Time 20m

Number Of Ingredients 11

1 pound broccoli florets (from 1 1/2 pounds broccoli stalks), thinly sliced and then roughly chopped (see photos)
1/2 cup raw sunflower seeds or slivered almonds
1/2 cup finely chopped red onion
1/2 cup grated sharp cheddar cheese (optional)
1/3 cup dried cranberries or dried tart cherries, chopped
1/3 cup extra-virgin olive oil
2 tablespoons apple cider vinegar
1 tablespoon Dijon mustard
1 tablespoon honey
1 medium clove garlic, pressed or minced
1/4 teaspoon fine sea salt

Steps:

  • Toast the sunflower seeds: Pour the sunflower seeds into a medium skillet over medium heat. Cook, stirring frequently (careful, they'll burn!), until the seeds are turning golden on the sides, about 5 minutes. Pour the toasted seeds into a large serving bowl.
  • Add the chopped broccoli, onion, cheese and cranberries to the serving bowl. Set aside.
  • In a 1-cup liquid measuring cup or small bowl, combine all of the dressing ingredients (olive oil, vinegar, mustard, honey, garlic and salt). Whisk until the mixture is well blended.
  • Pour the dressing over the salad and stir until all of the broccoli is lightly coated in dressing. I highly recommend letting the salad marinate for at least 20 minutes, or even overnight in the refrigerator.
  • Divide the salad into individual bowls and serve. Leftovers will keep well for 3 to 4 days in the fridge, covered.

Tips:

  • Select the right broccoli: Choose broccoli florets that are compact, firm, and have a deep green color. Avoid florets that are yellowing or have signs of bruising or wilting.
  • Prepare the broccoli properly: Before adding the broccoli to the salad, blanch it in boiling water for 1-2 minutes. This will help retain its bright green color and crisp texture.
  • Use fresh ingredients: Fresh fruits, vegetables, and herbs will give the salad the best flavor. If possible, use organic produce to minimize the exposure to pesticides and chemicals.
  • Make sure the dressing is well-balanced: The dressing should complement the flavors of the salad ingredients. It should be tangy, slightly sweet, and have a hint of acidity. Adjust the proportions of the ingredients according to your taste preferences.
  • Don't overcrowd the salad: Use a large enough bowl or platter to accommodate all the ingredients comfortably. Overcrowding the salad will make it difficult to toss and coat the ingredients evenly with the dressing.
  • Serve the salad chilled: For the best flavor and texture, chill the salad for at least 30 minutes before serving. This will allow the flavors to meld and the salad to become more refreshing.

Conclusion:

Tropical broccoli salad is a vibrant, refreshing, and flavorful salad that is perfect for summer gatherings and potlucks. With its combination of sweet, tangy, and crunchy ingredients, this salad is sure to be a crowd-pleaser. The blanched broccoli florets add a crisp texture and a pop of color, while the pineapple, red bell pepper, and red onion provide a sweet and tangy contrast. The creamy dressing made with mayonnaise, sour cream, and honey adds a rich and tangy flavor that ties all the ingredients together. To make the salad even more special, garnish it with toasted coconut, chopped macadamia nuts, or fresh herbs like cilantro or mint.
