medium head cabbage (coarsely chopped, 1-2 lbs)
6 tbs extra virgin olive oil
1 onion (sliced)
4 cloves garlic (crushed)
2 plum tomatoes (chopped)
2 scallions (chopped)
Salt (to taste)
Ground coriander (optional)
