Time 35m

Yield 4 serving(s)

Number Of Ingredients 12

1 cup quartered cherry tomatoes or 1 cup grape tomatoes
1 cup diced summer squash
1 cup thinly sliced red onion
12 green beans, trimmed and cut into 1-inch pieces
1/4 cup pitted and coarsely chopped black olives
2 tablespoons lemon juice
1 tablespoon chopped fresh oregano
1 tablespoon extra virgin olive oil
1 teaspoon capers, rinsed
1/2 teaspoon salt, divided
1/2 teaspoon fresh ground pepper, divided
1 lb tilapia fillet, cut into 4 equal portions

Steps:

  • Preheat grill to medium. (No grill? See Oven Variation, below.)
  • Combine tomatoes, squash, onion, green beans, olives, lemon juice, oregano, oil, capers, 1/4 teaspoon salt and 1/4 teaspoon pepper in a large bowl.
  • To make a packet, lay two 20-inch sheets of foil on top of each other (the double layers will help protect the contents from burning); generously coat the top piece with cooking spray. Place one portion of tilapia in the center of the foil. Sprinkle with some of the remaining 1/4 teaspoon salt and pepper, then top with about 3/4 cup of the vegetable mixture.
  • Bring the short ends of the foil together, leaving enough room in the packet for steam to gather and cook the food. Fold the foil over and pinch to seal. Pinch seams together along the sides. Make sure all the seams are tightly sealed to keep steam from escaping. Repeat with more foil, cooking spray and the remaining fish, salt, pepper and vegetables.
  • Grill the packets until the fish is cooked through and the vegetables are just tender, about 5 minutes. To serve, carefully open both ends of the packets and allow the steam to escape. Use a spatula to slide the contents onto plates.
  • Oven variation: Preheat oven to 425°F Place green beans in a microwavable bowl with 1 tablespoon water. Cover and microwave on High until the beans are just beginning to cook, about 30 seconds. Drain and add to the other vegetables (Step 2). Assemble packets (Steps 3-4). Bake the packets directly on an oven rack until the tilapia is cooked through and the vegetables are just tender, about 20 minutes.

Categories     Fish & Seafood

Time 30m

Number Of Ingredients 13

4 (4-6 oz.) tilapia fillets
1 zucchini, sliced
1 yellow squash, sliced
½ lb. asparagus, trimmed and cut into thirds
1 ¼ teaspoon Kosher salt
¼ teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon dried dill
1 large lemon or 2 smaller lemons, thinly sliced
4 Tablespoons unsalted butter, cut into thin slivers
1 ½ Tablespoons capers
Cooking spray
Foil

Steps:

  • Preheat the grill to high (between 450-500 degrees)
  • For each packet, you will need 2 large (about 20 inches long) sheets of foil, or just 1 sheet of heavy duty aluminum foil.
  • Create four packet making stations with the foil, then spray each with cooking spray or brush with olive oil.
  • Mix together seasonings (salt, pepper, garlic powder, and dill) in a bowl. Layer each foil packet with one tilapia fillet and 1/4 of the veggies. Sprinkle evenly with the seasoning mixture, turning the fish over to coat both sides.
  • Place several slivers of butter on top of each packet, a few on both the fish and the veggies. Put two slices of lemon on top of the fish, then toss the capers over everything.
  • Fold the long sides of the foil in towards the center and roll over to seal, then roll up the short edges.
  • Place on the preheated grill, cover, and cook for 10-12 minutes. If the fillets were frozen, add a few minutes to the cooking time.
  • To serve, carefully remove the fish from the grill and peel back the foil layer. Fish are done when they are white (not translucent) and flake easily with a fork. Serve in the foil packet or on plates with the sauce from the bottom of the packet.

Yield 4 servings

Number Of Ingredients 8

1/4 cup white wine
2 tablespoons olive oil
Zest and juice of 1 lemon
Kosher salt and freshly ground black pepper
Four 6-ounce tilapia fillets
1 cup grape tomatoes, halved
1/4 cup capers, drained
1 teaspoons fresh thyme (about 3 sprigs)

Steps:

  • 1. Preheat the oven to 400 degrees F. Whisk together the white wine, olive oil, lemon zest and juice, 1/2 teaspoon salt and 1/4 teaspoon pepper in a small bowl.
  • 2. Place each tilapia fillet on a separate 14-by-12-inch piece of nonstick foil. Drizzle one-quarter of the white wine mixture over each fish fillet and top with one-quarter of the tomatoes, capers and thyme. Fold the foil up over each piece of fish and seal to create a packet. Put the packets on a sheet pan and bake until the fish becomes fragrant, 20 to 25 minutes depending on the thickness of the fillets; let cool for 3 minutes. Open the packets, sprinkle 1/2 teaspoon salt evenly over the fillets and serve.

Tips:

  • Mise en Place: Before starting, prepare all ingredients and keep them within reach. This will ensure a smooth and efficient cooking process.
  • Fresh Ingredients: Use the freshest vegetables and herbs for optimal flavor and nutritional value. Look for vibrant colors and crisp textures.
  • Seasoning: Don't be afraid to season your vegetables and fish generously. Experiment with different herbs, spices, and citrus zest to create a flavorful dish.
  • Parchment Paper: Use good quality parchment paper that can withstand high temperatures without tearing. This will prevent the juices from leaking out and ensure even cooking.
  • Cooking Time: The cooking time may vary depending on the thickness of the fish and the type of vegetables used. Keep an eye on the packet during cooking to adjust the time if necessary.

Conclusion:

This tilapia summer vegetable packet recipe is a delightful and nutritious meal that showcases the vibrant flavors of fresh ingredients. The combination of flaky tilapia, tender vegetables, and aromatic herbs creates a harmonious dish that is perfect for a light and healthy lunch or dinner. The parchment paper cooking method not only simplifies the cooking process but also enhances the flavors by trapping the natural juices and aromas within the packet. This results in a moist and flavorful tilapia dish with tender-crisp vegetables. Whether you're a seasoned cook or a beginner, this recipe offers an easy and delicious way to enjoy a healthy and flavorful meal. Experiment with different vegetable combinations and seasonings to create your own unique variation of this versatile dish.
