CLASSIC STUFFING

Time 1h20m

Yield 8 to 10 servings

Number Of Ingredients 12

1 stick unsalted butter, plus more for the baking dish
1 onion, finely chopped
5 stalks celery, finely chopped
1 tablespoon chopped fresh sage
1 tablespoon chopped fresh thyme
Kosher salt and freshly ground pepper
3 cups low-sodium chicken or turkey broth
2 large eggs
1/2 cup chopped fresh parsley
16 cups 1/2 -inch stale country white bread cubes (about 1 3/4 pounds)
2 tablespoons fat from the turkey drippings (or butter)
1/2 teaspoon paprika

Steps:

  • Preheat the oven to 375 degrees F and butter a 3-quart baking dish. Melt the butter in a large pot or Dutch oven over medium heat. Add the onion, celery, sage and thyme; season with 1 teaspoon salt and a few grinds of pepper. Cook, stirring, until the vegetables are tender, about 5 minutes. Add the broth and bring to a boil, then remove from the heat.
  • Whisk the eggs and parsley in a large bowl. Add the bread and the vegetable-broth mixture and stir until combined. Transfer to the prepared baking dish. Drizzle with the turkey drippings (or dot with butter); sprinkle with the paprika.
  • Cover the dish with foil and bake 30 minutes, then uncover and bake until golden, 25 to 30 more minutes.

Tips:

  • Choose the right bread: Stale or day-old bread is best for stuffing as it absorbs more moisture and holds its shape better. Some popular choices include French bread, sourdough, or white bread.
  • Use a variety of ingredients: Don't limit yourself to just bread cubes. Add other ingredients like vegetables (onions, celery, carrots), herbs (sage, thyme, rosemary), nuts (pecans, walnuts, almonds), and fruits (apples, cranberries, raisins) for a more flavorful stuffing.
  • Don't overstuff the bird: Stuffing expands as it cooks, so be careful not to overfill the cavity of the bird. Aim for about 3/4 cup of stuffing per pound of turkey or chicken.
  • Cook the stuffing thoroughly: To ensure that the stuffing is safe to eat, make sure it reaches an internal temperature of 165°F (74°C). Use a meat thermometer to check the temperature in the center of the stuffing.
  • Let the stuffing rest before serving: Once the stuffing is cooked, let it rest for 10-15 minutes before serving. This allows the stuffing to set and absorb any remaining juices.

Conclusion:

Traditional holiday stuffing is a delicious and versatile dish that can be enjoyed with a variety of meals. With its rich flavors and textures, it's sure to be a hit at your next holiday gathering. Experiment with different ingredients and techniques to find your perfect stuffing recipe.
