Provided by Food Network Kitchen

Time 45m

Yield 2 servings

Number Of Ingredients 13

2 tablespoons unsalted butter, softened
1/2 cup grated Parmesan
1/3 cup heavy cream
1 teaspoon fresh thyme leaves
1 small clove garlic, minced
Kosher salt and freshly ground black pepper
1 pound Yukon gold potatoes (about 6), sliced into 1/8-inch-thick rounds
2/3 cup shredded Gruyere (about 5 ounces)
Vegetable oil, for the steak
One 14-ounce New York strip steak (1 1/2 inches thick)
One 12-ounce package frozen shrimp scampi
Spinach salad, for serving
Crusty bread, for serving

Steps:

  • Position an oven rack in the top third of the oven and preheat to broil.
  • Lightly grease the left third of an 18-by-13-inch sheet pan with the butter.
  • Mix the Parmesan, heavy cream, thyme, garlic, 1 teaspoon salt and a few grinds of black pepper in a medium bowl. Add the potatoes and toss to coat.
  • Arrange the potatoes in even overlapping layers on the buttered part of the sheet pan. Pour whatever cream mixture remains in the bowl on top. Sprinkle evenly with the Gruyere.
  • Brush oil on both sides of the steak and sprinkle generously with salt and pepper. Put the steak on the middle third of the sheet pan. Broil for 5 minutes to begin browning the potatoes and steak. Meanwhile, put the shrimp scampi in a 1 1/2-quart oval baking dish.
  • Remove the sheet pan from the oven, lower the oven to 450 degrees F and put the baking dish with the shrimp on the right third of the sheet pan next to the steak. Return the sheet pan to the oven and bake, stirring the shrimp halfway through, until the shrimp are cooked and the steak registers 135 degrees F for medium-rare, 16 to 18 minutes.
  • Remove the steak to a cutting board and allow to rest for 10 minutes. Slice and serve the steak with the potatoes, shrimp scampi, spinach salad and bread for sopping up the flavorful juices.

Time 1h40m

Yield 6 servings

Number Of Ingredients 16

2 pounds large red-skinned potatoes (about 4), cut into 3/4-inch chunks
1 red bell pepper, chopped
1 onion, chopped
3 tablespoons vegetable oil
Kosher salt and freshly ground pepper
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon ground thyme
Cooking spray
12 large eggs
1 cup shredded cheddar cheese
1/4 cup milk
3 small scallions, thinly sliced
12 frozen fully cooked sausage patties
1/2 cup quartered cherry tomatoes
1 tablespoon chopped mixed fresh herbs

Steps:

  • Preheat the oven to 450˚ F. Line a baking sheet with foil. Toss the potatoes, bell pepper, onion, vegetable oil, 2 teaspoons salt, a few grinds of pepper, the paprika, garlic powder and thyme on the baking sheet and spread out. Bake, stirring once, until the vegetables are browned around the edges and tender, 40 to 50 minutes. Push the potatoes to one side of the baking sheet so that they cover about half the pan.
  • Make a 6-by-9-inch tray out of a double layer of foil; the sides should be about 1 1/2 inches high. Place the foil tray in a corner of the baking sheet and coat with cooking spray. Whisk the eggs, cheese, milk, 2 scallions, 1 teaspoon salt and a few grinds of pepper in a large bowl. Pour the egg mixture into the foil tray. Arrange the sausage patties, overlapping if necessary, in the remaining space on the pan.
  • Return the pan to the oven and bake until the omelet is puffed and set and the sausages are heated through, 20 to 25 minutes. Let sit a few minutes before serving. Top the omelet with the tomatoes and herbs; sprinkle the sausage with the remaining sliced scallion.

Provided by Bobby Flay

Time 10m

Yield 1 serving

Number Of Ingredients 9

2 tablespoons canola oil
4 ounces Mexican chorizo (ground)
1 small jalapeno, sliced, with seeds
1 1/2 tablespoons butter
3 large eggs
2 tablespoons finely chopped fresh cilantro
Salt and freshly ground black pepper
1/2 cup grated Monterey Jack cheese
One 12-inch flour tortilla

Steps:

  • Heat a skillet over high heat. Add the canola oil and chorizo and start to brown, about 2 minutes. Then add about half the jalapeno and cook until the chorizo is golden brown and cooked through, stirring occasionally. Set aside. Heat the butter in a small nonstick pan over medium heat. Whisk the eggs in a bowl and sprinkle with salt and pepper. Pour the egg mixture into the pan. Cook the eggs by whisking constantly and shaking the pan vigorously until the eggs begin to set but are still quite loose. Spoon the chorizo mixture down the center, top with the remaining jalapeno slices and the cheese, and continue cooking until almost completely set, 1 to 1 1/2 minutes, depending on desired consistency. Fold the omelet into thirds, and turn it out onto a cutting board or a plate. Over a burner on medium heat, soften the tortilla, 8 to 10 seconds on each side, or in a skillet over medium heat for 1 to 2 minutes per side. Gently place the omelet onto the tortilla and wrap around it tightly. Slice in half on a diagonal.

Tips:

  • Prep Your Ingredients: Before you start cooking, make sure all your ingredients are prepped and measured. This will help you stay organized and ensure that your omelet cooks evenly.
  • Use a Non-Stick Pan: A non-stick pan will help prevent your omelet from sticking and tearing. If you don't have a non-stick pan, you can grease a regular pan with butter or cooking spray.
  • Cook Over Medium Heat: Medium heat is ideal for cooking an omelet. This will help it cook through evenly without burning.
  • Don't Overcrowd the Pan: When you pour the egg mixture into the pan, make sure it doesn't overcrowd the pan. Otherwise, the omelet will be too thick and won't cook evenly.
  • Let the Omelet Set Before Flipping: Before you flip the omelet, let it set in the pan for a few minutes. This will help it hold together when you flip it.
  • Use a Spatula to Flip the Omelet: A spatula is the best tool for flipping an omelet. It will help you avoid breaking the omelet.
  • Don't Overcook the Omelet: Omelets cook quickly, so don't overcook them. Otherwise, they will become tough and rubbery.
  • Serve Immediately: Omelets are best served immediately after they are cooked. This will ensure that they are hot and fluffy.

Conclusion:

Sheet pan rolled omelets are a delicious, versatile, and easy-to-make breakfast, lunch, or dinner option. With a few simple ingredients and a little bit of time, you can create a flavorful and satisfying meal that the whole family will enjoy. So next time you're looking for a quick and easy meal, give sheet pan rolled omelets a try!
