Categories     Chicken

Time 1h15m

Yield 4 serving(s)

Number Of Ingredients 8

4 whole chicken breasts
1/4-1/2 cup butter (or margarine)
3 tablespoons plain flour
3 tablespoons sugar
1/2 teaspoon salt (optional)
1/2 teaspoon cinnamon
1/8 teaspoon ginger
1 1/2 cups orange juice

Steps:

  • Place the 4 chicken breasts skin side up in a greased shallow "stove to table" baking dish.
  • Brush with melted butter (or margarine).
  • Bake in a preheated 375°F degrees oven for 30 minutes.
  • Meanwhile, melt 1/2 stick of butter (or margarine).
  • Combine the flour, sugar, salt, cinnamon and ginger in a small bowl, mix, and add to butter.
  • Stirring constantly, add them orange juice.
  • Cook slowly until thick and smooth.
  • Pour over chicken and bake 40 minutes longer.

Tips:

  • Use a large, deep skillet or Dutch oven for this recipe, as it will need to accommodate the chicken breasts and the sauce.
  • If you don't have a meat mallet, you can use a rolling pin or the bottom of a heavy saucepan to pound the chicken breasts thin.
  • Make sure the chicken breasts are evenly coated in flour before browning them in the skillet. This will help the sauce to adhere to the chicken.
  • Don't overcrowd the skillet when browning the chicken. Cook the chicken in batches if necessary, so that each piece has enough room to brown properly.
  • Once the chicken is browned, remove it from the skillet and set it aside. Then, add the onions and garlic to the skillet and cook until softened.
  • Add the white wine to the skillet and deglaze the pan, scraping up any browned bits from the bottom of the pan.
  • Add the chicken broth, crushed tomatoes, and seasonings to the skillet and bring to a simmer. Return the chicken breasts to the skillet and simmer for 15-20 minutes, or until the chicken is cooked through.
  • Serve the chicken with rice, pasta, or your favorite side dish.

Conclusion:

Treasure Island Chicken is a delicious and easy-to-make dish that is perfect for a weeknight meal. The chicken is tender and flavorful, and the sauce is rich and savory. This dish is sure to be a hit with your family and friends.
