Toasted Coconut Chocolate Chip Cookies image

I've made this recipe from Ladies Home Journal for the past 15 years. My original copy is half burned (a little problem toasting the coconut) so I thought I better get this published. The cookie dough is so delicious; tastes like a candy bar. The toasted coconut takes it to new heights!

Tips:

  • Use room temperature ingredients. This will help the cookies spread evenly and bake more consistently.
  • Cream the butter and sugar together until light and fluffy. This will help incorporate air into the cookies, making them lighter and chewier.
  • Don't overmix the dough. Overmixing can make the cookies tough.
  • Chill the dough for at least 30 minutes before baking. This will help the cookies hold their shape and prevent them from spreading too much.
  • Bake the cookies until they are just set. Overbaking will make them dry and crumbly.
