1 medium sweet Vidalia onion, diced small
1 pound lean ground beef (I used 85% lean)
olive oil, optional if necessary
one 1.25-ounce packet taco seasoning
two 8-ounce frozen pizza crusts (read blog post for crust discussion)
one 15-ounce can black seasoned refried beans, divided
1 1/2 cups shredded mozzarella cheese, divided
2 cups shredded Mexican cheddar cheese blend, divided
1 Roma tomato, diced small, divided
fresh cilantro, for garnishing

Steps:

  • Preheat oven to 425F and line one or two sheet pans with parchment paper or a Silpat; set aside.*
  • To a large skillet, add the onion, beef, olive oil if necessary, and cook over medium-high heat for about 5 to 6 minutes, or until beef is cooked through and onions are soft and translucent; crumble beef as it cooks and stir frequently to ensure even cooking.

1 package (8 oz) cream cheese, softened
1 cup (8 oz) sour cream
1 pound ground beef or ground turkey
1-2 envelopes or 2-4 Tbsp taco seasoning, to taste
1 medium tomato, chopped
2 cups shredded Mexican cheese
1 cup shredded lettuce
optional: avocado, taco sauce, hot sauce, black beans

Steps:

  • Preheat the oven to 375 degrees.
  • Unroll the crescent roll dough and lay out on a large ungreased cookie sheet. Pinch the perforations together to seal. Bake at 375 for 8-10 minutes or until light golden brown.

8 ounces sharp cheddar, shredded
Kosher salt
1 cup finely diced tomato (about 1 large or 30 grape tomatoes)
12 ounces shredded lettuce (about 1 large head)

10 fluid ounces warm water
¾ teaspoon salt
3 tablespoons vegetable oil
4 cups all-purpose flour
2 teaspoons active dry yeast
1 (6 ounce) can tomato paste
¾ cup water
1 (1.25 ounce) package taco seasoning mix, divided
1 teaspoon chili powder, or to taste
½ teaspoon cayenne pepper, or to taste
1 (16 ounce) can fat-free refried beans
⅓ cup salsa
¼ cup chopped onion
½ pound ground beef
4 cups shredded Cheddar cheese

  • Add the water, salt, oil, flour and yeast to your bread machine in the order listed. Select the dough cycle. Check your dough after it has been mixing a few minutes. 4 cups all-purpose flour
1/3 cup olive oil, plus more for oiling baking sheet
1 teaspoon kosher salt
One 14-ounce can black beans or 2 cups homemade black beans
1 teaspoon taco seasoning (prepared or make your own)
1/2 cup canola oil, for frying
4 corn tortillas, sliced into thin strips
1 cup grated sharp Cheddar
1 cup grated Monterey Jack
1 head green leaf lettuce, sliced or shredded thin
2 ripe tomatoes, diced
1/2 cup fresh cilantro leaves
1/4 cup sour cream
3 tablespoons hot sauce, or more to taste
Good-quality salsa, for serving

Steps:

  • Make the pizza dough: Mix the yeast with 1 1/2 cups warm water and set aside for 8 to 10 minutes. Mix together the flour, olive oil and salt in a bowl using an electric mixer. With the speed on low, drizzle in the yeast/water mixture and mix until totally combined. Cover the bowl with a towel and set in a warm, draft-free place. Allow to rise for 1 to 2 hours.

  • Position an oven rack in the bottom position in the oven. Preheat the oven to 500 degrees F. Oil a baking sheet with some olive oil.
  • Remove half of the pizza dough from the bowl. (Place the remaining half in a large plastic bag and refrigerate, saving it for another use.) With your hands, spread the dough out on the oiled baking sheet, making sure it's relatively thin. Spread a layer of refried beans all over the pizza crust. Sprinkle the grated Cheddar and Monterey Jack over the top. Place the baking sheet on the bottom rack in the oven and bake for about 25 minutes, watching to make sure the crust doesn't burn.
