1 pound butternut or kabocha squash, peeled and cut into large chunks
1 teaspoon salt, plus more to taste

WINTER SQUASH PUREE WITH TAHINI

Winter Squash Puree With Tahini image

This popular appetizer from the Middle East is a sort of sweet-tasting hummus, in which winter squash substitutes for chickpeas. This recipe is an adaptation of one by the cookbook author Clifford A. Wright.

Provided by Martha Rose Shulman

Categories     side dish

Time 1h

Yield About 3 1/2 cups

Number Of Ingredients 8

2 1/2 pounds winter squash, like butternut
1/3 cup sesame tahini, stirred if the oil has separated out
2 large garlic cloves, halved, with green shoots removed
Salt to taste
2 to 4 tablespoons freshly squeezed lemon juice, to taste
1/2 teaspoon cumin seeds, lightly toasted and ground
Pomegranate seeds for garnish
extra virgin olive oil for garnish

Steps:

  • Preheat the oven to 425 degrees. Cover a baking sheet with foil and brush lightly with olive oil. If using butternut squash, cut the squash in half, scoop out the seeds and stringy membranes, and lay cut-side down on the foil-covered baking sheet. If using a thick slice of squash, scrape off any membranes. Bake 45 minutes to one hour, or until very soft. A knife should cut through it without resistance, and the skin should be wrinkled. Remove from the heat and allow to cool, then peel and transfer to a food processor fitted with the steel blade. Add the tahini, and puree until smooth and creamy.
  • Combine the garlic and 1/2 teaspoon salt in a mortar and pestle, and mash to a paste. Add to the food processor along with the lemon juice and cumin, and blend together. Add salt to taste.
  • Mound the puree in a wide bowl or on a plate. Drizzle a little olive oil over the top, and garnish with pomegranate seeds. Serve with warm pita bread.

This gratin uses the same template I use for many of my vegetable gratins. It's an easy vegetarian main dish to make, resembling a quiche but without the crust.

Provided by Martha Rose Shulman

Time 1h30m

Yield Serves 4 to 6

Number Of Ingredients 11

1 1/2 pounds winter squash of your choice

PURéED WINTER SQUASH SOUP WITH GINGER

Puréed Winter Squash Soup With Ginger image

One of the most comforting dishes you can make with winter squash is a puréed soup. I use rice to thicken this one, but you could also use a potato, or not add additional starch at all, as the squash itself has a lot of body. To enhance the flavor, this one calls for ginger, with a little lime juice and a swirl of yogurt added before serving.

Provided by Martha Rose Shulman

Categories     soups and stews, appetizer, side dish

Time 1h30m

Yield 4 to 6 servings

Number Of Ingredients 13

1 tablespoon canola or rice bran oil
1 medium onion, chopped
1 carrot, diced
2 pounds peeled winter squash, like butternut or kabocha
2 garlic cloves, minced
1 tablespoon minced ginger
6 1/2 cups water, chicken stock or vegetable stock
1/3 cup rice
Salt and freshly ground pepper
1/2 teaspoon ginger juice (made by grating a teaspoon of fresh ginger, wrapping in cheesecloth and squeezing the cheesecloth)
Pinch of freshly grated nutmeg
1/2 lime
4 to 6 tablespoons plain yogurt

Steps:

  • Heat the oil over medium heat in a large, heavy soup pot or Dutch oven and add the onion and carrot. Cook, stirring, until the vegetables are tender, about 5 minutes. Add the winter squash, garlic and minced ginger and cook, stirring, until the mixture smells fragrant, about 1 minute
  • Add the water or stock, the rice and salt to taste and bring to a boil. Reduce the heat, cover and simmer 45 minutes to 1 hour, until the squash is very tender
  • Using a hand blender, or in batches in a regular blender, purée the soup. If using a regular blender, cover the top with a towel pulled down tight, rather than airtight with the lid. Return to the pot and heat through. Stir in the ginger juice, taste and season with salt and pepper. If desired, thin out with a little more water or stock
  • Ladle the soup into bowls and add a tablespoon of yogurt (more to taste), then slowly swirl the yogurt into the soup with a spoon. Squeeze a few drops of lime juice onto each serving and sprinkle with whisper of nutmeg

SQUASH PUREE

Squash Puree image

Provided by Regina Schrambling

Categories     side dish

Time 1h30m

Yield 6 to 8 servings

Number Of Ingredients 7

1 medium butternut or turban squash
1 medium kabocha or buttercup squash
4 to 6 tablespoons butter
Salt and fresh black pepper to taste
Honey to taste (optional)
2 to 3 tablespoons chopped fresh thyme
Ground Aleppo pepper or cayenne to taste

Steps:

  • Preheat oven to 350 degrees. Halve and seed squash. Lay cut side down on baking sheet.
  • Bake until very soft, about an hour. Turn cut side up, and let sit until cool enough to handle. Scrape flesh into blender or food processor. Add butter to taste, and puree until smooth. Season with salt and pepper. Add honey to taste if desired. Stir in thyme and hot pepper. Reheat over very low heat, stirring constantly. Serve hot.

Tips:

  • Choose the right squash: For the best flavor and texture, choose a winter squash that is firm and heavy for its size. Popular choices include butternut squash, kabocha squash, and acorn squash.
  • Roast the squash: Roasting the squash brings out its natural sweetness and flavor. To roast the squash, preheat your oven to 400 degrees Fahrenheit. Cut the squash in half lengthwise and scoop out the seeds. Drizzle the squash with olive oil and season with salt and pepper. Roast the squash for 30-40 minutes, or until it is tender and caramelized.
  • Use a high-powered blender: To get a smooth and creamy puree, use a high-powered blender. A regular blender may not be strong enough to puree the squash completely.
  • Add flavorings: Once the squash is pureed, you can add flavorings to taste. Some popular additions include garlic, ginger, cumin, coriander, and paprika. You can also add a touch of honey or maple syrup for sweetness.
  • Serve immediately or store for later: Winter squash puree can be served immediately or stored in an airtight container in the refrigerator for up to 3 days. You can also freeze the puree for up to 3 months.

Conclusion:

Tunisian winter squash puree is a delicious and versatile dish that can be enjoyed in many ways. It can be served as a side dish, used as a soup base, or added to stews and casseroles. It is also a great way to use up leftover squash. With its rich flavor and creamy texture, Tunisian winter squash puree is sure to become a favorite in your kitchen.
