- Sauté the onions and garlic: Sauté the chopped onion in olive oil for 3 minutes over medium heat. Add the garlic and sauté for another 2 minutes, or until the garlic begins to brown. Remove from heat. Transfer the onions, garlic, and oil to a large bowl to cool down.
- Make the burger mix: Once the onions are cool to the touch, add the ground turkey, salt, pepper, and herbs into the bowl. Using your hands, gently mix everything until well combined. You want the herbs mixed in without overworking the meat (which would make the burgers tough).
- Form the meat into patties: Use your fingers to form a slight indentation in the middle of the patties. When burgers cook, the meat contracts from the edges. If the middle part is slightly thinner than the edges it will help the patties finish with a more even shape and less of a bulge in the middle.

- In a large skillet, saute the corn, onion and peppers in oil until crisp-tender. Stir in the lime juice, garlic, salt, cumin, chili powder and oregano; cook 1 minute longer. Transfer to a large bowl and cool slightly. Crumble turkey over mixture and mix well. Shape into four burgers. Refrigerate for at least 30 minutes. , For sauce, in a small bowl, mash avocado with the sour cream, cilantro, lime juice, garlic and salt. - For the burgers, mix the turkey, onion powder, sour cream & italian seasoning.
- Shape into four thin patties. Top two of the patties evenly with feta cheese. Top with remaining two patties & press edges to seal.
- Grill burgers until meat is done. (I use my George Foreman; it takes about 4 minutes).
- Mix herb sauce ingredients & spread generously on bottom & top of toasted buns. Slide on the burgers & enjoy!

- Heat 1 tablespoon oil in a medium saute pan over medium heat. Add shallots; cook, stirring, until they are soft and translucent, about 2 minutes. Remove from heat, and set aside.
- In a large bowl, mix together turkey, mint, parsley, 2 teaspoons of mustard, and shallots. Season with salt and pepper. Divide into four equal parts, and form into patties.
- Heat remaining tablespoon oil in a large saute pan over medium heat. Add patties, and cook until underside is brown, about 3 1/2 minutes. Turn, and continue cooking until other side is brown and center is no longer pink, about 4 minutes. Transfer to plates; serve immediately with rolls, lettuce, mustard, and tomato salad.
