Time 30m

Yield 4 serving(s)

Number Of Ingredients 7

1 tablespoon olive oil
2 garlic cloves, minced
2 (14 1/2 ounce) cans chicken broth
2 (14 1/2 ounce) cans diced tomatoes
1 (9 ounce) package cheese tortellini
1 cup fresh basil, chopped
salt and pepper

Steps:

  • Over medium heat cook garlic in oil until fragrant.
  • Stir in broth and tomatoes; bring to a boil.
  • Add tortellini, reduce heat and simmer for 10 minutes.
  • Stir in basil, salt and pepper.
  • Simmer for 3 minutes longer.

Tips:

  • Choose ripe, flavorful tomatoes. This will ensure that your soup has the best possible flavor. Look for tomatoes that are deep red and free of blemishes.
  • Roast the tomatoes before adding them to the soup. This will help to concentrate their flavor and give the soup a richer, more complex taste. Roasting the tomatoes also helps to remove some of their water content, which will result in a thicker soup.
  • Use fresh basil. Fresh basil has a much more intense flavor than dried basil, so it's worth the extra effort to use it in this soup. If you don't have fresh basil on hand, you can use 1 teaspoon of dried basil, but the soup will not have the same flavor.
  • Don't be afraid to experiment with different types of tortellini. There are many different types of tortellini available, so you can choose one that you think your family will enjoy. Some popular options include cheese tortellini, meat tortellini, and vegetable tortellini.
  • Serve the soup with a side of crusty bread or crackers. This will help to soak up the delicious broth.

Conclusion:

Tomato basil soup with tortellini is a delicious and easy-to-make soup that is perfect for a weeknight meal. It's also a great way to use up leftover tomatoes. With its rich, flavorful broth, tender tortellini, and fresh basil, this soup is sure to be a hit with your family and friends.
