubes
2 teaspoons salt
1 teaspoon pepper
1 tablespoon poultry seasoning

  • In skillet on medium heat, melt butter.
  • Mince and add 2-onions, brown lightly.
  • Add chopped celery, poultry seasoning, salt & pepper.
  • Pour mixture over bread cubes and mix well.
  • Sufficent for one 10-lb. turkey.
