THYME VINAIGRETTE SALAD
"A couple from France gave us this recipe years ago when they were guests in our home," relates Jackie Heyer of Cushing, Iowa. "The dressing is the real French dressing-made with oil, vinegar, lemon juice and herbs-not the creamy tomato-based type we're accustomed to. The thyme flavor is wonderful on any combination of greens and vegetables," she adds.

Yield 4 servings

Steps:
- Heat a nonstick skillet over medium high heat. Add shredded Swiss in small, 2-inch piles to the hot skillet. When the cheese fries to a light golden color at the edges, about 1 minute, and can be moved with a thin spatula, turn the cheese rounds, cook another 15 seconds, then remove rounds from the skillet and transfer rounds to a work surface to cool. The cheese crisps will cool within a minute or so. Repeat to form 12 to 16 crisps, 3 or 4 per salad. Crisps may also be flavored with cracked black pepper and chopped thyme or other herbs.
- Place spinach in a bowl. After slicing your apple, squeeze a wedge of lemon over the slices to keep them from browning. Toss apples with spinach. For dressing, combine thyme, Dijon mustard and vinegar with a whisk. Stream in olive oil while continuing to whisk dressing. Pour dressing over the salad and toss to coat greens and apple evenly. FINGERLING POTATO SALAD WITH HONEY-THYME VINAIGRETTE
If you are on Chicago's Miracle Mile near the Marriott, watch out for bees! Chef Myk Banas keeps hives on the rooftop and uses the honey in dishes served at the restaurant. This is a very nice potato salad, very fresh tasting. The nutritional information is off, because there is twice as much dressing as you will need, but according to the chef it will keep for several weeks, so make the entire quantity. Chilling time not included in cooking time. From Midwest Living, June 2011.

Steps:
- Scrub the potatoes and cook in boiling water with the 1 tsp salt until just tender, 8 to 10 minutes. Drain well and spread on a cookie sheet to cool. Halve lengthwise when cool enough to handle.
- Trim and halve haricots verts or green beans. Drop into 3 cups boiling water, return to boil, reduce heat and cook 1 to 2 minutes, until crisp-tender. Drain and drop into a bowl of ice water. Let stand 5 minutes, then drain well.
- For vinaigrette, mix vinegar, shallot, honey, thyme, mustard, salt and pepper in food processor or blender and process until smooth. With processor or blender running, slowly pour in the oil in a steady stream, until the mixture is thickened.
- In a large salad bowl, combine the potatoes, beans and red onion. Drizzle over enough dressing to coat everything thoroughly. Cover and chill from 2 to 24 hours.Serve.
- Just before serving, toss salad with bacon and top with feta. Serve additional vinaigrette on the side, or reserve for another use.
- Note1: Fingerling potatoes are not around just now, so I used red potatoes that I peeled and cut into quarters or eights, which worked very nicely. I have also added some sweet potatoes to the other potatoes, and that was good, too.
- Note2: I mixed the vinaigrette in a 2 cup measuring cup with my stick blender, which worked perfectly.
- Note3: Extra dressing keeps for several weeks, according to chef, but I used it up faster than that.
- Note4: This makes a whole lot more salad than I can use. I just cook up two or three potatoes, a good handful of the beans and drizzle a bit of the dressing on it. Once you make the dressing, this is a snap.
- Note5: I use just a slice or two of bacon per serving, and often don't use it at all. I think chunks of good ham or turkey would be really nice in this, too.

SESAME-THYME CRUSTED GOAT CHEESE WITH ARUGULA SALAD WITH WARM SHIITAKE-TOMATO VINAIGRETTE
Provided by Ming Tsai
Time 25m
Yield 4 servings
Number Of Ingredients 15
Steps:
- On a plate, mix together the sesame seeds, thyme and coarse black pepper. Dip the cheese slices on one side only. In a very hot non-stick pan coated lightly with olive oil, pan sear the crusted side only until golden brown. Meanwhile, whisk together the mustard, vinegar and extra virgin olive oil. Season and check for flavor. In a hot saute pan coated lightly with olive oil, saute the shallots and shiitakes until soft, about 3 minutes. Add the tomatoes and deglaze with the vinaigrette. Check for seasoning. In a large bowl, toss the arugula with half of the vinaigrette and check for flavor. Add more vinaigrette if needed. Also, slice the head garlic in half and lightly rub the bread with the garlic and grill until golden brown.
Tips:
- For a tangier vinaigrette, use red wine vinegar instead of white wine vinegar.
- Add a touch of Dijon mustard to the vinaigrette for a richer flavor.
- If you don't have any shallots, you can substitute a small onion.
- Be sure to finely chop the shallots and thyme so that they evenly distribute throughout the vinaigrette.
- Let the vinaigrette sit for at least 30 minutes before using to allow the flavors to meld.
- When assembling the salad, toss the greens with the vinaigrette and then top with the tomatoes, cucumber, and red onion.
- Serve the salad immediately.
Conclusion:
Thyme vinaigrette salad is a light and refreshing salad that is perfect for a summer meal. The bright flavors of the thyme and lemon are a perfect complement to the fresh vegetables. This salad is also very easy to make, and it can be tailored to your own taste preferences. For example, you can add more or less thyme, or you can substitute a different type of vinegar. You can also add other vegetables to the salad, such as bell peppers, carrots, or zucchini.
