My Husband had ordered A soup like this at a Thai place. It was so good. So I had to find a way to make it or something like it. This recipe is just as good as the one my husband had at the restaurant. Made it for my church fellowship lunch everyone loved it and wanted the recipe for it.

2 Tbsp grated fresh ginger
2 Tbsp peanut oil
1 tsp crushed red pepper
6 c reduced-sodium chicken broth
1/2 c uncooked jasmine rice
5 fresh kaffir lime leaves
1 stalk(s) fresh lemongrass (white part only)
3 c coarsely shredded cooked chicken
1 to 2 can(s) unsweetened coconut milk
1 c thinly sliced fresh button mushrooms
1 c red sweet pepper strips(1 medium pepper)
1/2 c chopped onion(1 medium onion)
1/4 c nam pla (thai fish sauce)
2 Tbsp snipped fresh cliantro
2 to 3 Tbsp lime juice
1/4 c green onions (optional)
handful sprig(s) cilantro sprigs (optional)

Steps:

  • 1. In a large saucepan combine ginger,oil, and crushed red pepper. Cook and stir over medium heat for 2 minutes. Add broth; bring to a boiling. Stir in rice; reduce heat. Simmer,covered, for 15 to 20 minutes or until rice is tender.
  • 2. Tear lime leaves in several places from edges toward the centers. Cut lemongrass into 1 inch pieces; bruise with the flat side of a knife. Stir lime leaves, lemongrass, chicken, coconut milk, mushrooms, sweet pepper, chopped onion, nam pla, and snipped cilantro into broth mixture. Bring to a boiling; reduce heat. simmer, uncovered , for 5 minutes.
  • 3. Remove all Lime leaves and lemongrass from soup(not edible). Stir in lime juice. If desired each serving with green onions and cilantro sprigs; serve with lime wedges.

I tried many ways of making this delicious coconut / lemongrass soup, but in the end, I had two versions which I really liked and this was the favorite of the two. I grow most of the ingredients fresh in my yard which definitely adds to the great flavor. Most Thai markets also have these ingredients fresh too. Frozen Lemon Grass, kaffir lime leaves and galangal ginger taste good too if fresh cannot be found. I'd use frozen over freeze dried anytime. Also the ground lemon grass that comes in a tube in some grocery stores is not recommended for this recipe.

1 (32 ounce) box chicken stock, plus
1 (14 ounce) can chicken stock
2 whole stems lemongrass (cut into 1 inch pieces)
2 inches galangal ginger
3 kaffir lime leaves (or leaves from a citrus tree)
3/4 lb chicken (sliced into bite sized pieces)
1 (10 ounce) can straw mushrooms, or
1 (10 ounce) package fresh straw mushrooms
0.5 (8 ounce) package common mushrooms (Agaricus bisporus)
1 (8 ounce) can water chestnuts
1 teaspoon salt
4 tablespoons lime juice (or more to taste)
3 tablespoons fish sauce (or more to taste)
1 tablespoon sugar
3 (14 ounce) cans coconut milk
1/3-1/2 bunch cilantro
1 -2 green onion
1 tomatoes (halved and then quartered)
1/2 cup fresh coconut meat (from a young, green coconut)
2 -3 whole bruised Thai chiles
2 teaspoons red curry paste (more if you like it hot)

Steps:

  • Place the chicken stock (or broth) in a stockpot, add lemon grass, ginger and lime leaves. I recommend slicing the lime leaves along the veins almost to the midrib to allow for more flavor release. These kaffir lime leaves are used in the same fashion we season soups with bay leaves. Bring the broth to a slow boil over medium heat.
  • Add sliced chicken, mushrooms, water chestnuts, salt, lime juice, fish sauce and sugar, reserving more lime juice and fish sauce to add later to taste.
  • Cook slowly, uncovered for 10 - 15 minutes, then add coconut milk, cilantro, green onion, tomato, fresh coconut meat, bruised chilies, and red curry paste. Stirring frequently, bring almost to a boil, then remove from heat and serve if you are happy with the flavor of lime juice to fish sauce in conjunction with the other ingredients. Cook this soup gently to prevent the coconut milk from separating.

2 tablespoons vegetable oil
2 teaspoons peeled and grated fresh ginger
1 stalk lemongrass, split in half and sliced
2 teaspoons red curry paste
4 cups chicken broth
5 keffir fresh lime leaves, hand torn
2 small red chilies, cut thinly crosswise (remove seeds if you want less heat)
3 tablespoons fish sauce
1 tablespoon light brown sugar
3 (13 1/2 ounce) cans coconut milk
1/2 lb fresh shiitake mushrooms, sliced or 1/2 lb straw mushroom, trimmed but left whole
1 1/4 lbs chicken thighs, boned, skinned and thinly sliced
2 tablespoons fresh lime juice
1/4 cup chopped fresh cilantro
8 lime wedges
2 teaspoons chili oil, to drizzle before serving (optional)

Steps:

  • Heat the oil in a large pot over medium heat. Add the ginger, lemongrass, and curry paste and stir and cook in the heated oil for 1 minute. Slowly pour the chicken broth over the mixture, stirring continually. Add the lime leaves and chillies and simmer gently for 10 minutes to infuse the broth.
  • After 10 minutes, stir in the fish sauce and brown sugar; simmer for 15 minutes. Stir in the coconut milk and mushrooms; cook and stir until the mushrooms are tender, about 5 minutes. Add the chicken and cook until no longer translucent, about 2-5 minutes. Watch carefully, do not overcook. Remove from heat and stir in the lime juice. Taste and adjust seasoning if necessary. To serve, drizzle with a little chilli oil and/or garnish with cilantro and lime wedges.

¼ cup sweet red chile sauce
3 tablespoons lime juice
2 tablespoons fish sauce
2 tablespoons brown sugar

1 ½ pounds skinless, boneless chicken breast halves - cut into strips

Steps:

¾ pound boneless, skinless chicken meat
3 tablespoons vegetable oil
2 (14 ounce) cans coconut milk
2 cups water
2 tablespoons minced fresh ginger root
4 tablespoons fish sauce
