1 pound bulk pork sausage
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
3/4 cup 2% milk
1/2 cup chopped onion
1/2 teaspoon salt
1/4 teaspoon pepper
3 cups sliced peeled potatoes
2 cups shredded cheddar cheese
Minced fresh parsley, optional

Steps:

  • Preheat oven to 350°. In a large skillet, cook sausage over medium heat until no longer pink, breaking it into crumbles; drain and set aside. Combine soup, milk, onion, salt and pepper. , In a greased 2-qt. baking dish, layer half the potatoes, soup mixture and sausage. Repeat layers. , Cover and bake until potatoes are tender, 60-65 minutes. Sprinkle with cheese; bake, uncovered, until cheese is melted, 2-3 minutes. If desired, garnish with parsley.

1 teaspoon butter
1 teaspoon olive oil
3 cups elbow macaroni
1 pound smoked beef sausage, cut into bite-size pieces
2 (14.5 ounce) cans stewed tomatoes, chopped, juices reserved
1 sweet onion, diced small
2 ounces shredded sharp Cheddar cheese
2 ounces shredded Monterey Jack cheese
2 teaspoons olive oil, or more to taste
1 teaspoon dried parsley flakes
¼ teaspoon onion powder, or more to taste
¼ teaspoon garlic powder, or more to taste
salt and ground black pepper to taste
1 (8 ounce) package shredded American cheese (such as Kraft® Melts)

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13-inch baking dish and oil with 1 teaspoon olive oil.
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until cooked through but firm to the bite, 8 minutes. Drain.

1 lb. breakfast sausage, such as Jimmy Dean
4 scallions, chopped, white and green parts divided
1 red bell pepper, chopped
10 eggs
1 1/4 c. heavy cream
1 tbsp. Dijon mustard
2 tsp. hot sauce, optional
1 1/2 tsp. salt
1 tsp. black pepper
2 c. shredded sharp cheddar cheese, divided (8oz package)
1 30 oz package of frozen, shredded hash browns, thawed

Steps:

  • Grease a 9-by-13-inch (or other 3-quart) baking dish with butter or nonstick spray. Preheat the oven to 350 degrees.
  • Heat a large skillet over medium-high heat. Add the sausage and break up into small pieces with a wooden spoon. Cook the meat until no pink pieces remain, 6-8 minutes. Add the red bell pepper and white and light green parts of the scallions and cook 3 more minutes. Transfer to a plate to let cool slightly.
  • Meanwhile, in a large bowl whisk together the eggs, heavy cream, mustard, hot sauce, salt, black pepper and about one-half of the remaining green parts of the scallions (save the rest to sprinkle on top of the casserole once baked.) Gently fold 1 ½ cups of cheese, the hash-browns and the sausage mixture into the egg mixture. Transfer all to the baking dish and smooth into an even layer.
  • Cover with aluminum foil and bake for 50 min. Remove the foil and top with the remaining ½ cup of cheese. Increase the oven temperature to 400 degrees and finish baking until the center of the casserole is set (not jiggly) and the top is slightly golden, 10-15 more minutes. Let rest 10 minutes, top with the remaining green parts of the scallions, then serve.

1 pkg jalapeno cheddar sausages,cut into 1/2-inches
2 tsp red pepper flakes
1 lb dried penne pasta
1 Tbsp avocado oil
1 lb mexican chorizo sausage,casing removed and crumbled
1 large vidalia sweet onion,peeled and sliced
2 banana peppers,chopped
1 lb pork smoked sausage,cut into 1/4 inches
1 packet taco seasoning
1 c shredded extra sharp cheddar cheese
SHARP CHEDDAR QUESO
1 Tbsp margarine
1 c heavy cream
1/2 c half and half
1 pkg (8 ounces) cream cheese,softened
1 can(s) diced tomatoes and green chilies,drained
1 c shredded sharp cheddar cheese

  • 1. Preheat oven to 350 degrees F.Coat a 9x13-inch baking dish with cooking spray.Add sliced jalapeno cheddar sausages.Season with red pepper flakes.
  • 2. Bring a large pot of lightly salted water to boil over high heat.Add penne pasta and cook until tender,about 9 minutes.Drain and set aside.
  • 3. Heat avocado oil in large deep skillet over medium heat.Add chorizo sausages and saute for 5 minutes or until browned and crumbled.Use a slotted spoon to transfer to a large plate and set aside.
  • 4. Add sliced vidalia onion,chopped banana peppers and sliced smoked sausages in same skillet with chorizo oil,saute for 6 minutes.Season with taco seasoning.Remove from heat.
  • 5. To make Sharp Cheddar Queso:heat margarine in a large saucepan over medium heat.Combine heavy cream,half and half,cream cheese,diced tomatoes and green chilies and shredded sharp cheddar cheese,Stir and simmer for 8 minutes until thickened.Remove from heat.
  • 6. Add crumbled chorizo sausages,cooked penne pasta and smoked sausage mixture;mix well until combined.
  • 7. Pour into a prepared baking dish.Sprinkle with shredded extra sharp cheddar cheese.

1 can (8 ounces) tomato sauce
1 cup prepared salsa
1 cup chopped red onion

1 tablespoon minced garlic
Salt and freshly ground black pepper, to taste

12 6-inch-diameter flour or corn tortillas

Steps:

  • Preheat oven to 350°F. Sauté sausage in heavy large skillet over medium-high heat until brown, breaking up clumps with back of spoon, about 7 minutes.
