3 Roma tomatoes, small diced
1 English cucumber (or 4 small Persian cucumbers), small diced
1/4 to 1/2 cup finely chopped onions (red or yellow onions will work here)
1/2 green bell pepper (optional), chopped into small pieces
2 to 3 tbsp EACH chopped fresh parsley, cilantro, and dill
1 tbsp dried mint (or 1/2 cup chopped fresh mint)
Salt and pepper
Sumac, to taste (optional)
Juice of 2 large limes (4 tbsp)
3 tbsp extra virgin olive oil (I used Early Harvest Greek extra virgin olive oil)

Steps:

  • Place diced tomatoes for a few minutes in a colander to release excess liquid. (I don't remove the seeds, so this step helps.)
  • In a large bowl, place the diced tomatoes, cucumbers, onions, and bell peppers.

1 red onion, halved and thinly sliced
1 bunch of flat leaf parsley, roughly chopped
juice of 1 lemon
½ teaspoon sea salt
½ tsp white sugar (optional)
10 ml/2 teaspoon ground sumac
15ml/1 tablespoon extra virgin olive oil
½ teaspoon paprika flakes

2 to 3 large green tomatoes, sliced 1/4 to 3/8-inch thick
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup plain white cornmeal
1/2 cup all-purpose flour
2 teaspoons Creole seasoning (recommended: Konriko)
Baby arugula
Jumbo lump crabmeat
4 tablespoons champagne vinegar
2 teaspoons ground sumac, plus more for serving
1/8 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
6 tablespoons extra-virgin olive oil

Steps:

  • Preheat approximately 2-inches oil in large, heavy skillet to 325 degrees F. An electric- fryer can be used.
  • Sprinkle both sides of tomatoes with salt and pepper. Combine the cornmeal, flour and Creole seasoning in a shallow dish. Dredge the tomatoes in the cornmeal mixture and fry until golden brown. Remove from the oil and drain on paper towels.

If there are several kinds of basil or mint, grab them. This recipe is less a precise formulation than a structure for a dish that you will make your own. If you're tight on time, grill the chicken ahead, even the day before (and, if you can't grill, poach the chicken in chicken stock with aromatic herbs). When it's time, assemble the ingredients and serve with grilled bread or a bowl of rice.

1 small bunch mint, leaves only

2 to 3 large ripe tomatoes, cut into 1-inch pieces
3/4 teaspoon coriander seeds
3/4 teaspoon fennel seeds
Juice and zest of 2 lemons, plus more to taste
1/4 cup extra-virgin olive oil, plus more to taste
1 tablespoon spicy chile crisp, or other chile oil (see note)
1/2 teaspoon ground cardamom
1/2 teaspoon shallot or onion powder
1 tablespoon sumac, plus more to taste

Steps:

  • Lightly rub the chicken with olive oil, and season with salt and fresh-ground pepper. Heat a grill to roughly 350 degrees (low heat) and be sure your grates are brushed clean. Add chicken skin-side down and cover the grill.
