**Tinga: A Flavorful Mexican Dish with Variations for Every Palate**
Tinga, a delectable Mexican dish, tantalizes taste buds with its complex flavors and vibrant colors. Originating in the central state of Puebla, tinga has become a beloved dish across Mexico and beyond. Its versatility allows for a myriad of interpretations, each region adding its own unique touch to the recipe. This article presents a culinary journey through the realm of tinga, showcasing three distinct variations that capture the essence of this beloved dish.
First, we delve into the traditional tinga de pollo, a classic rendition featuring tender chicken simmered in a rich tomato-chipotle sauce. This recipe embodies the rustic charm of Mexican home cooking, with its smoky and slightly spicy flavors. Next, we explore tinga de res, a variation that swaps out chicken for beef, resulting in a more robust and savory dish. The slow-cooked beef absorbs the vibrant flavors of the tomato-chipotle sauce, creating a hearty and satisfying meal.
Last but not least, we present a vegetarian twist on tinga with tinga de hongos, a delightful symphony of flavors featuring an array of mushrooms. This meatless version captures the essence of tinga while showcasing the versatility of this iconic dish. Whether you prefer the classic chicken tinga, the hearty beef tinga, or the savory mushroom tinga, this article has a recipe to satisfy every craving.

CHEF JOHN'S CHICKEN TINGA
When I'm at a taqueria, it's hard to decide between the chicken with green sauce or with red sauce. Here's my version of the red sauce. It's great on a crispy tortilla and topped with the usual suspects.

TINGA DE POLLO (CHICKEN WITH CHIPOTLE AND ONIONS)
Guadalupe Moreno runs Mi Morena, a tacos de guisado business in the Bay Area, where a number of saucy fillings and toppings are used to mix and match tacos to order. She shared her recipe for tinga de pollo with Leticia Landa and Caleb Zigas for their cookbook "We Are La Cocina." Ms. Moreno's tinga de pollo works perfectly in tacos and also on top of crisp tostadas with lettuce and salsa, inside quesadillas or as a tamal filling. It's a great way to use up any leftover cooked chicken (just skip straight to step 2), whether pulled from a roast or poached bird, or grocery-store rotisserie.

Steps:
- Cook the chicken: Combine the chicken, onion, celery and carrots in a large saucepan and add 4 cups cold water. Add more water if needed to cover the solids. Bring to a boil over high heat, then reduce the heat to maintain a simmer. Cook until the chicken is very tender and falling off the bones, about 45 minutes.
- Transfer the chicken to a bowl. When cool enough to handle, discard the skin and bones, then pull the meat into very fine shreds. Strain the broth and reserve for Tamales de Pollo or another use.
- While the chicken cooks, make the sauce: Heat the oil in a large saucepan over medium-high heat. Add the onion and cook, stirring occasionally, until soft and translucent, about 5 minutes. While the onion cooks, puree the tomatoes, chipotles and garlic in a blender until smooth. Add to the pan and bring to a boil. Reduce the heat to simmer. Cook, stirring occasionally, until the sauce thickens, 2 to 3 minutes.
- Add the chicken to the sauce and gently fold to evenly coat and heat through. Season to taste with salt and pepper and serve immediately or cool to room temperature to use a filling for Tamales de Pollo.

CHICKEN TINGA TOSTADOS
This authentic Mexican recipe I picked up while living in Mexico. It has a spicy, smoky flavor from chipotle peppers. It is perfect for a buffet where people can serve themselves and even better heated up as leftovers the next day! If this is too spicy for you, try using less chipotle peppers.

Steps:
- Combine chicken with water, half of onion, whole garlic clove, bay leaf, and 1 teaspoon salt in a medium (3- to 4- quart) saucepan. Bring to a boil, then reduce heat and cook at a bare simmer for 10 minutes. Cover and let sit until chicken is just cooked through (165°F on an instant-read thermometer), about 15 minutes. Transfer chicken to a cutting board. Strain and reserve 1 cup of broth for tinga and save remaining broth for another use.
- When chicken is cool enough to handle, shred it, discarding skin and bones.
- Cut an X in the bottom of each tomato. Blanch in a saucepan of boiling water for 1 minute. Transfer tomatoes to a bowl of ice water. Peel and core, then finely chop.
- Cook remaining chopped onion with 1/4 teaspoon salt in oil in a 12-inch heavy skillet over medium heat, stirring occasionally, until softened, about 5 minutes. Stir in garlic and crumble in oregano, then cook, stirring, until fragrant, 1 minute. Add tomato and continue to cook, stirring occasionally, until thickened but still saucy, 10 to 15 minutes.
- Preheat oven to 350°F (a toaster oven works fine, too).
- Add chicken, 3/4 cup of reserved cooking liquid, and chipotle to the tomato sauce and simmer, stirring occasionally, until thickened and excess liquid is almost completely evaporated, 10 to 15 minutes. Cool to warm and moisten with additional cooking liquid if mixture looks dry.
- Meanwhile, using cookie cutter, cut out a circle from each tortilla, stacking 12 in each of two folded sheets of foil (reserve remaining tortilla scraps for chilaquiles). Wrap each stack in foil and warm through in oven, 5 to 10 minutes.
- To serve, arrange warm tortillas on a heated platter and divide chicken mixture among them (about 1 rounded tablespoon per tortilla), spooning it onto center of each tortilla. Sprinkle with cheese and top each taco with a cilantro sprig.

