- Preheat a grill to high. Combine the rice, 12/3 cups water and a pinch of salt in a medium saucepan. Bring to a boil, then reduce the heat to low and stir. Cover and cook until the liquid is absorbed and the rice is tender, about 18 minutes. Let stand, covered, 5 minutes.
- Meanwhile, put 1 bell pepper strip and 2 outer rings from 1 onion slice in a blender; set aside. Brush the remaining bell peppers and onion with 2 tablespoons olive oil; season with salt and pepper. Toss the turkey with the remaining 1 tablespoon olive oil and the fajita seasoning; season with salt and pepper.
- Grill the peppers and onion, turning halfway through, until tender and charred in spots, about 10 minutes. Remove the vegetables to a large bowl; add the lime juice. Season with salt and pepper and toss. Grill the turkey until marked and cooked through, 2 to 3 minutes per side. Remove to a cutting board; slice into strips.
- Puree the reserved bell pepper and onion with 1/4 cup water, the cilantro and 1/4 teaspoon salt. Fluff the rice with a fork and stir in the cilantro puree. Divide the rice among bowls; top with the turkey, vegetables, avocado, sour cream and pico de gallo.

- Mix chili powder, cumin, paprika, oregano, pepper, garlic powder, and onion powder together in a small bowl. Squeeze the juice of 1 lime over the turkey breast. Sprinkle seasoning mixture over the meat. Add 1 tablespoon oil. Toss to coat and set aside.
- Place bell peppers and onion into a bowl and cover with remaining oil. Toss to coat.
- Preheat an air fryer to 375 degrees F (190 degrees C) according to manufacturer's instructions.

- Preheat oven to 350 degrees. Wrap tortillas in foil and heat in the oven for 10 minutes or until hot.
- In a large skillet heat vegetable oil. Add onion and pepper saute until tender, about 5 minutes. If vegetables begin to stick, add some water.
- Add caraway seeds and paprika. Add turkey, tiny bit of white wine vinegar, cover and simmer over low heat until turkey strips are barely cooked. Season to taste with salt and pepper.
- To assemble: Spoon some paprika turkey down the center of the warmed tortilla. Top with shredded cabbage, sour cream and cucumber salsa. Roll up and serve.

- Heat the oil in large skillet over high heat. Add the onion, peppers, and garlic and cook, stirring, until slightly softened. Add the turkey, cumin, chili powder, salt, pepper, and cayenne and cook, stirring, until cooked through, about 5 minutes.
- Spoon a couple tablespoons of the turkey mixture on the inside of a lettuce leaf, top with a tablespoon of cheese and a dollop of sour cream, and roll up like a burrito. Close with toothpicks. Repeat to make 6 wraps total.

- Combine the tomatillo salsa, avocado, and cilantro in a small bowl; set aside.
- Place bread slices in a food processor; pulse 10 times or until coarse crumbs measure 1 cup.
