Pastry for single-crust pie (9 inches)
2 packages (12.3 ounces each) silken firm tofu
1/4 cup honey
2 teaspoons vanilla extract
1/2 teaspoon almond extract
2-1/2 cups semisweet chocolate chips, melted
Whipped cream and sliced fresh strawberries, optional

Steps:

  • Roll out pastry to fit a 9-in. pie plate. Transfer pastry to pie plate. Trim pastry to 1/2 in. beyond edge of plate; flute edges. Line unpricked pastry with a double thickness of heavy-duty foil. Fill with dried beans, uncooked rice or pie weights., Bake at 450° for 8 minutes. Remove foil and weights; bake 5-7 minutes longer or until golden brown. Cool on a wire rack., In a blender or food processor, combine the tofu, honey and extracts. Cover and process until smooth. Add melted chocolate; cover and process until blended., Transfer to pie shell. Cover and refrigerate for at least 2 hours. Garnish with whipped cream and strawberries if desired.

1 cup white sugar
1 tablespoon vanilla extract
½ teaspoon cider vinegar
1 (9 inch) prepared graham cracker crust

  • Preheat oven to 375 degrees F (190 degrees C).

1 (12-ounce) package semisweet chocolate chips
1 (12-ounce) package silken firm tofu
Splash vanilla extract
2 egg whites*
Prepared chocolate cookie crust (recommended: Oreo) or graham cracker crust
Whipped cream or raspberry sauce, for serving.

Steps:

  • Melt the chocolate over low heat, stirring often. Blend tofu in a food processor. Add the vanilla and melted chocolate and blend again, stopping once or twice to scrape down the sides of a bowl with a rubber spatula.
  • Beat the egg whites to soft peaks. Place the tofu chocolate mixture into a bowl and slowly fold in the egg whites with a rubber spatula. Scoop the filling into the pie crust and refrigerate for several hours before serving.
  • Serve with a bit of whipped cream or raspberry sauce (or simply thin raspberry jam with a bit of water and lemon juice). Don't say tofu, say terrific.

10 ounces semi-sweet chocolate chips (See Note 1)
2 (10 1/2 ounce) packages silken tofu or 2 (10 1/2 ounce) packages silken firm tofu (See Note 2)
3 tablespoons maple syrup (or other liquid sweetener of your choice; can use less, to taste)

Steps:

  • Note 1: vegans: use barley-malt-sweetened nondairy chocolate chips or use a really good vegan chocolate bar (like Rapunzel Organic Bittersweet) instead of some or all of the chips.
  • Note 2: I use the Mori Nu brand of tofu for this (since it's from their box), but you can use any brand, just make sure it is the"silken" type and not regular.
  • Melt choc chips in a double boiler over low heat or in microwave (if you know what you're doing).
  • Put tofu, sweetener, and melted chocolate into a blender and process until very smooth.
  • Pour into a serving bowl or bowls and refrigerate, covered, for at least a couple of hours.
  • Cover this well, because it will pick up EVERY odor in your refrigerator otherwise.

1 ½ (4.8 ounce) packages graham crackers, broken into small pieces
½ cup almonds
3 cups semisweet chocolate chips
2 (12 ounce) packages silken tofu, drained
2 tablespoons vanilla extract

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C).
  • Place the butter, graham crackers, and almonds into a food processor. Cover, and pulse until the mixture resembles a coarse crumb. Transfer the crumbs to a 9-inch pie plate, and press into the bottom of the plate to form a crust. Wash and dry the bowl of the food processor; set aside.
  • Bake in the preheated oven until lightly golden, about 15 minutes. Remove from oven, and cool for 15 minutes.
  • Meanwhile, melt the chocolate in the top of a double boiler over just-barely simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching. Place the chocolate, tofu, and vanilla extract into the cleaned food processor. Blend until smooth, scraping down the sides several times. Pour chocolate mixture into the prepared crust. Chill for 4 hours before serving.

2 packages firm silken tofu
3/4 cup honey
3 teaspoons vanilla
1/2 cup cocoa powder
chocolate graham wafer pie crust

Steps:

  • Drain as much liquid as possible from tofu by putting paper towels on top& bottom of tofu, wrapping a clean dish towel around that, and setting a weight on top of it[a large pan usually works well].
  • Drain for 30 minutes.
  • In food processor[or blender], whip tofu until smooth, for several minutes.
  • Add honey, cocoa powder,& vanilla.
  • Blend for at least 1 minute.
  • Be sure to use spatula on sides.
  • Pour into pie crust& chill for 2 hours.