- Heat a griddle or cast-iron skillet over high heat until a drop of water sizzles on contact. Roast the tomatoes, turning several times, until blackened on all sides. Let sit until cool enough to touch. Working over a bowl to catch any juices, peel off the black skin. Seed the tomatoes, chop the flesh roughly, and set aside. In a blender or food processor fitted with the steel blade, puree the chipotle chiles and the sauce that clings to them with the water or stock. Set aside. SPICY SHREDDED CHICKEN TINGA
This spicy and sweet shredded chicken can be used in many different Mexican dishes. I love it on crunchy tostadas. This is a great recipe to make ahead and freeze for a quick dinner option during the week. Level of spiciness will depend on the salsa brand you use. You can use straight chipotle peppers from the can, but be prepared for blazing hotness! If you can't blend the mixture, that's OK; just chop everything up very small, it will break down a little more once you cook it. Serve on tortillas or chips. Garnish with lettuce, tomato, onion, sour cream, or guacamole.

Steps:
- In large sauce pan wilt the 5-6 sliced onions in the oil until very soft, but not brown.
- About 10-15 minutes meanwhile in blender add as many chipotle chiles as you dare (when making it for my husband I add the whole can) and add lots of the adobo from the can as it adds tons of flavor but almost no heat.
- To the chiles add the tomatoes, chopped onion, garlic, bullion, and salt blend until smooth.
- Add puree to onions and cook about 5 minutes.
- Add shredded meat (to make the shredded meat I boil a chuck roast, or pork roast for several hours in salted water until very tender and then shred-the chicken I just boil until cooked through and no longer pink, if cooked too long it will become mushy) stir entire mixture and cook until warmed through 1-2 minutes.
- To eat take a tostada and spread with sour cream.
- Sprinkle on some parmesan cheese if desired.
- Add shredded lettuce and top with tinga mixture.
- Bite!
- Serve with several napkins on the side.
SMOKY PORK TINGA TACOS (SLOW COOKER)
This is a Rick Bayless recipe, from his book Mexican Everyday. I am posting as it is in his cookbook. Note, when I made this, I used the full 4 chilies in adobo sauce and although my husband and I REALLY seriously like heat in our food, this was almost too hot. So if you are sensitive, you may want to cut back on those. We really enjoyed this recipe, I hope someone will try it and hopefully enjoy it as well. This makes enough for 12 people to have 2 each.

Steps:
- Spread potatoes over bottom of a slow cooker and top with pork. In a large bowl, mix the undrained tomatoes with the chipotles, chipotle canning sauce, worcestershire, oregano, garlic, optional onion and 1 1/2 tsp salt. Pour the mixture evenly over the meat and potatoes. Cover and slow cook on high for 6 hours.
- When you are ready to eat, fry the optional chorizo in a medium skillet until thoroughly done, about 4 minutes. Uncover the pork tinga and spoon off any fat that has accumulated on top. Sprinkle on the chorizo, then stir everything together, breaking the pork into smaller pieces (sized for wrapping in tortilla's).
- If there is a lot of liquid, tip it off and boil it rapidly until reduced and syrupy, then stir it back into the meat mixture.
- Taste & season with additional salt if you think it needs it.
- Serve with warm tortillas, crumbled fresh cheese & avocado.
- Note: If you do not have a slow cooker, it says you can do this in a medium sized heavy pot. Lay pork in the pot, top with potatoes, cover with tomato mixture, set lid in place and braise in a 300 degree oven for 2 to 2 1/2 hours until pork is completely tender.
Tips:
- Choose the Right Meat: Use high-quality chicken or pork shoulder for the best flavor and texture.
- Sear the Meat: Searing the meat before simmering adds depth of flavor.
- Use Authentic Mexican Spices: Achiote paste, cumin, oregano, and chipotle peppers are essential for authentic tinga flavor.
- Simmer in a Flavorful Broth: The combination of chicken or pork broth, tomatoes, and spices creates a delicious and flavorful broth.
- Shred the Meat: Shred the meat into small pieces for a tender and juicy texture.
- Serve with Traditional Accompaniments: Serve tinga with warm tortillas, rice, beans, and your favorite toppings like guacamole, salsa, and sour cream.
Conclusion:
Tinga is a versatile and flavorful Mexican dish that can be enjoyed in various ways and is sure to impress your family and friends. Whether you're making chicken or pork tinga, following these tips and using authentic ingredients will guarantee a delicious and authentic Mexican meal. So next time you're looking for a flavorful and easy-to-make dish, give tinga a try.
