SUN-DRIED TOMATO BOW TIE SALAD

Sun-Dried Tomato Bow Tie Salad image

A refreshing pasta salad that can also be the main dish. I created this salad once when I needed a potluck dish and was short on time, energy and wanted to use ingredients I had on hand. It was a big hit and the recipe was much requested.

Time 45m

Yield 1 large salad

Number Of Ingredients 7

1 (16 ounce) package bow tie pasta
1/3 cup red onion, thinly sliced
1 (4 ounce) can sliced ripe olives
1 -2 cup cubed cooked chicken breast
Kraft sun-dried tomato salad dressing, 1 bottle
1/2 cup fresh parmesan cheese, finely shredded or grated
salt and pepper

Steps:

  • Cook pasta ala dente and drain.
  • Add remaining ingredients and stir gently.
  • Chill.
  • NOTE: I have also made this salad using diced pepperoni (about 1/2 cup) in place of the chicken.
  • If you use the full 2 cups of chicken it is a great main dish salad, or if you prefer you can omit meat altogether and have it as a side salad.
  • If your store carries two sizes of the bottled dressing, use the bigger size.
  • I don't have any on hand at the moment to check the ounces.
  • Sometimes I also add diced green pepper.

Time 30m

Yield 10 cups, 10-12 serving(s)

Number Of Ingredients 8

16 ounces bow tie pasta
1 (3/4 ounce) envelope Good Seasonings Italian salad dressing mix
1/4 cup tarragon vinegar
2 tablespoons water
2/3 cup oil
28 ounces diced tomatoes with juice
4 large scallions, sliced thin
1/2 cup fresh parmesan cheese, grated

Steps:

  • Boil pasta in salted water until al dente. Drain.
  • Combine dressing mix, vinegar, water and oil.
  • Add tomatoes, scallions and cheese.
  • Pour mix over cooled pasta.
  • Chill at least 1 hour.

Tips:

  • Use ripe, in-season tomatoes. This will ensure the best flavor and texture for your salad.
  • Choose a variety of tomatoes. This will add color and flavor to your salad. Some good options include cherry tomatoes, heirloom tomatoes, and Roma tomatoes.
  • Cut the tomatoes into bite-sized pieces. This will make them easier to eat and will help them absorb the dressing.
  • Use a light and flavorful dressing. A simple vinaigrette or lemon-herb dressing is a good option. You can also use a store-bought dressing, but be sure to choose one that is not too heavy or creamy.
  • Add other ingredients to your salad. Some good options include fresh herbs, crumbled cheese, nuts, and seeds.
  • Serve the salad immediately. This will prevent the tomatoes from becoming watery.

Conclusion:

Tomato bow-tie salad is a refreshing and flavorful salad that is perfect for summer. It is easy to make and can be customized to your liking. With a few simple ingredients, you can create a delicious and healthy salad that will please everyone at your table.