5 tablespoons unsweetened cocoa powder
½ cup sugar
1 teaspoon vanilla
2 tablespoons coffee flavored liqueur

5 teaspoons cider vinegar
¼ cup mini chocolate chips
1 (9 inch) unbaked pie crust

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

With the name of "tofucheesecake" I figured I would post the recipe that inspired me to take that title. It's not called a cheesecake, but it has that consistency. Depending on the size of your pie pan, you may or may not need the extra crust. The last time I made this, I came out with enough filling for 1 3/4 crusts. You can also pour it into cups and make puddings. I got the recipe from a tofu cooking class, but I have seen similar variations elsewhere. Cook time includes setting time in refrigerator.

1 -2 graham cracker pie crust (or equivalent crumbs)
1/4 cup butter, melted
2 tablespoons sugar or 2 tablespoons Splenda sugar substitute
2 (12 ounce) cartons soft silken tofu (the softest kind, about 24 oz, I use Mori Nu)
12 ounces semi-sweet chocolate chips
3 tablespoons honey
vanilla (optional)
chocolate flavoring
raspberry flavoring (the kind you put in coffee, to taste, if you would like)

Steps:

  • Make crust if needed by crushing graham crackers until fine and adding sugar and butter.
  • Press into a 9" pie pan and bake at 350F for 10 minutes. (This makes 1 crust).
  • Process tofu in blender or cuisinart until completely smooth (if you use a blender this may need to be done in more than one batch).

1 cup all-purpose flour, about
1/4 teaspoon salt
3 tablespoons cold butter or 3 tablespoons margarine, cut into chunks
3 tablespoons cold solid shortening, cut into chunks
1 lb firm silken tofu
1 cup melted semisweet chocolate
3/4 cup peanut butter
1/2 cup toasted crushed peanuts
1/2 cup caramel
2 tablespoons cream

Steps:

  • For crust: In a food processor with metal blade mix 1 cup flour and the salt.
  • Add butter and shortening.
  • Pulse till pea size.
  • Sprinkle 2 tablespoons water over flour mixture.
  • Pulse just until evenly moistened and can be gently squeeze dough into a ball.
  • Lay dough on a lightly floured surface.
  • Coat a rolling pin with flour.
  • Roll firmly but gently in short strokes from center of dough outward to form an 11-inch wide round.
  • Occasionally lift dough or turn over, dusting flour beneath to prevent sticking.
  • Fold the dough round in half, lift it gently without stretching, and lay the folded edge across the middle of a 9-inch pie pan.
  • Unfold and ease dough into pan without stretching.
  • Trim dough edge evenly 3/4 inch beyond pan rim.
  • Fold dough edge under itself,and crimp pressing down on dough rim with your thumb and first finger to make an indentation all around edge of crust.
  • Pierce the bottom of the crust with a fork bake in a 400°F oven until nicely browned.
  • Cool.
  • Sprinkle with 1/4 cup toasted peanuts.
  • Set aside.
  • For filling: In a food processor, blend the tofu, chocolate and peanut butter.
  • Pour the tofu mixture into the prepared crust.
  • Chill for at least 2 hours up to 24 hours.
  • Before serving: Melt in microwave oven the caramels& cream then drizzle on chilled pie.
  • Then sprinkle 1/4 cup toasted peanuts around edge of pie.

Tips:

  • For the best results, use silken tofu that has been drained and pressed to remove excess water.
  • To make the pie crust, use a food processor to grind the oats into a fine flour. If you don't have a food processor, you can use a blender or a rolling pin to crush the oats.
  • Be sure to melt the chocolate and coconut oil together slowly over low heat, stirring constantly. If you heat the chocolate too quickly, it will seize and become grainy.
  • When adding the tofu to the chocolate mixture, be sure to blend it until it is completely smooth. Any lumps of tofu will make the pie grainy.
  • Pour the pie filling into the prepared pie crust and refrigerate for at least 4 hours, or overnight, before serving.
  • Serve the pie with fresh berries, whipped cream, or ice cream.
