Yield 6 serving

Number Of Ingredients 10

2 cups shredded cabbage and carrot coleslaw mix
3 ounces arugula leaves, stems discarded
3/4 cup alfalfa sprouts
1 tablespoon extra-virgin olive oil
1/8 teaspoon black pepper
6 soft tortillas
6 tablespoons light Boursin cheese, about 2/3 package
36 slices cucumber, about half a large cucumber
18 slices plum tomatoes, about 3 tomatoes
12 ounces turkey breast slices (or substitute)

Steps:

  • Combine first 6 ingredients in a large bowl, tossing to coat. Spread 1 tablespoon Boursin cheese over each tortilla. Top each tortilla with 6 slices cucumber, 3 slices tomato, and approximately 2 ounces turkey. Divide slaw mixture evenly among tortillas; spread on each and roll up. Cut each rolled wrap in half diagonally. Wrap each tortilla in plastic wrap.

Tips:

  • Use a variety of fresh herbs in your wraps, such as basil, cilantro, or mint, to add flavor and freshness.
  • If you are using a store-bought Boursin cheese, you can soften it up by microwaving it for a few seconds or by letting it sit at room temperature for a while.
  • To make the wraps easier to roll up, place them in the refrigerator for a few minutes before assembling.
  • If you are using a wrap that is made with whole wheat or another type of hearty bread, you may need to toast it before assembling to make it more pliable.
  • To make a vegetarian wrap, omit the turkey and add more vegetables, such as roasted red peppers, grilled zucchini, or sautéed mushrooms.

Conclusion:

Turkey Boursin wraps are a delicious and easy-to-make meal that is perfect for lunch or dinner. They are also a great way to use up leftover turkey after a holiday meal. With a variety of fillings and toppings to choose from, there are endless possibilities for creating a wrap that everyone will enjoy.
