BEST TURKEY MEATLOAF

Best Turkey Meatloaf image

After much trial and error trying to make a more healthy meatloaf, I came up with this recipe. It is important to make this on a baking sheet so the liquids can be drained off the meatloaf. Also, do not put the topping on before the meatloaf has cooked for 30 minutes. Turkey creates a lot of juices, so if you put the topping on first it will become watery and runny.

MOM'S BEST EVER TURKEY MEATLOAF

Mom's Best Ever Turkey Meatloaf image

This recipe was modified from one I found in a cookbook published by "The Turkey Store". My family, and everyone I have ever served it too love it and can't believe that it is low fat, low cholesterol. And recently I started substituting oatmeal for bread crumbs since my husband's doctor put him on an even stricter diet than before. It is easy, there is no need to sauté the onions, bell pepper and garlic before mixing with the rest of the ingredients. It is also moist and very tasty. I usually serve with baked sweet potatoes and fresh green beans. It makes GREAT sandwiches the next day.

Time 1h15m

Yield 4-6 serving(s)

Number Of Ingredients 14

1 lb ground turkey breast
1/2 cup fat free egg substitute or 2 eggs
1/4 cup bell pepper, finely diced
1/2 cup onion, chopped
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon pepper
2 teaspoons bottled minced garlic or 6 garlic cloves, minced
2 tablespoons Dijon mustard
2 tablespoons Worcestershire sauce, divided
1 teaspoon dried basil
1 cup tomato sauce
3/4 cup rolled oats, not instant oatmeal
cooking spray

Steps:

THE BEST TURKEY MEATLOAF

A slightly lighter version of the all-American classic, this satisfying meatloaf uses chicken broth and soaked panko to stay moist, and a mix of fresh herbs for flavor. It's the best turkey meatloaf you'll find!

Provided by Food Network Kitchen

Time 1h30m

Yield 6 servings

Number Of Ingredients 13

1/4 cup olive oil
1 large onion, chopped
2 teaspoons fresh thyme leaves
1 teaspoon minced fresh sage
Kosher salt and freshly ground black pepper
2 cloves garlic, grated
1 tablespoon tomato paste
3 tablespoons Worcestershire sauce
3/4 cup panko breadcrumbs
1/2 cup chicken broth
3 pounds ground turkey
2 large eggs
1/2 cup ketchup

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with foil.
  • Heat the olive oil in a large skillet over medium heat. Add the onions, thyme, sage, 1 teaspoon salt and 1/2 teaspoon pepper. Cook, stirring often, until the onions are softened, about 10 minutes. Add the garlic and cook 1 minute more. Add the tomato paste and cook for 1 minute, stirring to incorporate. Stir in the Worcestershire. Remove from the heat and allow to cool.
  • Add the panko to a large mixing bowl and pour over the chicken broth so the breadcrumbs soak up the liquid. Add the turkey, eggs, 2 teaspoons salt, 1/2 teaspoon pepper and the cooled onion mixture and mix well with your hands until well combined. Form the mixture into a 10-by-5-inch loaf on the foil-lined baking sheet. Coat the top and sides with the ketchup.
  • Put the meatloaf in the oven and reduce the oven temperature to 350 degrees F. Bake until a thermometer inserted in the center of the loaf reads 165 degrees F, 45 minutes to 1 hour. Let cool slightly before slicing and serving.

Tips:

  • Preheat your oven to 350°F (175°C). This will ensure that your meatloaf cooks evenly.
  • Use a combination of ground turkey and ground chicken. This will give your meatloaf a more tender and flavorful texture.
  • Add plenty of vegetables to your meatloaf. This will help to keep it moist and flavorful. Some good options include onions, carrots, celery, and mushrooms.
  • Use a flavorful sauce. This will help to add moisture and flavor to your meatloaf. Some good options include a tomato-based sauce, a barbecue sauce, or a mushroom gravy.
  • Cook your meatloaf until it reaches an internal temperature of 165°F (74°C). This will ensure that it is cooked through.

Conclusion:

Turkey meatloaf is a delicious and versatile dish that can be enjoyed by people of all ages. It is a great way to use up leftover turkey, and it can also be made with ground chicken or beef. By following the tips above, you can make a turkey meatloaf that is moist, flavorful, and sure to please everyone at your table.
