4 slices sourdough bread
mayonnaise
1 avocado (sliced)
6 slices turkey breast
6 slices maple sugar coated bacon
2 Gouda Cheese, slices
2 Pepper jack cheese, slices

Steps:

  • Preheat the oven to 425 degrees F.
  • Place a pound of bacon on a parchment lined half sheet pan. Sprinkle generously with granulated maple sugar. Bake in the preheated oven for about 20 minutes, or until golden and crispy. Use tongs to remove the bacon from the hot sheet pan and place on paper towels on a plate.
  • Spread a thin layer of mayonnaise on both pieces of sourdough bread. Layer 3 slices of turkey breast, maple sugar coated bacon, avocado slices and one slice of each cheese.
  • Place on a preheated panini press, on medium to high heat. Press down and cook the sandwich for 3 to 4 minutes, or until the cheese is melted good and the bread is nicely browned. Repeat with the second sandwich.

4 Ciabatta rolls
1 cup shredded mozzarella cheese
¾ pound sliced turkey
1 medium tomato (sliced)
6 slices bacon (cooked and halved)
1 avocado (mashed)
Cooking spray

Steps:

  • Cut Ciabatta rolls in half. On the bottom slice put mashed avocado, tomato, 2-3 slices of turkey and 3 half slices of bacon. Add 1/4 of the cheese on top.
  • Put the top half of the roll on top and spray with cooking oil.
  • If you have a panini maker, on medium heat, place two sandwiches on the surface and shut the lid. Cook for 3-5 minutes so that the sandwich is heated, and cheese is melted. Repeat for the other two sandwiches. If you are using a frying pan, on medium heat place two sandwiches and press them with a spatula occasionally. Cook until roll browns and cheese melts. Repeat for the other two sandwiches. Serve while hot.

2 cups cherry tomatoes, halved
1/4 cup olive oil
1/2 teaspoon kosher salt
1/4 cup store-bought pesto
8 slices pullman white bread
1/4 cup marinara sauce
8 slices sliced mozzarella or provolone
8 thin slices smoked turkey
1/4 cup freshly grated Parmesan

Steps:

  • Preheat the oven to 450 degrees F.
  • Place the tomatoes on a rimmed baking sheet. Drizzle with 1 tablespoon olive oil and sprinkle with the salt. Toss well to coat. Roast the tomatoes until beginning to pop and blister, about 15 minutes.
  • Meanwhile, spread 1 tablespoon pesto on 4 slices of bread. Spread 1 tablespoon marinara on the other 4 slices. Place a slice of mozzarella on each slice of bread. Divide the turkey evenly on 4 slices of bread and top with some of the blistered tomatoes. Sprinkle each sandwich with 1 tablespoon Parmesan. Top with the remaining slices of bread and press gently.
  • Heat a large skillet over medium heat. Add half of the remaining oil to the skillet and add 2 sandwiches. Place a lid slightly smaller than the skillet on top of the sandwiches and press down. Cook until golden brown, about 3 minutes. Flip the sandwiches and repeat on the second side. Continue with the remaining sandwiches. (Alternatively, you can use a panini press.) Serve warm.

  • Preheat a panini press. (You may use a skillet or grill pan if you don't have a panini press.) In a small bowl, mash the avocado, mayonnaise, salt and pepper together until thoroughly mixed. Brush one side of each piece of bread with olive oil, and place with the olive oil side down. Top two of the bread slices with three pieces of the thin sliced cheese or two pieces of the regular, breaking as needed to evenly cover the bread. Place half of the sliced turkey, half of the spinach leaves, and half of the sliced pepper on top of each piece of cheese covered bread. Spread half of the avocado mixture on the two remaining slices of bread (on the side without the olive oil), and place on top of the turkey covered pieces. Carefully, place the sandwiches on the panini press, and cook until the bread is golden brown and crisp and the cheese has melted, about 3 to 5 minutes. Cut in half and enjoy warm.
