THAI IT! YOU'LL LIKE IT!

Thai It! You'll Like It! image

This flavorful pasta dish pairs shrimp or chicken with noodles and a peanutty sauce. I don't know how authentic it is, but I do know it's creamy and delicious! And as an added bonus, it's low-fat. This recipe is from Looneyspoons by Janet and Greta Podleski.

Time 30m

Yield 4 serving(s)

Number Of Ingredients 13

12 ounces uncooked fettuccine or 12 ounces linguine (can also use rice noodles, spaghetti, or any other noodle of your choice)
2 cups sliced red bell peppers (sliced in thin, long strips)
1 cup snow peas, trimmed and halved
1/3 cup chopped green onion
1/2 cup low-sodium low-fat chicken broth
2 teaspoons sesame oil
2 tablespoons reduced-fat peanut butter (or soy nut butter)
1 1/2 tablespoons reduced sodium soy sauce
1 tablespoon white vinegar or 1 tablespoon rice vinegar
1 teaspoon grated gingerroot
1 clove garlic, minced
1/2 teaspoon crushed red pepper flakes (I omit this)
1 lb cooked shrimp (or chopped cooked chicken breast)

Steps:

  • Cook pasta according to package directions; drain and keep warm.
  • While pasta is cooking, prepare sauce.
  • In a large saucepan, combine all ingredients except shrimp; mix well.
  • Bring to a boil; reduce heat to medium.
  • Cook and stir for 3-4 minutes, until vegetables are crisp-tender and sauce is bubbly and slightly thickened.
  • Stir in shrimp (or chicken) and cook just until heated through, 1-2 minutes; do not overcook or shrimp will be rubbery.
  • Toss hot shrimp sauce with pasta and serve immediately.

Time 30m

Yield 4 servings

Number Of Ingredients 18

1 1/4 to 1 1/2 pound piece flank steak
1/2 cup high temperature oil, such as peanut, canola or safflower, plus 2 tablespoons
2 shallots, peeled and thinly sliced
3 tablespoons cornstarch
Salt
1 pound whole-grain or whole-wheat spaghetti
6 ounces or 1/3 pound shiitake mushrooms
1 red bell pepper
1 red hot chile pepper
3 to 4 cloves garlic, grated or chopped
4 to 5 scallions, thinly sliced on an angle
3 tablespoons curry paste, mild to medium heat (recommended: Patak's)
3 tablespoons fish sauce
2 cups chicken stock
1 cup shelled frozen edamame, thawed
1 cup loosely packed, basil leaves, thinly sliced or torn
1 lime, zested and juiced
Freshly ground black pepper

Steps:

  • Put the flank steak in the freezer for a few minutes to aid in thinly slicing safely.
  • Heat 1/2 cup oil in a small skillet over medium heat. Dredge the shallot slices in the cornstarch and shake off any excess. Add the shallots into the heated oil and remove them to a paper-towel lined plate when they become a light golden-brown color.
  • Bring a large pot of water to a boil over medium heat. Salt the water and add the pasta. Cook to al dente.
  • While pasta water comes to a boil, stem and thinly slice the mushrooms, and seed and thinly slice the sweet and hot peppers.
  • Remove the meat from the freezer and thinly slice into 1/4-inch wide by 2-inch pieces.
  • Heat the remaining 2 tablespoons of oil in large skillet or wok over medium-high heat. Add the beef and cook in a single layer for 2 to 3 minutes. Turn the meat over and add shiitakes, sweet and hot peppers, garlic and scallions. Stir-fry 2 to 3 minutes, then add the curry paste, fish sauce and stock and bring to a boil. Add in the edamame, and cook for 1 minute to heat through, then add the basil.
  • Drain the pasta and put into a large serving bowl. Add the beef mixture, the lime zest and lime juice. Toss vigorously and season with some black pepper, to taste. Garnish with the fried shallots sprinkled on top.

Tips:

  • Mise en Place: As with most Asian recipes, preparing all your ingredients in advance is essential. This will help the cooking process go smoothly and quickly.
  • Use Fresh Ingredients: Thai cuisine relies heavily on fresh herbs and vegetables for its distinctive flavors. Make sure to use high-quality, freshly-picked ingredients whenever possible.
  • Balance the Flavors: Thai food is known for its harmonious balance of sweet, sour, salty, and spicy flavors. Taste your dishes as you cook and adjust the seasonings accordingly.
  • Use a Mortar and Pestle: While not essential, using a mortar and pestle to grind your own spices and herbs will give your dishes a more authentic Thai flavor.
  • Don't Be Afraid of Heat: Thai food can be spicy, but it's important not to shy away from using chili peppers. The heat adds depth and complexity to the dishes.
  • Serve with Rice: Rice is a staple in Thai cuisine and is typically served alongside curries, stir-fries, and noodle dishes.

Conclusion:

With its vibrant flavors, diverse dishes, and emphasis on fresh ingredients, Thai cuisine is a culinary delight that has captured the hearts of food lovers worldwide.
