Good Food reader, Julie Frankland, shares a recipe from her kitchen, inspired by a Japanese dish called Ganmodoki

Provided by Good Food team

Categories     Dinner, Lunch, Main course, Snack, Supper

Time 25m

Yield Makes 8

Number Of Ingredients 8

1 carrot , grated
bunch spring onions , sliced, plus extra strips to serve
1 garlic clove , crushed
3cm/1ΒΌ inch piece ginger , grated
400g block firm tofu , drained and crumbled
2 eggs , lightly beaten
2 tbsp each sesame and vegetable oil
sweet chilli sauce , to serve

Steps:

  • Combine all the ingredients except the oils in a large bowl with some seasoning and mix well. Heat both the oils in a frying pan. Grease an 8cm metal pastry ring or cookie cutter and place in the pan. When hot, pour 5 tbsp of the batter in and turn the heat down to medium.
  • Cook 4-5 mins until golden, then take off the ring (be careful, as it may be hot), flip the pattie and cook the other side. Do this in batches, keeping finished patties warm in a low oven. Serve with the chilli sauce and extra spring onions, if you like.

Tips:

  • Choose the right tofu: Use extra-firm or super-firm tofu for a better texture in your pastry.
  • Press the tofu properly: Pressing the tofu removes excess moisture, resulting in a firmer, less crumbly pastry.
  • Use a food processor or blender: These appliances make it easier to achieve a smooth, even texture for your pastry.
  • Don't overwork the dough: Overworking the dough can make it tough and crumbly. Mix just until the ingredients are well combined.
  • Chill the dough before baking: Chilling the dough helps it to firm up and makes it easier to work with.
  • Bake the pastry until it is golden brown: This ensures that the pastry is cooked through and has a slightly crispy texture.

Conclusion:

Tofu pastry is a versatile and delicious alternative to traditional wheat-based pastry. It is easy to make, can be used in a variety of recipes, and is a good source of protein and fiber. With its unique flavor and texture, tofu pastry is sure to become a favorite in your kitchen.
